Best bead board installation

We are renovating our pool house kitchen this spring. The walls and the back side of the kitchen island have been and are still bead board. The original bead board was tongue and groove 4 inch wide boards (the traditional type, I believe). It was horribly cracked at almost every seam (it was 18years old).

So the new bead board that has been installed is the 4'x8 sheet type. The paint is about a week old and we are noticing cracks every 4'. I'm not sure that these painters had caulked the seams - it doesn't look like it to me. I will be having them back to caulk and repaint. Can anyone tell me the proper type of caulk for this job? This is a semi heated pool house in NJ. We keep it at 55 degrees in the winter for the plumbing. We could keep it warmer if we have to, I suppose.
