I know nothing about this and have questions

we have 150 amp service coming to the home we're remodeling. My husband would like not to have to upgrade service but I don't know if it will be feasible. So.

1. What's involved with that $$?, permits?, inspections? I live in So. Florida

2. Specifically, in consideration of my kitchen needs. I will have induction cooking. Most induction cooktops require 40 or 50 amps. A separate wall oven installed under the counter requires the same. I can get an induction range which requires only one 50 amp plug. (though the choices in ranges are very limiting). Why do I need so many more amps for two separate units installed like one as opposed to the range if they perform the same function.

I don't understand how this home ever ran on 150 amps when appliances alone seem to eat more then this up.
