I also wonder about a lot of people who posted on this thread that I have not heard from in many years, but I also noticed that I never posted on this thread, and I can't imagine why. Anyway, I can try to make a list now. I'll number them, but this is just the order in which they come to my mind. 1. seafood gumbo 2. king crab legs (I don't care for lobster and much prefer crab) 3. cherimoya / guanabana (They are very similar to me.) 4. fried okra 5. fried alligator tail 6. fresh coconut or mamey ice cream (my two favorite flavors) 7. chocolate hazelnut Bavarian cream pie 8. chocolate turtles, with caramel made with cream instead of milk 9. Eggplant Parmigiana 10. dragon fruit / pitaya, especially in juice form I am also surprised at how many sweet items I named, since I do not eat many sweets, but maybe that is why they made my list. I have not eaten any of the things on my list in the past month😢, but I hope that will change soon. I don't eat candy as a rule, but it still has to make my list. As an honorable mention, I would like to add the chocolate croissants I got at a French bakery in Copacabana. I especially liked that bakery for breakfast because I could order in French instead of Portuguese.

I will try to condense this because I could pontificate for hours on this! My love for gardening came from my father. He was the ultimate green thumb-he didn't have formal training that i know of, but he was a street tree gardener for two of the communities we grew up in, and always had a vegetable garden as a way to supplement our large family's food budget.(Six kids) He was a school music teacher and when summer vacation began he was always found out back tending the garden for pretty much the whole summer. Of all six children I seemed to be the most interested in what he did-and my first memory of my own interest was when he gladly allowed me to plant marigolds around the border of his garden to keep pests away(this was a fairly large plot and now I know why he jumped at my offer to help him!)I was in elementary school at the time. Also eating a tomato whole and sprinkled with salt always brings dad's tomatoes to mind. And asparagus and homemade pickles.... That was my first taste of working in a garden. It wasn't until I was a first-time homeowner that I knew I was going to be a gardener but I chose to go the route of flowers instead of vegetables. The saddest thing, though was that the year before I moved into my new home, my dad developed Alzheimer's disease and everything I needed to ask him for gardening advice about trees and organic gardening was completely gone-he was just a shell of my father-quite sad. Not a day goes by when I'm in my yard and garden that I don't think of Dad and the gift he gave me. I just wanted to share it with him. He passed away two months ago. Just an interesting note; Our family surname has it's origin from Poland and it means 'gardener of an estate' I find that kind of neat. Honestly, I am not sure what got me hooked. I think it's my tendency to love "scientific" stuff - I never pursued it professionally, but I'll make anything into a science experiment. I got through two pregnancies with that attitude. ;-) My grandma was the gardener in our family. She lived with us, and each year we had to have a veggie garden. My dad wasn't into yard work much, but was "forced" into the labor required, turning over the clay soil with a spade and protesting the entire time. Always basic stuff - tomatoes, peppers, pole beans, but they sure tasted good. We had strawberries for a couple of years, and there was a big apple tree in our yard that grew "cooking" apples. Grandma made lots of pies and applesauce. Then there was Girl Scouts - one year we had a hike with a knowledgeable person who pointed out all the fantastic wild plants along the trail. I absorbed it all like a sponge. This is rare, this is edible, this is a cure for poison ivy, etc. I still remember most of it, teach my daughter, and soon will teach her scout troop too. I remember going to visit my grandparents in Texas every summer. We lived in New Hampshire and would fly down and my grandparents would meet us at the airport. The first thing we would do when we got to Grandma's house was run to her garden. Every year she planted a watermelon JUST FOR US! Oh, how special that was. We would walk into the garden and she would "double check that it was ripe and time to pick it and she would let us watch as she "ever so gently" plucked the watermelon from the garden and we