MOLASSES SPICE COOKIES (3 to 3 1/2 dozen)

1 cup dark brown sugar

3/4 cup unsalted butter

1 egg

1/3 cup unsulphured dark molasses

2 cups flour

2 tsp baking soda

1 tsp cinnamon

1 tsp ground cloves

1 tsp powdered ginger

1 tsp nutmeg

3/4 tsp salt

Sugar

Preheat oven to 350°. Cream together the brown sugar & butter with a mixer or in a processor.. Add the egg & molasses & mix until everything is combined. Sprinkle in the flour, baking soda, spices & salt & mix again. The dough will be soft.

Pour a few TBL of sugar onto a saucer. Roll the dough into small balls about 3/4" in diameter. Roll each ball in the sugar & place the balls 1 1/2" apart on ungreased baking sheets. Bake the cookies for about 10 minutes. Do not over bake; they should stay soft & chewy. Cool the cookies for about 5 minutes & then transfer them to absorbent paper to finish cooling. They'll keep for 5-7 days, covered.~~

Note: I'm not sure what unsulphured molasses is, so if anybody else knows, please share. Thanks.
