peach wine problem

I am making some peach wine for the first time and after a couple of weeks brewing my wine tastes vinegary.I put about 11/2 - two gallons of peaches and about 10 lbs of sugar in a 25 litre bucket with some wine yeast. This is my first attempt at making peach wine btw.I also see alot of recipes with a tea bag added and or pectin,should I have added these too? Did i forget something ,any way to correct it? Wine is still "working" though.

i use to make wine but never tried from scratch i bought the kits from a local place that sales brew supplies find one in your area and ask them that would be a good place to start you probably would find some good easy starter recipes

It should be fine if:

1. Everything was sterile when you started. Every single little piece of equipment and containers.

2. Peaches were boiled to sterilize or you added sulphite to kill anything else growing in them before adding wine yeast.

3. It has been in the bucket 4-5 days or less. After that it needs to be sealed in another container with an air lock or some people use a sterile balloon over the lip of a glass jug.

4. It has been loosely covered to keep foreign things and bugs out.

You will not need pectin but you might need pectic enzyme which destroys the pectin in the wine so it will clear eventually. You don't want pectin in the wine. Also the wine yeast will grow better in a slightly acidic environment, which is what the tea bag is for, you might get wine without it, just not very fast and it might stop from time to time under less than desirable temps, etc if not enough vigorous yeast growth.

If you have vinegar, you may have another yeast in there. It doesn't usually happen during the first few days of a wine start due to the concentration of CO2 being produced by the wine, but after a few days that slows down. That's why it has to be moved to a sealed container after the first few days.

I hope you guy can still see this. harvestman -- by 'root collar', I was referring to the part where the roots start to flare out. Probably not the right word. Thanks for all the info about peach trees, I sure learn a lot. If these trees don't work, I know how to find the right tree now. Aprium -- Here are the pictures you asked for: the already damaged peache tree: I push back the soil until I see the tree trunk/root flare out (is this what you called root flare collar area, aprium?), it's about 6-7" from soild line. Is it too deep? I also found another lava. 2) new tree -- the New Root-bound Georgia peach (7' tall) Root flare out at about 3-4" from the soil line. The top 2-3" of the pot is filled with those fine roots. What do you call that roots? I did cut up those roots a little like I treat other root-bound shrub 3)new tree -- the Elberta, 4 1/2 foot tall Root flare out at about 2-3" from the soil line. 4) new tree -- the redskin, 2" from the soil line. (over 7' tall), the tree has so many bends, which section should be straight? While I have all of you here, any suggestions on how I should prune these trees? All the white dots are mothballs, are they OK? Too close or too far?

Thanks for your quick response Dave. I am BWB processing so I had boil over, didn't know that term (thanks). Liquid spurted out of the jars while they were on the counter. I left the jars in the canner for the full 5 minutes after processing and was very careful to lift straight out. The water in the canner smelled a little peachy. I did remove all air bubbles prior to sealing. The syrup wasn't foamy in the jar prior to processing. I didn't know that I could pour the syrup in too fast. I will be more mindful of that in the future. I tightened the bands as I understand "finger tip tight". This is my 15th canning season, so I think I got that part right. I must have over-packed. I was following the directions in the Ball Complete Book, said to leave generous 1/2" hs with the fruit and 1/2" for syrup. I read a lot about peach float, so must have been packing too tightly. I will try again and follow your advice of filling 3/4 full. Are the peaches I have already canned safe to keep around (assuming they all seal)? Some of the peaches are above the liquid level. No, but I've canned pears in port for mother, she loved them. Fruit is acidic and can be canned in just plain water safely, if it suits you. Fruit often gets canned in apple juice or a simple syrup of sguar and water. I'd make a light syrup, maybe 4 cups of water to a cup of sugar. Mix white wine, I'd probably go for 50/50 syrup and wine, taste and see if you want to bump the wine up. I think a Reisling and some cardamom pods would be nice, or maybe a sweet Moscato with vanilla beans. Or just plain, depending on what you are looking for. And, on second thought, Moscato might be too sweet when mixed with a sugar syrup, even for me. Good luck, I think it's going to be based on your taste but no matter, it's safe to can to your peaches in white wine so I say go for it! Annie

John is our group's top notch CURMUDGEON. That doesn't look like a peach tree to me. I f I am right that is spur fruit tree of some type. Do you have picture of it in summer. I have never hear of a peach tree not flowering.
