staining wood work- your recommendations pls

Am refinishing fir woodwork in my 100yr house which were originally either dark colored shellac or some kind of varnish which leaves darkish brownish stain when finish is removed. Looks shiny like shellac but does not come off easily w/ remover so I don't know. My plan is to LIGHTLY sand off the shine and reapply a dark stain to even out the tone and then some kind of clear finish over it.

Any suggestions as to what exactly to use? Don't want plastic looking poly but Im not a purist so it doesn't have to be shellac or original type finish.

Stain I think should be good rich even-toned color, more opaque to even out te extreme variations in the wood... but without completely obscuring it. Cabot and General Finishes look promising-- any experience with those? Want a dark reddish brown.

Or any other suggestions -- someone suggested colored shellac but isnt that hard to apply correctly?
