I'd vote one, but if you don't have a prep sink, I can see that it would be useful. In that case, keep it simple -- a single hole faucet. They could be matching or one larger (pulldown spray perhaps) and one smaller, depending on how you use them and whether the faucet you want would be too much times two. I would probably limit the other things around the sink to a soap dispenser.

What an interesting idea.

Do you want all the extra plumbing/hoses/whatever under your sink? And twice the expense? Would one of those separate spray units located at the opposite end accomplish the same thing for less?

Is the sink near the cooktop so that you could have a pot filler located where it could swing to the sink as well as a pot on a burner?

Please let me know what you do and how it works. This is a intriguing question.

30" from the cooktop too far, not doing a pot filler because it's close enough to the sink already. I'm thinking about one of the more commercialesque type units for the left side and my existing Grohe for the other. I do have a soap and a hot water dispenser, haven't quite figured out the space yet but it just seems like a good idea.

In case it's helpful for planning, here is my 33" sink. I can see that you actually could fit 2 people and 2 faucets in there.

It might be worth knowing though -- cause I didn't find out until I had this arrangement -- that you probably don't want to be as close to the side as mine is to the divider. I get a lot of splashback because the length of the faucet's reach is in the corner where it's hard to position any but very narrow things. I did it because I wanted to rotate the faucet to either sink. But I think you'll get better results if you position yours 6" in from each side.
