I was thinking the other day that I need some new recipes. I have lots of favorites that I seem to cook a lot because we all love them. But I am not only getting tired of cooking the same things...but eating them is getting boring! LOL.

So I was thinking we could all share our favorite dinners on here. I really like recipes that have fewer ingreedients (so they are less expensive and time consuming to make).

My kids love my homemade beef stroganoff, homemade sloppy joes, and my crock-pot pulled pork. I could share those recipes if anyone is interested.

I would love to have the stroganoff and pulled pork recipes!! My DH has a great sloppy joe recipe, too.

I'll post some recipes also (after work today!)

I have a couple of recipes saved from the SA Virtual dinner. Alexa ******************************************************* Brazilian Iced Chocolate Cocacola Recipe Ingredients: 2 oz Chocolate, unsweetened 1/4 c Sugar 1 c Coffee, double-strength And hot 2 1/2 c Milk 1 1/2 c COCA-COLA, chilled Whipped cream or vanilla Ice cream Directions: 1.In the top of a double-boiler over hot water, melt the chocolate squares. Stir in the sugar. Gradually stir in hot coffee, mixing thoroughly. Add the milk and continue cooking until all particles of the chocolate are dissolved and the mixture is smooth, about 10 minutes. 2.Pour into a jar. Cover and chill. When ready to serve, stir in the chilled Coca-Cola. Serve over ice cubes in tall glasses. 3.For a beverage, top with whipped cream. For a dessert, add a scoop of vanilla ice cream. Makes 5 cups. Yields 5 Servings ********************************************************* Rum Soaked Sponge Cake (BÃ´lo BÃªbado - Brazil) Cake Batter 1/4 cup plus 2 tablespoons plain dry bread crumbs 1/4 cup plus 2 tablespoons granulated sugar 1 tablespoon unbleached all-purpose flour 1 tablespoon baking powder 6 large eggs (at room temperature) Put all ingredients into a food process or blender and process until the batter is smooth and well blended. Grease the bottom and sides of a nonstick 8- or 9-inch square cake pan. Pour the batter into the prepared pan. Bake on the upper rack in a preheated 350 degree F oven until golden and a wooden skewer inserted in the center comes out clean, about 15 minutes. Remove the cake from the oven to a wire rack to cool for 15 minutes. Meanwhile, make the syrup. After syrup is made, run a knife around the edges of the cake to loosen it from the pan. Then turn the cake out onto a large serving platter. Pour the rum syrup over the cake and allow it to cool. Here are a few dishes that require no effort once assembled. Chicken Enchiladas - Marilyn 2 chicken breast season, grill, rest and slice 8 ounces green chili salsa 1 Cup shredded Jack cheese 1 Cup shredded Mexican cheese 1 1/2 to 2 cups heavy whipping cream 4 to 6 flour tortillas (white or whole wheat) Pour 1/2 cup cream into a shallow bowl. Dip each tortilla in cream then place in a baking dish. Place chicken then salsa into tortilla and sprinkle with cheese; roll, lay seam side down in dish. Pour cream from dipping over tortillas along with up to 1 additional cup of cream and sprinkle with remaining cheese. Bake at 350 for 25 mins. ,until bubbly. Wait at least 5 minutes before serving. SHEPHERD'S PIE (Woodie) 2 pounds ground beef 1 tablespoon oil 2 onions, finely chopped 2 carrots, finely chopped 2 celery stalks, finely chopped 2 garlic cloves, minced Pinch thyme Dash Tamari Sauce (I would omit) Dash Worcestershire Sauce 1 tablespoon tomato paste 1 tablespoon flour 1 cup beef broth 2 cups cooked mixed vegetables (leftover or frozen) 5 potatoes and 2 garlic cloves, boiled and mashed with butter and milk 1 tablespoon butter Brown meat in oil and drain. Stir in onions, carrots, celery, garlic and thyme and cook 5 minutes. Stir in tomato paste, flour and broth, Tamari and Worcestershire. Add cooked vegetables. Transfer to casserole dish. Top with mashed potatoes and dot with butter. Bake at 350 degrees for 30 minutes. Salmon Pie 2 (8-ounce) salmon fillets Salt and freshly ground white pepper 3 Cup court bouillon 1 Tbl olive oil 1 Cup finely chopped onions (I used green onions) 1 Tbl chopped garlic 1 Tbl finely chopped fresh parsley 2 Cup mashed potatoes 1 egg 1/2 Cup heavy cream Preheat the oven to 350 degrees F.