A little note about knives and sharpening

Some time back we had a knife discussion. Someone insisted that I didn't know what I was missing in preferring a German knife to a Japanese one. I insisted that I liked the shape and balance of my knife a lot better than any of the Japanese ones I'd tried out.

Turns out, my knife is a hybrid!

I was discussing sharpening angles with my father, and how they didn't seem to line up with my mental protractor.

Back when he first sharpened my knife for me, many years ago, he changed the bevel! He says a smaller angle is sharper. :) Who knew? I've just been following his angle all these years. :)

So, to whoever it was who was so adamant, my apologies. :)

QUESTION: How many of you use three (or five) stage stones? Or one of these new-fangled kits?

I use a two sided stone and it seems to do the trick, but I haven't found much info on the fancier ones from regular users (rather than knife enthusiasts).