would sit on her front porch all afternoon eating the best watermelon we had ever tasted and spitting seeds as far as we could. Sadly, my Aunt burst my childhood memory bubble (when I was in my 40's but it still hurt!) by telling me that my Grandparents would go to the grocery store the night before we flew in, buy a watermelon and lay it in the garden "just for us", pretending they planted it and grew it all along...I guess I'm in denial because I still tell my children about those fond memories! * Posted by: becki3 z5 IN (My Page) on Tue, Jul 23, 02 at 20:34 Can I still step in here? This is such a wonderful thread, brought back some great memories. But now I'm sitting here with tears in my eyes and a big lump in my throat. One of my first garden memories is of my next-door neighbor when I was very small. She had a gigantic (to me) gooseberry bush that she would make pies for us from, if I would pick the berries. And she also had a thick grape vine that she would sit down with me in the middle of the yard and eat grapes from right off the vine. We always sat on the other side of it so my mom couldn't see us from the window. I don't think she would have minded, but my neighbor made it fun, thinking we were being secretive. She also had about a million plants in her house that she would show me all the time. Thinking back on it now, I realize they were mostly African violets. She was in her late 80's, early 90's, and I thought she was the best neighbor a girl could ever have. (still do) :) Then there was my grandpa. When he was a teen in the service, he had come home to visit his mom just before being shipped overseas. He took ONE little segment from her Christmas cactus, which had been a wedding present 25 years before that, and put it in his wallet. He then drove all the way across the country (took a few days), all the while sitting on this wallet. Just before being shipped out, he stuck this one little smashed, dried up piece of Christmas cactus and stuck it in a little pot of dirt from the ground outside his barracks. I'm not sure what happened to it (where it was, who took care of it) while he was in the war. But I do know that when he died in 1994, that Christmas cactus was not only alive, but very, very, VERY big. He had built a planter for it on wheels so he could move it outside in the summer and back inside for the winter. He also had a ramp leading up to his patio door, which he had to remove to get it through. This "planter" was 5 feet long, 3 feet wide, and 4 feet deep. Filled all the way with soil and thick, long roots. And the plant filled every inch of the top of the soil and hung down to the floor all around. He had to give it a "haircut" every time he moved it in or out so he wouldn't run over it with the wheels. I now have a pretty good size pot of this same plant in my husband's office, where it sits in front of a huge window all year long and blooms from Oct to around May every year. I ask about or stop by to check on this plant about once a week. I'm always terrified I might lose this plant, I feel like somehow I would be losing my grandpa all over again. Or that he might be disappointed in me for letting his precious plant die after having survived 4 generations in our family. But my all-time favorite childhood memories (of any kind) come from my Aunt Julia and Uncle Bill. They had a big farm in Missouri with a couple horses, a coop full of chickens, and about 300 head of dairy and beef cows at any given time. Along with the usual couple of dogs and a barn full of cats. And I remember one time my Aunt sent me out with the horse to get a few apples from the big tree out in the east pasture to make a pie for dinner. She told me to get a sack out of the barn to carry them in. Well, being about 8 or 9 at the time, I had no idea how many apples it took to make a pie. So I took 2 big gunny sacks, and me and Ginger (the horse) set out to find that big tree. Ginger was so patient with me as I stood on her back on the blanket that I rode with (never used a saddle) to pick all the apples that I could reach. I tied these two gunny sacks across her back and filled them up full. (poor horse!) When I got back, I didn't think my Aunt and Uncle would ever stop laughing. Instead of a few apples for a pie, I had just picked enough apples for an entire week of non-stop canning, freezing, and baking everything we could think of that contained apples. Then there were the times that Aunt Julia and I would pack a picnic basket to take out to my