Proper use of hand plane?

This probably seems a stupid question, but I have been trying to use a hand plane to fine tune the seams where I have pegged and glued solid preplaned purple heart wood to create a countertop... I have fiddled with it quite a bit and am getting better, no doubt. . .But it still is having a tendency to grab a bit too hard just as I think I am getting some good strokes in. Is there a subtle knowledge about the balance of pressure front to back or maybe a better way to judge the proper depth setting, or some other little thing I am missing?

I have this countertop and three more to go so any help would be greatly appreciated.
