Non-busy BS - must be manmade?

Hi all, trying to narrow down my BS choices. Sorry for the long post. Here's what I'm working with...

  • Medium coffee stained knotty alder cabinets

  • Giallo Ornamental (selected mildly busy slabs)
  • 2nd grade 4" white oak floors
  • Stone "wall" to which the range hood will mount, similar tothis one, only my cabinets stop shy of the ceiling.
  • 4x8 stained island, so lots of wood in this room.
  • Walls - plain old paint.

So... lots of texture. Trying to balance my mattes & shinies, busies & calms to get overall balance.

With the cabinets being knotty, and granite being mildly busy, and rock texture, I'm thinking I need a very calm & subtle backsplash. Eyeball vacation! B/c of the color variation, it seems like a natural stone product would be out.

But I don't like the looks of most ceramic tiles, so I've been thinking about a matte subway tile in a classic brick pattern, cream or equally neutral (if I can even find such a thing). Minimal texture, no shinies, and calm colors. Maybe, if I could even find it...

Can you guys think of anything else that might work? I could go without backsplash, but knowing how I cook... I'm afraid to!