~ Season the salmon with salt and white pepper. In a saute pan, add the court bouillon and bring to a simmer. Add the salmon and poach for 6 to 8 minutes. Allow the salmon to cool in the water until tepid. Remove the salmon from the pan and discard the liquid. Flake the salmon into a mixing bowl.In another saute pan, heat the oil. When the oil is hot, add the onions. Season the onions with salt and white pepper. Saute for 2 minutes. Remove from the heat and stir in the garlic and parsley. Add the Sauted mixture to the salmon. Mix thoroughly. Add the potatoes, egg, and cream. Mix well. Season the mixture with salt and pepper. I did not use a regular crust but rather topped with a puff pastry. *******Cut the pie dough into 2 halves. Lightly dust the surface with flour. Roll out each half of dough to 12-inches in diameter and about 1/8-inch thick. Fold one circle of dough into fourths. Carefully lift the dough and place in a 10-inch deep-dish pie pan. Unfold the pie dough and spoon the salmon mixture into the pie shell. Place the second round of dough over the salmon mixture. Using a sharp knife, cut away the excess dough. Using your fingers, crimp the edges of the pie firmly to seal the dough completely. Bake the pie for 25 to 30 minutes or until golden brown. Note: Can sub a nice white sauce for egg and cream. Top with puff pastry Cheese And Spinach Enchiladas (Emeril) NOTE: The **** indicate steps I took to make this a bit less labour intensive. Lots of words but they really go together quickly. 4 Poblano chile peppers about 1 pound ( I used canned chiles) 4 Lb fresh spinach stems removed and well rinsed (I used a package of frozen) 4 Tbl unsalted butter plus 4 tablespoons 1 Cup chopped yellow onions 1 Tbl chopped garlic 2 Tsp chili powder 3/4 Tsp salt 1/4 Tsp ground black pepper Pinch cayenne 1/4 Cupall-purpose flour plus 1/4 cup 2 Cup half-and-half 1 Cup cubed queso fresco or queso blanco 1 Cup cubed Pepper Jack plus 1 cup grated 1 Cup grated cotija or Parmesan 2 Tbl vegetable oil 12 corn tortillas ( I used flour tortillas) 1 Cup chicken stock (I used vegetable stock but next time will use chicken) 1 Cup heavy cream **** I used canned and omitted this step****Roast the peppers by placing them on an open gas flame, turning them frequently with tongs until all sides are charred black, about 7 to 10 minutes. (Alternately, the peppers can be roasted under a broiler, or on top of a gas or charcoal grill.) Place the blackened peppers in a plastic or paper bag, and let rest until cool enough to handle, about 15 minutes. Peel the peppers, split in half lengthwise, and discard the seeds and the stems. Roughly chop and set aside.~ **** I used frozen and omitted this step**** Bring a large pot of salted water to a boil. In 3 batches, add the spinach and blanch for 15 seconds. Remove with a slotted spoon and shock in an ice bath. Remove and squeeze out the excess. Chop and set aside.In a large saucepan, melt 4 tablespoons of the butter over medium high heat. Add the onions and cook, stirring, until very soft, 3 to 4 minutes. Add the garlic, chili powder, salt, pepper, and cayenne, and cook, stirring, for 45 seconds. Add 1/4 cup of the flour and cook, stirring with a heavy wooden spoon, to make a light roux, 2 minutes. Gradually add the half-and-half, and cook, stirring, until thick, 2 to 3 minutes. Add the spinach and stir to incorporate. Remove from the heat and fold in half of the chopped chiles. Adjust the seasoning, to taste. Fold in the cubed queso fresco and both Pepper Jacks, and set aside. In a bowl, combine the grated Pepper Jack and cotija. Set aside. ***** I used flour tortillas and softened in the microwave*** In a skillet, heat 2 tablespoons of oil over medium temperature. One at a time, add the tortillas to the hot oil and cook, turning, until soft and pliable, 15 seconds per side, adding more oil as needed. Remove from the pan and place on a work surface. Place about 1/2 cup of the spinach mixture into the center of each tortilla and roll up into a cylinder. Place, seam side down, in a single layer across the bottom of a 9 by 13 inch casserole dish. In a saucepan, melt the remaining 4 tablespoons of butter over medium heat. Add the remaining 1/4 cup of flour and cook, stirring constantly with a heavy wooden spoon, to to make a light roux. Slowly add the chicken stock and cook, stirring, until thickened, 3 to 4 minutes. Add the cream and cook, stirring, until thick, about 2 minutes. Add the remaining poblano peppers and cook for 1 minute. Pour over the filled enchiladas and bake for 20 minutes. Remove from the oven and cover evenly with the grated cheeses. Return to the oven and bake until the cheeses are melted and bubbly and the enchiladas are completely warmed through, 10 to 15 minutes. Remove from the oven and let sit for 5 minutes before serving.

