insulating vaulted ceiling

Our roof has three sections, an attic above bedrooms, vaulted section with windows, and a vaulted section, with a slightly different angle, the vaulted parts are steep/high. Snow melts off the third section, leading us to think the insulation is not sufficient. At one point there were squirrels living in one part. We now have cement fiberboard siding which keeps them out.

We are wondering how to insulate this section. Is there a way to drop the ceiling, adding some insulation and a new layer of drywall(still keeping a vaulted ceiling)? We will probably be replacing shingles with a metal roof soon. Would that be an opportunity to add insulation?