Uncle Bill when he was working the fields. We would sit under a big tree and just watch him disking the field, or baling the hay until he noticed us in the distance. Then he would come get me and let me drive the big tractors for a while before we ate. But one of my most vivid and comforting memories is of me and Aunt Julia sitting on the porch swing snapping beans or shelling peas. I can't remember who picked those beans and peas, or what she did with them afterwards. But just sitting there snapping and shelling, not even having to speak, but feeling like the most loved person in the world. I just started to garden seriously for myself last year, and this year I had to have those green beans and peas. And I think of my Aunt Julia and Uncle Bill every time I go out to the garden. I almost started crying when my daughter (5yo) asked me the first time if she could help me shell the peas. She had so much fun with them I didn't even mind the ones that kept flying across the kitchen to land under the cabinets or off in a corner with the dust bunnies. And I can just see my Aunt and Uncle smiling now (more like giggling probably). Right now I think I need to call them (they live in Arizona now) and tell them how much I love and miss them, and maybe thank you for teaching me about all the things I love the most. Then I think I will sit down and start crocheting an afghan for Aunt Julia (she taught me how to do that when I was 6). Luckily I learned to crochet a lot better than I learned how to milk a cow (sorry Uncle Bill)! Thanks for letting me take this stroll! My father formed me a lot saying it would be too hard for me, turning the thick soil. Then I sow the peas and watered them for about 2 weeks. Then my first dog - who died of old age a few years back at 13- had a friend over. They were just puppies back then, running and playing. My daddy warned me, but I wanted to let them play on our rather tiny lot. They run over my pea-lot several times, breaking all those tender 15cm pea shoots. Oh, how I cried. Then I took little sticks and tied the shoots back up. Most of them recovered. Then the dogs, Roope and Olga, run the pea shoots down again after a week or so. And I gave up. I quit gardening for about 10 years. I only had a few cacti which I killed and bought new ones. But now I am a horticulturist. Working, ironically, in a greenhouse that produces pea shoots! I think that the wonder of growing, seeing the shoots come up from earth was a positive thing in the end. Even though I didn`t get to harvest the peas. This year I have a tiny pea-lot again, the first time after I was 9. I have harvested some, but my dog keeps steeling the pods before I find them. When I was 17 I found gardening again, in the form of houseplants. I was living in a tiny oneroom flat without balcony. The houseplant hobby lead me into studying horticulture. Now I have a son and 2 dogs. If Pyry wants to be a little gardener, I will build a fence around his lot. * Posted by: prairie_rose southalta (My Page) on Tue, Aug 20, 02 at 23:56 my earliest memories. being sat in the potato patch with a coffee can with some kerosene in the bottom and picking potato bugs and putting them in the can. i think that was the way my mom and grandma kept us out of their hair on wash day ( the old wringer washer, rinse tub, mangler days.) i remember the smell of the compost heap, and i never thought it was nasty. my grandpa and i spent lots of time there, spreading things out, turning it over occasionally. i think i must have got compost in my veins, replaced all the blood, cause i still don't find the compost heap all that nasty. (compost tea, well that is a different story. lol) i remember i hated bringing kids to our house in the fall cause you could smell the crocks of sauerkraut brewing. we lived on the edge of town, and i swear my mom was the only one who canned. but i couldn't wait for it to be ready and eating the stuff till i was sure i would burst. i remember we were the "poor kids" but we ate better than any of my friends, and were healthier than most of my friends. the garden was a way of life, and everyone was expected to pitch in. and when harvest happened, everyone was expected to come home to can. my mom would pick the weekend and as young adults, we all showed up. 5 women in a kitchen!!!!! lots of hard work, but lots of laughs, too. and when it was over we all got our share to take home. now, i am a single mom with two kids, and all those lessons are paying huge dividends. my two are