The manure x the dairies around here smells awful ... those cows do not belong in a dirt enclosure & fed heaven- knows- what from bins... they belong in a green pasture to eat normal 'cow food'-grass! The cow manure x a pasture smells different & when dry & dug in the garden actually smells good & makes me homesick for the 'country'which cracks my husband (city slicker) up! Thanks for all the help everyone!! : I put the cut beans in boiling water for about 2 minutes, drained them & fill the kettle with cold water and ice cubes. I then drained the cooled beans & filled gallon zip-loc bags half full, squeezed the air out & froze them. I did not dry them first so wonder what that will do to the texture when I thaw them? Yes, I like to add onion, garlic & crumbled bacon in them & for me I add some vinegar like the Germans back home did but hubby wants none of that vinegar! It has been a long time since I grew beans so I had forgotten how to freeze them correctly as earlier I later just boiled the beans I froze with out blanching them first before freezing & they were TOUGH when thawed & cooked! I had forgotten how many beans a 10 ft. single row would keep producing! The yellow bush wax beans are not quite ready yet & I do like the too!

I like the idea of a kit to start with. Here is some info copied from the internet, there looks to be lots of info on the web. Try this recipe, it works for me. Recipe number one : 1,200 gm Gerber's high protein baby cereal (one box multi grain) 100 ml honey 100 ml glycerin u.s.p. (avoid the wood rose type, its poisonous) 100 ml boiling water (or filtered water) 5 ml liquid vitamin supplement (optional) 1.5 gm calcium propionate (optional) 3-4 tablespoons of bee pollen (optional) 1 table spoon of brewers yeast (optional) Use a food processor or blender to mix the above ingredients. (Actually, I don't usually bother with measurements, I just throw into the blender what I need to get the consistency I want, it's a crumbly, chunky powder that sticks together when pinched. You might want to use measurements to get a feel for consistency. Extra mixture can be stored in jars in the refrigerator.) Recipe number 2 you can use this one after you master the art of raising wax worms using the above recipe Bran form a feed store Honey Glycerin Bee pollen Liquid vitamins The container you use is every bit as important as the ingredients in the recipe. As is the temperature you keep the completed colony at ...85 degrees. The glycerin helps to keep the mixture moist and the Gerber mixed grains cereal has just enough preservative in it to keep the mold in check . And the worms will be huge using the baby cereal. I like to use 3 gallon jugs from Wal-Mart if no 3 gallons are available use a 1 gallon jug . I cut the lid and apply screen to the lid to allow air exchange . Make sure the lid and holes are tight . Wax worm babies are tiny and love to travel . Actually I have been using a cloth inside of the lid as well as the screen .. Wax paper crumbled into loose balls leaving enough room for the moths to fly inside of the container . The moths will lay the eggs in the wax paper . You can leave them in the original container or take the wax paper out and start a truly new colony after you have seen the moths flying inside the container . One recipe is just enough to set up two one gallon containers . 5 weeks is about the amount of time you will be waiting for things to get under way . Not every colony survives at first . Don't be discouraged by some bugs dyeing keep trying . Once you see the life cycle you will be making so many wax worms you will wondering why anyone buys them . One more thing .. Honey is the main thing ! Wax worms eat honey in the wild . (I keep bees also ) So once you are efficient at raising these insects try dog food as the grain (Old Roy brand Wall-Mart ) it will work . The amount of production of worms is related to temperature and moisture . But the first recipe is the one everyone learns from it is the one with the largest possibility of success . I often buy the spinach pies at our Middle Eastern bakery but have never made them at home. Since I rarely buy tomatoes out of season, we eat a lot of spinach salads during the winter. I’ve posted this one before. It’s on the lighter side and a good complement to heavy dishes like lasagne. LEMON SPINACH SALAD 1/2 lb. sliced mushrooms 1 lb. young spinach leaves, washed and stemmed 6 Tbs. olive oil 2 Tbs. lemon juice 1/4 tsp. salt 1 Tbs. grated Parmesan cheese 1 clove garlic, slivered Finely grated rind of 1/2 lemon 1 hard cooked egg Freshly ground black pepper Wash mushrooms and combine with spinach. Chill. Mix oil, lemon juice, salt, cheese and garlic. Chop up egg and sprinkle over salad. Add lemon rind to salad and grind pepper on top. Pour dressing over salad right before serving and toss. Note: Best if dressing is made about an hour ahead of time and garlic pieces removed before pouring on salad. Crumbled bacon pieces can be added if desired. ------------ Vegetable timbales have always been one of our family favorites for meatless meals. It’s common to find recipes for them in early 20th century cookbooks. Photobucket SPINACH TIMBALES 2 (10 oz.) packages frozen chopped spinach 4 eggs 1/2 tsp. salt 1/4 cup butter, softened 1 Tbs. fresh lemon juice Cheese or hollandaise sauce, if desired Cook spinach according to package directions; drain thoroughly. In small mixer bowl, beat eggs until foamy. Stir in cooked spinach and remaining ingredients except sauce. Divide mixture between 5 greased 6 oz. custard