Hardwood first-timer looking for advice

I've never had hardwood in a home before. Nor have I ever spent much time in a house that does. I'm on really new territory here! We're having a house built and plan for the entire entry level to be hardwood. This would include the mudroom, kitchen, dining, living room, formal dining, and foyer and it would be done in 3.25" white oak.

I'm mostly concerned about hardwood in the kitchen. Reading here, I've seen everything from "have to wipe up spills right away" to "good oil treatment and they're almost impervious". How forgiving is it going to be? We aren't terribly hard on our floors, and are up for any maintenance/preventative applications we can do, but I have certainly been known to miss a dropped ice cube or two in my lifetime.