the "poor kids" but they eat better than most of their friends and are healthier than most, too. what i save at the supermarket because of the garden pays the morgage and the extras for the kids. and this year, my daughter is taking an active part in the canning. i just wish my grandma, mom and sisters were here, too. * Posted by: lynne_s z5ny (My Page) on Mon, Sep 9, 02 at 22:23 I remember planting potatoes on my grandfather's farm in the early spring when i was about 4 years old. We weren't just planting a little garden patch...I swear this field must have been at least an acre. I remember the fun we had, laughing and running around in the dirt...getting dirty, but it was ok..we were doing something productive. I remember Grampa explaining the different types...we even planted purple potatoes from Russia. Later in our visit to his farm my brothers and sisters and I helped plant the seeds that would become carrots, corn and beans. I remember trudging through the brambles in search of the elusive blueberry bushes...after a morning of picking berries, we'd stop and have lunch...Grampa would take a fishing line and hook out of his pocket and catch small trout from a nearby stream and we'd roast them on a stick over a fire...just like a hot dog. He amazed me...the man could survive in the wilderness with nothing, and probably live better than most of us do today. lol The outdoors was his church; where he prayed, pondered and planned his life. My grandfather, retired by this time still loved gardening and sold his veggies every summer from his down-sized farm. We spent the entire spring and summer there. Everything we ate and drank came from that farm. I still remember how wonderful everything tasted...the taste of fresh food was foreign to me then. I went back to Grampa's farm many times until he passed...there, I worked hard, enjoyed the freedom of being in the outdoors and learned how important it was to treat our planet with respect, for it is what feeds us. It seems I forgot a lot of his wisdom until quite recently. Now that I'm a Mom of 5 boys, with many mouths to feed as well as many personalities and value systems to help develop, the things he taught me are returning. My first memory is of dark purple tulips and tulips that were taller than I. I recall what a joy it was grandpa let me pick one. Somewhere in the family, someone has a picture of it. I was 2-3. Both gardened but it was my paternal grandfather that let me try everything. He introduced me to raw veggies. I still prefer them over cooked. He would also let me in the berry patch - which is what really got me growing. He made a deal with me - if I picked 2 I could eat one. He'd go in and I would pick 'em clean of course taking the best for myself. We both walked away thinking we got the better deal. My maternal Grandfather taught me more on the "how's" rather than the "whats". He grew to sell and was not keen on kids picking things he could potentially sell. When I was small I would go out to the garden where he was working just to be with him and I'd watch. I would have worked but he wouldn?t let me. He thought I was nuts for wanting to work. He told me there were snakes in the berry patch in an "effort" to keep me out. Most the time he ran me off I was just looking for the snake. Him teaching me things came at a much older age. Im grateful for the time I did spend with them and the gift they passed on. My parents and I immigrated to the United States when I was four years old and I never really knew my expanded family. My mother, who grew up on a sugar plantation, cared absolutely nothing for getting her hands dirty. Our back yard was concrete! Her only gardening interest was roses. I became interested in indoor plants as a teenager and then became obsessed with succulents once I moved out of the house & had a patch of dirt of my own. I even wondered what it would take to go back to school for a landscaping degree, and daydreamed about owning a nursery. My maternal grandmother came to America only a few years ago. I was fairly shocked to learn that she loves gardening! She grows guava trees from seed. In her 80s, she still derives incredible enjoyment from simply watching living things grow. I realize now my passion for gardening would have been sparked much earlier in life if geography (& politics!) hadn't intervened.

