Peach Wine Looks Like Orange Juice

Help. This is my second batch of homemade wine. I made elderberry wine last month that turned out great. I now have some peach that I strained from the fermenting bucket into a carboy last night. It is still fermenting. It is so opaque that it looks like orange juice. Is this normal for peach? Is there hope that it will clear up? Thanks for any help/suggestions!

Generally wine will be cloudy when 'working'. This will clear as the yeast works out and settles, racking will then remove it as sediment.
Did you use any pectin haze eliminator? Any 'fruit' wine will have a haze caused by the pectin in the fruit.

It won't clear until it has finished fermenting. If you did add pectic enzyme, even if it doesn't clear, you can just add a clearing agent, like chitosan, when it has finished, before bottling.

If you omitted the pectic enzyme, you will have to put it in and let it work before it will clear. It might take awhile.

John, HAH! It is truly terrifying the amount of worthless information I know! My husband continually bugs me to try out for Jeopardy, lol (which really is code for discovering just how truly stupid you are)! I only know this little fact because I happen to love, love, love the Cocktail pummelo hybrid. I like my citrus on the sweet side, but with perfect acid to sugar ratio. Cocktail does that. It never made it to the commercial marketplace due to it's high seed content, and also that it is a little more tender-skinned that other citrus. Plus, it's just not really "anything" - it's not a grapefruit, it's not an orange. Sort of all the same reasons (except the seediness) that Meyer lemons face, in fact. What has happened for both varieties is a fascinating grassroots campaign that has caused both of this very wonderful varieties to develop a bit of a cult-following amoungst citrus lovers. You would love them, John. If you can find a marketplace for all your lovely Meyer's, I'm betting those same clients would scramble for the Cocktail. It is most definitely worthy of a place in everyone's collection, imho. Try squeezing the juice and combining it with some Moro orange juice. To die for. And tantanman, I wonder if your "Golden" GF is another name for the Cocktail? Sounds exactly the same. I've not heard of that particular variety, but by description, is sounds identical to our Cocktail. Patty S.

I don't have the steamer, but do things the old way. I juice them by crushing and straining thru a bag. I use the pulp for jam, and the juice for jelly. I also use the pulp for butters.

Orange Habs that dont look like Orange Habs

I had a couple of plants produce habaneros that color last year. It passed and they looked like perfectly normal habaneros in the second harvest. I overwintered those two plants and they are producing normal looking orange habs now as well. There is also a variety called a peach habanero that has a similar color. I don't recall any difference in the interior of the plant. But to me, the only really strange thing about the ones in your photo is their shape. As has already been noted, they look a little like Peter peppers. :) Angie

Thanks. I did not use any pectic enzyme? It has stopped fermentation. I have put it in jars to clear. It looks better. I think I am just being impatient.
