Art & Crafts Kitchen Re-do

Going to be redoing a 1915 Arts and Crafts home in Buffalo, NY. Want to keep the tall butler style cabinets and / or relocate them. I have been told they are yellow pine with a medium brown stain. Sales person at the cabinet store told me to do maple bottoms because oak is out. I want to team them up with something more toward the period. Wouldn't a better choice be the sawn oak finish? If so what stain color; probably can't match it. I see a lot of white though for this era. Help this is all new to me. Don't want to mess up.