Veal Calvados from The Commander's Palace New Orleans Cookbook by Ella and Dick Brennan Serves 4 8 veal tenderloins or cutlets (about 1/2 inch thick, 2 1/2 ounces each) 2 tsp Creole Seasoning Mix* All-purpose flour 3 Tablespoons unsalted butter 8 apple rings, 1/4 inch thick each 1/2 cup diced peeled apple 1 cup diced onions 1/4 cup coarsely chopped shallots 2 oz Chablis 3 oz Calvados 10 Tablespoons heavy cream 3 oz demi-glace Freshly ground black pepper to taste Sprinkle veal with creole seasoning, then dredge lightly in flour. Heat butter in a saute pan; when bubbling, add veal and saute until lightly brown on both sides, turning once. Add apple rings to butter in pan and fry for about 1 minute on each side. Apple rings should remain crisp. Remove rings. Add to pan the diced apples, onion, shallots, Chablis, and Calvados. Stir gently over low heat. Remove veal and keep warm. Whisk cream and demi-glace into sauce in pan and bring to a simmer, whisking constantly. Return veal to pan and cook over low heat, uncovered, until tender. About 10 minutes. Do NOT put apple rings in pan. To serve: Arrange veal on top of apple slices and keep warm. Reduce sauce to the consistency of thin cream sauce. Add a pinch of black pepper. Spoon sauce over veal. *Although the cookbook has a recipe for Creole Meat Seasoning, I use Tony Cachere's. Here is the recipe used in the cookbook: 1 cup salt 3/4 cup powdered garlic 3/4 cup freshly ground black pepper 1/2 teaspoon cayenne pepper -- or to taste 1/4 cup paprika Combine. Also, I put the apple rings on top of the veal, rather than under it. This one with trees loaded down with Ida Reds is within walking distance of my house. Photobucket We have a big old Lodi apple tree in our yard. Lodis are great for applesauce and are unusual because the apples are at their peak in July, which is why the PA Dutch often use that variety for making schnitz (dried apples). I'll be stocking up on leftover Thanksgiving cranberries next week to make and freeze a winter's supply of this family favorite applesauce. HOLIDAY APPLESAUCE 4 lb. sweet apples cut into chunks (dont peel or core) 3 cups cranberries (12 oz.) 1 cup unsweetened apple cider Two 3-inch strips lemon zest 1/2 cup sugar 3/4 tsp. ground cinnamon In covered pot, simmer apples, cranberries, cider and lemon peel, stirring occasionally, for 1/2 hour or more, until apples are very tender. Add sugar and cinnamon. Simmer, covered 10 minutes. Discard zest. Pass mixture through a food mill. Add honey, sugar, or brown sugar to taste. Makes about 2 quarts. Quebec Apple Dumplings 4 large Granny Smith apples, peeled, cored and cut in half 8 heaping tsp. old fashioned dark brown sugar 8 scant tsp. finely chopped walnuts 4 tsp. Canadian whiskey 8 tsp. butter 8 tbs. Canadian cheddar cheese, finely grated 1 double pie crust recipe 1 egg, well beaten 1 tbs. water Preheat oven to 400 degrees. In a bowl, mix brown sugar, walnuts, whiskey and butter till well mixed. Roll out each piecrust into a 12" by 12" square. Cut each square into to quarters. In the center of each quarter, place 1 tablespoon of cheese, top with apple with a heaping tablespoon of the sugar mixture. In a separate, bowl beat egg and water together. Brush edges of piecrust with egg mixture. Bring four corners of each crust together at top sealing seams and folding up corners. Apple should be sealed snugly in crust. Baste with egg wash. Place on un-greased cookie sheet and bake for 20 minutes. Cool on wire rack. Apple Walnut Cobbler Source BH&G January 1997 5 c tart apples, peeled and thinly sliced 3/4 c chopped walnuts 3/4 c sugar, divided 1/2 tsp ground cinnamon 1 c all purpose flour 1 tsp baking powder 1 egg, beaten 1/2 c evaporated milk 1/3 c butter or margarine, melted Half & Half or light cream (Optional) Preheat oven to 325F. Lightly grease an 8x8 square baking dish. Spread the apples in prepared baking dish. Sprinkle with 1/2 c walnuts, 1/4 c sugar and the cinnamon. In medium mixing bowl, stir together the flour, 1/2 c sugar and baking powder. In small bowl, combine the egg, milk and melted butter. Stir egg mixture into the dry ingredients until smooth. Pour evenly over the apples, sprinkle with remaining walnuts. Bake 50-55 minutes or until toothpick inserted in center comes out clean. Serve warm, cut into squares. If desired, serve with half & half or cream. 9 servings 01/07 made this for the first timereally good and super easy! I used Pink Lady apples, had no evap milk so subbed cream. Worked fine. