Louisiana Sunrise

Pina Colada frozen mix

1 quart vanilla ice cream

10 slices of canned peaches.

Mix the Pina Colada mix with 3 cans of cold water. Into a blender, put 1 cup of the mix, about 1 quart of vanilla ice cream, and 10 slices of canned peaches. Blend. Makes 2 shakes.

You can make 2 Louisiana Sunsets from this recipe by adding rum.

You could have the rum at the side to add for the adults with this one: STRAWBERRY DAIQUIRI PUNCH (serves 8-12) 6 cups fresh strawberries, stems & caps removed (or 6 cups frozen unsweetened strawberries, undrained) 6 oz can frozen limeade concentrate 3/4 cup light rum OR unsweetened pineapple juice 16 oz bottle lemon-lime soda 2 cups ice cubes Place berries, half at a time in blender or processor. Cover & blend until smooth. Transfer blended berries to large non-metallic pitcher. Stir in limeade concentrate & rum or pineapple juice. Cover & chill until serving time. Jus tbefore serving, stir in lemon0lim soda & ice. Garnish w/whol berries, if desired.~~A Slice of Paradise Vodka can be served with this one: CITRUS COOLER (serves 4) 6 oz can lemonade concentrate, thawed 6 oz can pineapple juice 1/2 quart orange juice Fresh mint sprigs, for garnish In a quart jar, combine the lemonade & pineapple juice. Fill the remainder of the jar w/the orange juice. Serve over ice garnished w/fresh mint.~~Food For Thought Rum can be added to this: CRANBERRY PUNCH (serves 30) 4 cups cranberry juice 4 cups pineapple juice 1 1/2 cups sugar 1 TBL almond extract 2 liters ginger ale Fresh fruit slices combine the juices, sugar & almond extract in a large pitcher & stir until the sugar dissolves. Caramel Apple Cocktail 6 servings 1 tablespoon cinnamon sugar 1 lemon wedge 1 1/2 cups apple cider 6 tablespoons butterscotch schnapps 1 (750 ml) bottle sparkling wine, chilled 6 maraschino cherries Spread cinnamon sugar onto a small plate or saucer. Run the lemon wedge along the rim of 6 champagne glasses, then dip the rims into the cinnamon sugar. Combine apple cider and schnapps in a measuring cup. Divide evenly among prepared glasses. Divide sparkling wine among glassses. Garnish with cherry.

I make this in huge amounts - all of my grown kids request it. Our family thinks it's the true cure for sore throats. One kid even has his college coach pleading for more. Even the grandkids like it, but then it's almost straight sugar! The trick is to find inexpensive orange drink mix. My local IGA guy will order it for me - like I say, I make huge recipes of it throughout the year!

I'll save this, as I have an Albereta peach tree with about 500 small peaches on it. I never know what to do with the crop when it comes in!

Mc Donald's Vanilla Iced Coffee (Copy Cat Recipe)

6-1/3 cups cold water
6 tablespoons fresh ground coffee
1-(14 ounce) can sweetened condensed milk
2 tablespoons vanilla extract
ice cubes

Add coffee grounds inside filter/basket, and adjust basket to fit coffee maker.

Pour cold water into coffee maker.

Start brewing the coffee.

After coffee's done brewing, turn off coffee maker,
and set pot aside for coffee to cool somewhat.

Combine brewed coffee and sweetened condensed milk into a large pitcher;
stir thoroughly until coffee and condensed milk is blended together.

Stir in the vanilla extract.

Pour flavored coffee into glass that is filled with ice cubes,
or refrigerate until coffee is chilled, then serve.

This makes (58 ounces) of vanilla iced coffee (about 5 servings).

jannie-- hope you don't mind my saying, but if you have an overabundance of peaches at harvest, would you consider taking them to your local food bank or asking gleaners to come? Many low-income people don't get to eat much fresh fruit. Sorry to hijack, but had to mention it!

I do love iced coffee on a hot morning. I recently have been sweetening it with one of those coffee syrups--sugar free chocolate flavor. With lots of ice and some milk in it, it is yummy.

I am surpised no one has mentioned root beer floats!

I got this recipe from a Taste of Home magazine several years ago (and BOY is that magazine not the same anymore - poo!)

I sometimes halve the recipe, as it makes a large amount. I have an electic juicer that makes quick work of squeezing the citrus.

It is so nice and refreshing on a hot day though.

Aunt Frances' Lemonade

5 each lemons, limes and oranges
3 quarts water
1-1/2 to 2 cups sugar

Squeeze the juice from four of the lemons, limes and oranges; pour into a gallon container.
Thinly slice the remaining fruit and set aside for garnish. Add water and sugar to juices;
mix well. Store in the refrigerator. Serve on ice with fruit slices.

Yield: 12-16 servings (1 gallon).
