Now THIS is what I call cornbread!

Just like my grandmother and mother made.

SKILLET CORNBREAD

The taste of the South!

Ingredients:

Â1 3/4 cups white cornmeal

Â1 teaspoon baking powder

Â1 teaspoon baking soda

Â1/2 teaspoon salt

Â2 cups buttermilk

Â1 large egg

Â3 tablespoon lard or bacon grease


Instructions:

Preheat oven to 450áµ degrees.

Start with a 9" cast iron skillet on the stove over medium heat, put the lard in the skillet.

Mix all the dry ingredients together in one bowl.

Mix the egg and buttermilk together in another bowl.

Mix the dry and wet ingredients together.

When you start to see little wisps of smoke coming from the lard, pour most, of the lard into the cornbread batter and mix well.

Then pour the batter into the hot skillet and hear the sizzling sound that guarantees you a nice crisp crust.

Place in the middle of the oven and bake about 30 minutes, until nice and brown on top.

Serve with butter, beans or greens with pot liquor.

If you want something sweet, drizzle some molasses on there with the butter.