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ CREAMY DUTCH APPLE DESSERT 1/4 c. butter 1 1/2 c. graham cracker crumbs 1 (14 oz.) can sweetened condensed milk (not evaporated milk) 1 c. (8 oz.) sour cream 1 (3 oz.) cream cheese 1/4 c. lemon juice 1 can apple pie filling 1/4 c. chopped walnuts 1/2 tsp. ground cinnamon Preheat oven to 350 degrees. In a 1 1/2 quart shallow baking dish (10 x 6 inch) melt butter in oven. Sprinkle in crumbs; stir well. Press on bottom of dish. In medium bowl, mix together sweetened condensed milk, sour cream and lemon juice and cream cheese. Spread evenly over crumbs. Spoon pie filling evenly over creamy layer. Sprinkle with walnuts that have been mixed with the cinnamon. Bake 25 to 30 minutes or until set. May be served warm or cold. Refrigerate leftovers. I make it often when asked to bring an appetizer. It's always a nice change from the crackers, chees, meatballs, etc. on a pot luck table, and everyone loves it! FALL APPLE DIP (8 servings) 8 oz. cream cheese, room temperature 3/4 cup packed brown sugar 1 teaspoon vanilla extract 1 cup chopped, salted peanuts (without skins) 3 apples, sliced but not peeled (I like to use a Golden Delicious, a Granny Smith and a red-skinned variety for the most color) 1/2 cup orange juice Combine cream cheese, brown sugar and vanilla in a bowl - mix until smooth. Sprinkle with the chopped peanuts. Dip apple slices in orange juice and arrange around the cream cheese mixture. (Can transport apple slices in a container or ziplock bag in the orange juice, then arrange when ready to serve). Praline Apple Bread Winner of the 2001 Apple Baking Contest in Frankenmuth MI Ingredients: 1 cup granulated sugar* 8 oz sour cream 2 eggs 2 teaspoons vanilla 2 cups all-purpose flour 1/2 teaspoon baking soda 2 teaspoons baking powder 1/2 teaspoon salt 1/4 cup tart apples, peeled and chopped* 1 cup chopped pecans 1/4 cup butter 1/4 cup brown sugar, packed Method: 1. In a large mixing bowl, beat together sugar, sour cream, eggs, and vanilla using electric mixer on low speed until combined. Then, beat on medium speed for two minutes. 2. Stir together flour, baking soda, baking powder and salt. Add to sour cream mixture, and beat on low speed until combined. 3. Stir in apples and half the pecans. 4. Turn into a greased 9x5x3-inch loaf pan. Sprinkle top with remaining chopped pecans and press them lightly into the batter. 5. Bake at 350 degrees for 55-60 minutes. (Test for doneness with toothpick.) Cool in pan on cooling rack for ten minutes. 6. In a small pan, combine butter and brown sugar. Cook, stirring, until mixture comes to a boil. Reduce heat, boil gently for one minute. Remove bread for the pan and drizzle with butter and brown sugar mixture. Cool and serve. My notes: * I find a whole cup of sugar to be a bit too sweet for us and so usually use a scant 3/4 cup. ** The recipe as written originally said to use "tart Michigan apples such as Ida Red or Northern Spy." DH and I have both made apple pies, because that's his very, very favorite pie, maybe his favorite food in the world. I figure everyone here has made apple pie, but I'll post a recipe anyway. The recipe for the filling we've been liking lately is derived from a recipe in King Arthur Flour Baker's Companion, called "The Best Apple Pie." I changed a couple of ingredients due to what I had on hand, and it worked so well, we've kept the changes, and never made it the way it's written. I'll type the recipe as presented in the book but make note of the changes I made. We used AnnT's Butter and Lard pie dough recipe, using shortening instead of lard. The Best Apple Pie One 9-inch double piecrust 3 1/4 pounds (about 9 whole apples) Cortland, Granny Smith, or other baking apples, peeled , cored and sliced (7 to 8 cups) (* my note* I used a mixture of apples, with Granny Smith in the majority) 1/4 cup (2 ounces) apple cider (*my note* I was out of apple cider, so I used orange juice) 1 tablespoon rum (optional) (*my note* I used amaretto, as I was out of rum, and had amaretto. I also thought it would taste really good, especially since I was using orange juice. It did.) Juice of 1/2 lemon (about 2 tablespoons) 2 teaspoons vanilla extract 3/4 cup (5 1/4 ounces) sugar 1/4 cup (1 ounce) cornstarch 1/2 teaspoon salt 1 1/2 teasoons apple pie spice (KAF's note - If you don't have apple pie spice, use 1 teaspoon cinnamon and 1/4 teaspoon each nutmeg and allspice. That's what I did.) Preheat oven to 425 degrees F. In a large bowl, stir together the apples, cider, rum, (or the substitutions) lemon juice, and vanilla. Whisk together the dry ingredients, mixing until well combined. Stir the dry ingredients into the apples to coat them