Kim, you really should explore the world of seafood, as it is ideal for fast meal prep. The whole secret with cooking shrimp, scallops, and other shellfish is to make sure you don't overcook it. But the particular critter usually gives you a clue. Shrimp turns pink when it's done. Scallops turn opaque. Clams and oysters curl at the edges. The hard ones are calamari and abalone. But even they give you clues. To clean shrimp you need to remove the shells and the mud vein that runs down the back. This can be done before or after cooking, depending on recipes. Hint: Shrimp cooked in their shells are more flavorful. There are special tools for prepping shrimp. But a regular table fork works just as well. Stick one tine into the shell from the head end, pointing into the mud vein. Then push the shrimp onto the tine. The shell and vein will pop right off. If you look at the Nuts & Bolts thread I've posted a simple recipe for Shrimp & Sausage Carbonade that you might want to try. Finned fishes, too, can broaden your choices. Fish does not require a long cooking time in any recipe (the rule of thumb is to cook ten minutes for each inch of thickness). Virtually any cooking method---from poaching to deep fying, baking to barbecuing---can be used for fish cookery.

For stroganoff I buy:
1 package of egg noodles (or the whole grain kind that is similar)

2 cans of cream of mushroom soup

1-1 1/2 pounds of ground beef or ground turkey

Brown the meat. Cook the noodles. In a seperate pot mix the 2 cans of cream of mushroom soup with milk (I just refill the two soup cans each once with milk and pour it in). Stir and heat over medium heat.

Drain the noodles and meat. Mix them together and add mushroom/milk sauce. As it stands it will thicken. Use more/less milk for thinner/thicker sauce.

Easy to make and my kids LOVE it!

Years ago, many many years ago I was suddenly living in a 1200 sf 2 bedroom house with my husband and 2 SS's over 21 who were getting divorced. They were both depressed, so at night all of their friends stopped by! You guess it around dinner time! One night I decided I would cook a dinner to discourage this. I got out the two biggest pots I owned boiled pasta (ziti) in one in the other ground beef with garlic powder and italian seas, chopped onion,through all together with cans of stewed tomatos, threw in any cheese that was cheap, I think it was chedder, served with garlic bread from the day old store. IT BACKFIRED THEY LOVED IT!!! I ended up going to Costco and just leaving pots of it in the fridge.

I do a similar beef stroganoff receipe, but I add in 1 carton of light sour cream and only use 1 can cream of mushroom soup. I use the fat free soup and non-fat milk to keep it low fat.

We love to marinate chicken breasts in Italian dressing and then grill! YUMMY. Another good chicken or steak marinade is 1 can of pineapple juice and 1/2 cup of soy sauce. This makes the meat SO tender and delicious. The longer you marinate it, the better---I sometimes will marinate the meat overnight.

I also have a recipe for something called 5 Hour Stew and it is SO GOOD.

--1-2 lbs of stew meat (and the best part is you don't have to brown it, just toss it in the pot!)

--4 peeled and quartered potatoes

--2 medium onions, peeled and sliced

--1 bag mini carrots

--1 teaspoon fresh or powdered garlic

--2 tablerspoons tapioca

--1 teaspoon sugar

--1 cup red wine

--1 teaspoon salt

--1 teaspoon pepper

-1 10 oz can of tomato sauce

--2 cups water

Just combine it all in an oven-safe pot and bake for 5 hours at 250 degrees. I love this recipe!

I wanted to add---fajitas are pretty easy and inexpensive to make and our kids GOBBLE them up!

I use whole wheat tortillas---you can buy these at Walmart for $1.50 for a pakc of 10.

I cut up about 4 large chicken breasts into strips.

Toss the meat into a skillet and then add 1 green pepper (cut up), 1 red pepper (cut up), 1 onion if desired...I buy one of the cheap packets of fajita seasoning, these are about .30!

Add the fajita seasoning and it usually calls for some water, as well.

Then I serve with fat free refried beans (in a can) and light sour cream.

YUM. Everyone loves this!

The whole meal is definitely under $12!

I would love to have the crockpot pulled-pork recipe!

