Here is what my Mom did with left over cake that got dried out. She would whip up cream and fold in the chunks of cake and freeze it in the ice cube trays that came with our frig. The trays with the removable inserts. Of course, she took out the insert. Absolutely delicious. We couldn't wait for it to get frozen. I grew up on a dairy farm so we had all the cream we wanted.

I think the recipe looks pretty much fine. I suspect you had too much flour in there....either packed the cup or the flour was particularly dense. It would have a texture very much like a sweet pastry dough. A pretty standard proportion for pastry si 1/3 cup fat to 1 cup of flour...and 1/3 cup of sugar to that making it a sweet crust...and the syrup would be very like the water in a pastry dough. Try it again...and only add 2 cups of flour....and add the 3 rd cup as needed. I will bet it will work better. I think you had too heavy a hand with the flour. Linda C

Oh, sure & I never believe anyone who says they never have. For larger parties I usually serve 2 main courses for those who "don't eat beef any more" or those who will eat seafood but don't eat meat. Amazing how well-placed garnishes can hide some mistakes. As long as it's cooked through, most gets eaten & even seconds are requested. Sounds like you recovered very well!

I finally made it the way the original recipe was written at eatingwell.com. I finally found the canned chipotle peppers. Not sure why but I had looked several times in the grocery store (on separate visits) in the section for the jar of red peppers. Not sure why I didn't look closer to the cans of tomato sauce but in any event, thanks to breezyb, I finally looked for them in the right spot, found them and tried this. It was very good the way the recipe is written, I agree. But I also think the real reason it is so good is the chipotle/mayonaise mixture. MMMMM is that good. I'm going to use that again. I may never go back to using plain Hellman's mayonaise again. --Alice