evenly. Roll one piece of pie crust into a 10-inch round and lay it gently in a 9-inch pie plate. Spoon in the filling. Roll out the other piece, lay it atop the filling, and seal and crimp the edges. Brush the top crust with milk and sprinkle it with coarse sugar, if desired. Or save a bit of the crust and cut decorative leaf designs, laying them in the center of the crust, or around the edges. Cut a few slashes in the crust, or a round hole in the center, to vent steam. Bake the pie for 15 minutes. Reduce the heat to 375 degrees F, and bake for an additional 45 to 55 minutes, until the top is brown and filling is bubbly. Another thing I like to do with apples occasionally for a different breakfast, is to spread peanut butter on bread, lay sliced apples on top, sprinkle with cinnamon, and broil just a minute or so, until hot and slightly browned. This could be done in a toaster oven I imagine, but I don't have one, so I use my oven's broiler. It's good with orange slices, too, but this thread's about apples. Be careful when eating, though, as hot peanut butter can really burn your mouth. Grease the bottom and 1/2-inch up the sides of a 9x5x3-inch aluminum loaf pan (dont use glass, it will not set up right). Set aside. In a bowl stir together flour, baking powder, baking soda and salt. In a large mixing bowl beat together sugar, sour cream, eggs and vanilla with an electric mixer on low speed until combined. Beat on medium speed for 2 minutes. Add flour mixture to sour cream mixture, beating on low speed until combined. Stir in apples and 1/2 cup of the pecans by hand. Spread batter in the prepared loaf pan. Sprinkle with the remaining pecans; press lightly into batter. Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. If necessary, cover bread loosely with foil the last 10 minutes of baking to prevent overbrowning. Cool in pan on a wire rack for 10 minutes. Remove bread from pan. Meanwhile in a small saucepan combine the butter and brown sugar; cook and stir until mixture begins to boil. Reduce heat and boil gently for 1 minute. EASY APPLE STRUDEL From The Jewish Holiday Kitchen by Joan Nathan 2 Granny Smith apples 1/4 cup sugar 1/4 cup raisins (optional) 2 TBL chopped nuts 1/2 teaspoon cinnamon Rind of 1 lemon 4 sheets fillo dough 1/2 cup butter or pareve margarine, melted 1/4 cup fine dry breadcrumbs Confectioners' sugar Preheat oven to 375. Peel and core the apples. Then combine with the sugar, raisins, nuts, cinnamon, and lemon rind. Take 1 sheet of fillo and spread out on a dry board. Brush with the melted butter and sprinkle with 1 tablespoon of breadcrumbs. Place a second fillo leaf on top. Brush with butter and sprinkle with breadcrumbs. Place half the apple mixture at the end of the fillo sheets, leaving a 1 inch border. Starting with that end, carefully roll, jelly-roll fashion, ending with the seam on the bottom. Brush the top with more butter and place in a greased jelly-roll pan (a cookie sheet will do fine). Repeat with the remaining filling and fillo dough. Bake 35 minutes, or until golden. Just before serving, sprinkle with confectioners' sugar. Serve the same day as baking. By the second day it becomes tough. I think everyone always has these simple ingredients on hand. 3 or 4 apples - any variety with red skin, unpeeled 1 or 2 ribs celery 1/2 red onion (red because it looks pretty in the salad) handful of raisins handful of pecan halves 2 handsful of seedless grapes handful of salty nuts, such as cashews, cocktail peanuts juice from half a lemon dash salt mayo - enough to hold everything together - 1/3 c or so Core the apples but don't peel; cut into bite-size pieces; drizzle with lemon juice Cut celery and onion into bite-size chunks Add everything but the nuts, stir to combine. Add the nuts at the end so they don't get soft or lose their "saltiness". Serve cold as salad, dessert, side dish or snack. When I was working, I took it to the library with me for an afternoon pick-me-up; I often shared it with teachers as they passed through the library to see what goodies (if any) I'd brought that day. ALL the recipes here look great, but that one is simple enough for me, LOL, and DH absolutely loves cobblers. I like to do something very simple with apples, and the DC especially love it. We often have this on a cold winter's morning -- they like to put it on top of oatmeal -- or for a quick dessert after dinner on an especially busy day when I only have time to cook a very simple meal. apples (any variety, any number -- I usually use at least 4 or 5 large apples, cored and sliced) I don't peel them, in order to retain vitamins. 