Pull up the recipe forum on Garden web. Also, if you have a "good" crockpot, pull up allrecipes.com and they have excellent "5 star recipes" with tons of reviews from everyone that makes it. I really like reading the reviews, because people will say if they made any changes and whether it made the recipe better. I also like that I can make it in the morning, and the house smells great, and dinner is ready whenever we want to eat! Most of the meals are better than a lot of the restaurants, and cleanup is easy. Works especially great if you don't feel like cooking in the evening when you are tired, or coming in late and everyone is hungry.

I already put the McCormick website that has my pulled pork recipe.

You use their seasoning packet that is under $2.00 and it lists the ingreedients on there. The meat it calls for is under $10 and the ketchup, cider vinegar, brown sugar, etc. most people already have around the house.

And your fajitas sound good. We make them similar too. I like to put the chicken in the crockpot for hours though with some fresh lime and a bit of chili powder on it though. Very yummy!

Also cheap and easy...my kids love cheese quesadillas. Just put a little olive oil in a pan two of the bigger flour tortilla or burrito shells and some shredded cheese in the middle. Cook it for about 2-3 min on each side. (Make one for each person.) Then top with salsa or tomatoes and sour cream. Easy and delicious. Sometimes I will buy some of that rice a roni that is spanish rice flavored and add a can of stewed tomatoes to it. They fight over that!

I don't eat meat, just seafood. It's pretty easy for just DD and I to cook. During big dinners with family I usually make tilapia. The big frozen bags of tilapia run around $6/7 and you really can't tell that its not "fresh" and you can make sooo many variations. I've even given out my fish "recipes" (lol, I just throw things together) to non fish lovers who have come over.

An easy one is just sauteed with olive oil, onions and tomatoes. You can always just switch ingredients, its kid friendly too. DD loves the pineapple version with butter, salt and pepper and some pineapple chunks.

You can also bake it in parchment paper (you can use aluminum foil too) with your fav veggies or fruit and a little butter and lemon. Just cut the veg/fruit, salt & pepper, fav herbs, toss it all on the parchment paper and wrap up! Bake at 350 for about 15 - 20 mins. DD LOVES this, its like a little surprise! Our fav wrapped is blueberries and lemon, trust me! It's GOOD.

Oh and any of these you can use pretty much any white fish, not just tilapia. Tilapia is not my fav, but non fish lovers seem to like it.

Thanks Lovehadley :) DD and I do a lot of fun foods.

DD likes scrambled eggs wrapped in slices of honey ham. You can add cheese, onions..whatever you like in omelets. It was yummy before I stopped eating meat, lol.

Over the summer I babysat my best friends kids while she went on vacation. They didn't really like veggies too much, so I set out a bunch and let them pick out what they wanted to put in their pouch and added butter, then grilled. They were all really excited and ate them up! I can't stress enough how much little kids like this :)

DD and I do a lot pouches even in non grilling weather, we just toss in the oven.

Oh and how could I forget lettuce wraps! You can use any protein, shrimp, fish, chicken or steak. Cut in slices or chunks depending on what protein. Marinate (I use terriyaki) in your fav marinade and then grill or stir fry.

Strip the leaves off a lettuce head and leave big enough to wrap the yummies in. You can also use any other vegs. We like shredded carrots and diced cucumbers.

I lay every thing out so people can pick and choose what they want to wrap up. So yummy.

I need to go make dinner, I'm starving now.

I nabbed this recipe from CBC radio the other day.
DH, SS9 and I all loved it.

You can play with it however you want...
Feeling Indian? Do 1/2 curry powder and 1/2 paprika and use chickpeas. Serve with naan bread.
Feeling Mexican? Do 1/2 chili powder and 1/2 paprika and use black beans. Serve with cornbread.
And so on.

Tomato Bean Soup
From CBC Radio's "The Morning Edition"

Makes ~6 servings

- 1 T canola or olive oil
- 2 onions, chopped
- 2 cloves garlic, minced

- 1-24 ounce can diced tomatoes (preferably San Marsano)
- 4 c chicken or vegetable stock
- 2 T tomato paste
- 2 t paprika
- 1 bay leaf
- 1-15 ounce can white kidney beans (mixed beans, chickpeas, etc work too) rinsed and drained
- salt and pepper to taste

- handful fresh parsley, chopped

SautÃ© onions and garlic until translucent in large pot, medium heat.
Add remaining ingredients, except parsley.
Bring to a boil and simmer 10-15 minutes.
Adjust seasonings and add parsley just before serving.

Serve with crusty bread.

Optional: Just before serving you can add 1 c pasta (orzo, rotini, etc), cooked.
