left over cornbread?

Do any of you do something with leftover cornbread? This recipe has sugar in it. We llked it, but there is a lot of it for the 2 of us.

I make a second meal of homemade chili and pour it over the crumbled cornbread - my favorite way to eat chili!

Well, first, I don't put sugar in cornbread, but one of my favorite ways to eat it as a left over, is for breakfast, just like a cereal. Crumble the cornbread in a bowl and add milk, either hot or cold.

Sometimes I have that as a late night snack also, and always with hot milk.

SOunds like a grand evening Jo! Sharon, sending best wishes for Wolf's speedy recovery. I know you are taking wonderful care of him and your photos look just delish. Yesterday was Smokefest here, so we had a gracious plenty of all sorts of beast. I prepped pork shoulder, brisket, ribs, chicken and salmon and another friend who is a hunter and fisherman brought venison tenderloin, pheasant legs, a sea bass, and a bluefish. I dry rubbed the venison and pheasant and brined the bluefish and seabass. The salmon was also cured then dried before smoking as were the pork and beef. The vegetarian grill had peppers, corn, eggplant and vidalias. Other sides were quinoa salad with cranberries and pecans, spinach salad, cole slaw and pasta salad. Appys were taco dip, smoked salmon spread, Habanero Gold with cream cheese and crackers, chips & dip, etc Dessert was That D@mn Cake, Fruit in crust with cheesecake pie (Tracey Oh on the Pie thread) and an apple cake. It was all really good, but we did discover that there are not a lot of Bluefish fans AND home smoked salmon is far better than anything you can buy. Alexa

glenda, not only did I take a bite for you, but maybe two bites for you. We have guest in for the weekend. This morning I got up and fixed hot cornbread, sawmill gravy, and also had butter and molasses on the table. The only thing that I didn't have was the cracklins. I used the last bit of them a few weeks ago. These folks had never eaten anything like this before. They all have the recipes and ready to go back home and make their own. We are going to the grocery store in just a bit, and one of the couples is going to pick up some cracklins. There are only a few places here that I buy them. Hubby doesn't like the cracklins, so when i make it with the cracklins, just put it on one side. My little southern granddaughter who is 2, hasn't developed a taste for the cracklins. She told me there were bugs in my side of the cornbread. Glenda, you are a wonderful cook, thank you so much for all your wonderful recipes. Just thought of one thing I wanted to ask you. Did you ever make hard tack biscuits. Think that is what they were called. Back in the 50's, a friends mother would make these and I loved those hard biscuits.

Been using this recipe for 25 plus year. Dinner cornbread! INGREDIENTS: Â1/2 cup chopped sweet onion Â2 tablespoons butter Â1 package corn muffin mix or cornbread mix (Jiffy or similar) Âeggs, liquid, etc, according to muffin directions Â1/2 cup sour cream Â1/2 cup shredded Cheddar or American cheese PREPARATION: In a skillet over medium-low heat, melt butter; cook onion until tender, but do not brown. In a mixing bowl, prepare mix according to package directions. Pour into a greased 8-inch square baking pan. Sprinkle with the cooked onion. Combine sour cream and shredded cheese; spoon over the batter. Bake in a preheated 400Â° oven for 25 to 30 minutes

Hi alisande, If you're reasonably frugal ... you may want to drink the milk/coffee ... even when it's had a chunk of cookie break off and drop in (it can be rescued with a spoon). ______________________ Sometimes I wear my top prosthesis, well made at the dental school, when I want to look younger. The bottom one was fitted to the three visible teeth that I had ... and after the teeth wandered out of position, I didn't bother having the plate repaired so they'd fit. Now that the three visible teeth, along with one that never erupted, have gone ... I guess that I could use it ... even with gaps. ole joyfuelled ... with some fuelling assistance from soaked cookies. If they're big ones, and you can't take a bite out of one side ... it's hard to get them into our mouth undunked (unless you have a very big one)

This is a potluck favorite around here. I have not made it but sure have eaten. When someone takes it to potluck, they always go home with an empty dish.

***You can add whatever your like but this is pretty much the basic

Cornbread salad
Ingredients:
Ã¢ÂÂ¢1 recipe of cornbread
Ã¢ÂÂ¢1 envelope ranch dressing mix
Ã¢ÂÂ¢1 cup (8 oz) sour cream
Ã¢ÂÂ¢1 cup mayonnaise
Ã¢ÂÂ¢2 cans (16 oz each) pinto beans
Ã¢ÂÂ¢2 cups shredded cheddar cheese
Ã¢ÂÂ¢10 slices bacon, fried very crispy, and crumbled
Ã¢ÂÂ¢ 2 cans whole kernel corn, drained
Ã¢ÂÂ¢ 1/2 cup each of chopped red bell pepper, green bell pepper, green onions and several chopped tomatoes

Preparation:

Make up the cornbread, cool. Stir together salad dressing mix, sour cream and mayonnaise until blended; set aside. Combine tomatoes, bell peppers and onions. Toss gently. Crumble 1/2 of the cornbread into a large bowl. Top with half each of beans, tomato mixture, cheese, bacon, corn and dressing mixture. Repeat layers. Cover and chill for at least 3 hours. When ready to serve, stir the whole mess together!

This is also great without ranch dressing package mix. Plus, you may add any veggies you want

Best sandwich I had is a hobo :

Big slice of corn bread
summer fresh ripened tomato slice
slice of onion
piece of fried country ham

Heat the cornbread and serve the above.between cornbread slices

I don't put sugar in my cornbread ever!!!! I freeze the leftovers and use it to make my cornbread dressing. It crumbles very well after being frozen.

I use my leftover cornbread with milk and sugar for breakfast or anytime. I like sugar in my cornbread.
