Amateur needs some tips on skim coat plastering

I've become pretty good at patching in pieces of wallboard where the plaster lath keys have broken, and very good at taping joints in new wallboard by using many (many) layers beginning with regular compound for setting the fiberglass tape and ending with lightweight premix with my only rule being not to leave any high spots.

I'm now faced with doing a room that's going to have lighting that will show any defect in the plaster. It'll have a semi gloss sheen, as well. The remodeling project will leave us with two new walls, and two existing walls with lath plaster. I'd like to remove the lath plaster, and use 5/8" sheetrock because of the added rigidity going over the old, and possibly crooked, roughcut studs. Luckily, there are no doors or frames that need to be built out.

Any suggestions on how to best skim coat the plaster on the new walls appreciated.
