replacing damaged quartz countertop

After finishing a complete kitchen remodel, we discovered a scratch/flaw to our new quartz countertop. The installer is offering to replace this section, which will involve removing the undermount sink. They claim this is done all the time and will not damage my cabinets or my slate tile backsplash. Can they safely slide out the damaged countertop and lay a new one, or am I just setting myself up for potential damage to the backsplash and cabinets? Also, will the new piece of quartz match the existing countertop? Thanks for any help.
