Gap behind laminate backsplash update

We worked late into the night last night scribing our lamintate top to fit into our > 90 degree corner L.

While the long side looks fantastic (and this is the watery side with sink and DW) the short side by the range has a 1/4 - 1/2" gap behind it that tapers and sits flat at the corner.

I am wondering what the easiest solution to this is. Could we just caulk this baby and let it be? Will it be that noticeable here next to the range? I will be putting a crock of utensils there. Should we just bite the bullet and spring for another set of tops and start over? (we really really hate to do that)

We cut ourselves short on our last scribe on the long side and "accidently" removed our slack on the length that we had planned out to give room for fitting the other side.

Anyways - any thoughts on this matter?
