Need sink advice...fireclay or stainless?

Ok. I've finalized just about everything for this kitchen (now DH says he wants to move but I told him our contractor would kill me) except the sink. The look is turn of the century to match the house, ie. quarter sawn white oak cabs, flush inset, slab drawers, recessed panel doors, soapstone counters but some contemporary appliances like an induction cooktop and gaggenau ovens. So, what do I do for a sink? I love stainless because it's so forgiving but think fireclay would look better. I was originally thinking a Franke oceania sink (only comes in SS), then thought a Shaws farm sink (but not sure it would look right in the layout...see below), and sort of narrowed it down to Franke Orca, which comes in both fireclay and SS or the Rohl Allia, which is an undermount rectangular fireclay sink. Does anyone have this sink or the Orca in fireclay? Any opinions on whether fireclay would look better that stainless? All feedback is appreciated. TIA.