cups. Put a loose piece of foil over the cups, shaped so that the steam drips back into the pot instead of on the custard cups. If you have a Coconut-mint chutney that you like then I'd substitute that for both the mango chutney and the mint chutney. A more authentic version of this recipe I came across started with making your own cheese. Yeah I'll get right on that. Cook onion in butter in a large heavy skillet over moderate heat, stirring, until soft, 4 to 5 minutes. Add 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg and cook, stirring, 1 minute. But I decided to just try something different than what I usually do, which is spinach salad, or throwing a handful or two of spinach into whatever soup I'm heating up. So, I made spinach pesto. I used a basic basil pesto recipe as a template, but changed the ingredients quite a bit, keeping with the general idea of pesto. It turned out quite good, and even DH liked it. He says he doesn't like garlic with spinach (go figure) so I wasn't sure if he'd like this, but he loved it. I used 2 cloves of garlic, but I think one fat one would have been better - it was a bit strong. I'll write out the recipe as I made it, though. My recipe is adapted from Deborah Madison's recipe for Pesto, from Vegetarian Cooking for Everyone. Spinach and Goat Cheese Pesto 1 or 2 plump garlic cloves salt 3 tablespoons (or small handfuls) of walnuts 3 big handfuls (or cups, loosely packed) of fresh spinach 1 4 oz. package goat cheese 2 tablespoons pecorino Romano (optional, to taste) 1/2 cup extra virgin olive oil 1 squeeze, aprox. 1 teaspoon lemon juice pinch cayenne pinch freshly ground nutmeg In a food processor, process the garlic, salt and walnuts until fairly finely chopped, then add the spinach and olive oil. When smooth, add the goat cheese, lemon juice, cayenne and nutmeg, and process to combine. Sally

Drenched Cranberry Cake - Lorijean 2 cups all-purpose flour 1 cup sugar 2-1/2 teaspoons baking powder 3 tablespoons vegetable shortening, melted 2/3 cup milk 1 egg 2 cups fresh or frozen cranberries Sauce: 1/2 cup (1 stick) unsalted butter 1 cup sugar 3/4 cup heavy cream 1/2 vanilla bean, split lengthwise Preheat the oven to 350 F. Butter a 9-inch round pan. Sift the flour, sugar, and baking powder into a large bowl. Add the shortening, milk, and egg. Beat for 2 minutes, or until smooth. Stir in the cranberries. Pour into the prepared pan, smooth the top, and bake for 1 hour, or until an inserted toothpick comes out clean. Transfer to a wire rack. While the cake is baking, make the sauce. Melt the butter in the top of a double boiler over simmering water (I just put a small saucepan over an extremely low flame and dispensed with the double-boiler!) Add the sugar, cream, and vanilla bean. Stir to mix well. Cook, stirring occasionally, for 5 minutes. Remove the vanilla bean. Serve the cake with each individual slice generously with the warmed sauce. They freeze well, but thaw them before adding icing. I finally got around to developing and testing this recipe and making the photos. My goal was a zippy cranberry chutney. Cranberry chutney is not such an original idea as I first thought. Malna posted one early in this thread and it turns out there are many recipes for it on the Internet. Anyway, here is mine. Chutney Ingredients Chutney Appetizer CRANBERRY CHUTNEY 12 oz. fresh or frozen cranberries 1 orange, chopped 1 apple, chopped 2 Tablespoons finely minced shallots 1 Tablespoon finely minced fresh ginger root 3/4 Cup white vinegar 3/4 Cup white wine 1 Cup sugar 1 teaspoon salt 1 teaspoon ground cinnamon 1/4 teaspoon ground cloves 1/4 teaspoon ground allspice Combine all ingredients and bring to a boil in a covered pot. Simmer covered for 5 minutes. Simmer uncovered for 25 minutes. Note: Prior to cooking, it may appear that there is not enough liquid. Check the consistency after the first five minutes of cooking. Add wine or water if necessary. The final product should be thick. You made my day. LPM, this chutney was pretty much what I expected it to be. It's based on a review of many other recipes so I couldn't go too far wrong. My main innovations were to use shallots, ginger root and wine, nothing especially daring but fitting to the concept of a chutney I thought. I was tempted to use balsamic vinegar but went with white vinegar for the sharpness I wanted. I figured the other ingredients would provide enough fruitiness. Since it is the only cranberry chutney I ever tasted, I have no basis for comparison. I can only say it tastes good to me. I agree about that recipe which called for sage. I would not use green herbs. IMO, it's sweet spices you want with the fruitiness of chutney and that is consistent with most of the recipes I looked at. I just looked at Malna's recipe again and it looks like she also used ginger root, not ground ginger. Check her recipe and look at a few of the other on-line recipes and see what you think. Let us know if you make chutney. Here's my take on the chutney issue - I much prefer the sweet one. As a matter of fact, I can just eat it right out of the jar. On a turkey sandwich? To die for. The curried one - DH loves it. I liked it right after I canned it but, as I said above, I think the curry part got too strong after a few months on the shelf. BTW, the ingredients in Balti are coriander, garlic, ginger, cumin, dundicut chilies, Ceylon cinnamon, mustard, cardamom, cloves, fennel, fenugreek (sorry, LPM), charnushka, star anise, ajwain, black cardamom, cilantro, anise seed and bay leaf. Whew, long list to type!
