Replacing laminate counter with quartz or granite 3cm vs 1.5 inch

I currently have a laminate countertop. The backsplash is 4 inch white ceramic tile and it comes right down to the current countertop.

I would like to replace the laminate countertop with something else and I would prefer not to replace the backsplash. It seems that most quartz comes in either 2 cm or 3 cm thickness. When I measure the thickness of the laminate, it seems to be 1.5 inches. This leads me to believe that I will have a 1/4 inch gap.

Can I replace the laminate with quartz or granite without replacing the backsplash? What can be done about the apparent gap in size? Any suggestions are appreciated. While I am leaning towards quartz because I like the easy maintenance, I would also consider granite or other products if they would work better as a replacement.
