How do you make your fridge look built in?

Sorry, I'm so long winded here: I currently have a kitchenaid counterdepth side by side that is 36" wide by 72 tall and 27 deep without the handles or the bit the water/ice dispenser sticks out. It's only 2 years old so we'll keep it for now. I'd like to have it stick out as little as possible. In the new plan, one side will have an end panel only and the other will be a run of cabinets. I'm doing 26" deep bases, so counter comes to 27.5. My cabinet maker says to make the fridge panels 28 deep-- just past edge of counter. We have a similar setup now and even tho we can push the fridge back, my DH pulls it forward so the door portion sticks out. Otherwise the open door will bump the counter and he doesn't (nor do I) want a mark. How can I avoid this issue?? When I look at all your beautiful kitchens your fridges seem flush and I assume you can still fully open the doors?? How can I design my new panels correctly to have it flush, open fully and not get bumped and marred??