3 T. butter 1 tsp. cinnamon 1 tsp. nutmeg 1 tsp. sugar, optional If I use more apples, I adjust the other measurements accordingly. This is also very good with pears! I melt the butter in a saute' pan on medium heat, then saute' the apple slices for just a minute or so. Then I sprinkle the cinnamon and nutmeg over them, put a lid on the pan, and turn down the heat to low. I let them simmer for about 5 minutes. There is plenty of liquid in the apples, so I don't add any. After about 5 minutes, the apple slices are softened but still have plenty of texture. Place apples and water into large, heavy saucepan. Stir in lemon juice, cinnamon and allspice. Measure sugars. Stir pectin into fruit. Add butter. Bring mixture to full rolling boil on high heat, stirring constantly. Quickly stir in both sugars. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into hot, clean jars, leaving 1/4" headspace. Wipe jar rims and threads. Cover with two-piece lids. Screw bands on finger tight. Process in boiling water bath for 10 minutes. Ok, I get LOTS of questions about the apples/water measurement. Dice 4 cups of apples. Place in a 4 cup measuring cup, then add water to cover the apples up to the 4 cup mark. It is NOT 4 cups of each. My favorite apple jam is a recipe I got from Nancy, the original author of the Cookalongs, so it's very appropriate. I've made two double batches this year and I think I'm going to still run out. It takes no commercial pectin and you can double the batch without causing any problems. I love the stuff. APPLE MAPLE JAM 12 C finely chopped apples (about 6lbs) I used the food processor 6 C sugar 1 C Maple syrup (grade B if possible) 1 tsp cinnamon 1/2 tsp Allspice 1/2 tsp Nutmeg 1/4 tsp cloves Combine all in a large deep pan. Slowly bring to a boil. Cook to the jellying point. Stir frequently, so it doesn't stick.Pour into hot jars leaving 1/4 inch headspace. Adjust caps. Process 10 min in BWB. Yields about 8 half pints. I double this recipe and it works fine. Those fried apples? I used to make them for the girls, they loved them on pancakes or hot biscuits, I never thought of adding them to oatmeal. Gingerbread Pancakes 1 cup (4 1/4 ounces) unbleached all-purpose flour (I used about half and half white whole wheat and all-purpose) 1/4 cup (1 1/4 ounces) yellow cornmeal 2 tablespoons (7/8 ounce) sugar 1/2 teaspoon cinnamon 3/4 teaspoon ginger 1/8 teaspoon ground cloves 1/2 teaspoon salt 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 cup (1 3/4 ounces) chopped crystallized ginger (optional) (I used about half to 2/3 that amount, being stingy) 2 tablespoons (7/8 ounce) vegetable oil 1/4 cup (3 ounces) molasses 1 cup (8 ounces) buttermilk 1 large egg, lightly beaten In a large mixing bowl, whisk together the flour, cornmeal, sugar, sices, salt, baking powder, baking soda, and the crystallized ginger. In a separate bowl, mix together the oil, molasses, buttermilk, and egg. Add liquids to dry ingredients all at once, stirring until just combined. Preheat a griddle and lightly grease it. Drop the batter, 1/4 cup at a time, to make a 3 1/2-inch pancake. Cook until the edges look dry and some of the bubbles that come to the surface break. Turn the pancakes over to finish cooking, then remove them from griddle to a warm serving dish. The cookbook recommends serving these with warm applsauce, sliced peaches, or warm custard sauce. Could be. The trick the Expert taught me is that the margarine (never butter or shortening) must be sticks with 100 Calories per tbsp, and have dairy solids. What I have on hand, and bake with when I want parve, is Earth Balance Soy Free sticks. I've baked with it a lot including cookies, but I still think it was the problem today. Or...I had another thought when I ate one. My brown sugar came in plastic. We've talked about how plastic ruins the powdered sugar. I have a new box. Maybe, I'll split the next batch and test the sugar. I've never had failed cookies before this month! The spritz were a simple mismeasure, no biggie, but the chocolate chips are making me nuts!!!! I mean, I've only made this same recipe ... countless... times. And they're cookies! I can make ugly cookies, but never wrong cookies. ARRRGGGHHH!!!!!!!!!! I had an email saying that my CSA box isn't going to have the chard, broccoli or oranges, but I think I can make the cake with the one I have. Or maybe use mandarins. I have a lot of mandarins.
