White or Red Mahogany Counter - Poly or Oil Finish?

This is more of a two-part question. We are remodeling our kitchen and our cabinetmaker is making a wood counter for our island. We would like to blend the color of the counter with our merbau floor, which is a reddish-brown tone. He suggests using white magohany (vs. red mahogany) because he feels its better to start from a lighter color and apply several stains to achieve a darker color, than to start off with red mahogany which he says is very dark. We have no experience with mahogany and have not been able to find much info on the web regarding the properties and characteristics of white mahogany. Can anyone comment on the durability of white mahogany for a counter, and how well it will take stains?

I am also undecided on how to finish the counter. The cabinetmaker is pushing a polyurethane finish, but I've read concerns about water getting under the finish. I'd like a tung oil finish, and don't mind the maintenance, but will an oil finish work well with white mahogany?
