RECIPE: pear salad with stilton recipe

Hi,

Does anyone have a good pear and stilton recipe? I would

also like it to have the best vinagrette also. I hope I

am not asking for too much!!

Hi sybil. Here is a great pear and stilton recipe...but not a salad. Sorry....

Pears In Port With Stilton Whipped Cream

1/4 Cup crumbled Stilton or any good blue cheese
1/2 Cup plus 2 Tbsp whipping cream
4 ripe but firm pears
1/4 Cup butter
1/4 Cup sugar
1 Cup tawny port

With a fork mash cheese with 2TBSp of the whipping cream. Beat remaining cream until soft peaks form. Fold the cheese mixture into the whipped cream. The cream should be stiff with cheese pieces visable. Refregierate until ready to use.

Wash pears but do not peel. Slice in 4 slices lenghtwise. Melt the butter in a saucepan and saute pears until lightly browned on both sides.

Remove pears and keep warm.Add sugar and port to the pan. Stir and dissolve the sugar, losen the brown bits, bring to a boil. Reduce to a carmel sauce ( be careful the
port could ignite!)Return pears to the pan , coat with the carmel. Serve warm with a dollop of the stilton whipped cream!

Note: the pears can be made ahead and reheated in a 350 oven for 10 minutes, turning once.~

This salad is worth making just to have the candied walnuts.
You can substitute Stilton for the Blue cheese.

Pear Salad with Spicy Candied Walnuts

1/2 cup candied spiced walnuts (see recipe)
1 cup Zinfandel dressing (see recipe)
1/2 cup high-quality blue cheese, crumbled
1/2 pound assorted baby greens (arugula, baby frisee, baby lolla rossa) or mesclun mix

Make candied spiced walnuts and Zinfandel dressing first. After the pears have been poached, cut them into quarters and slice each quarter into four slices. Fan the slices, forming a half moon, and place in the center of a plate. Toss the greens with enough of the dressing to coat the greens. Using too much will wilt the greens. Place the tossed greens in the crescent of the pear. Sprinkle with crumbled cheese and candied walnuts. Drizzle some of the remaining dressing around the perimeter of the greens.

This salad could also be presented family-style with all the ingredients simply tossed together in a bowl and served on a platter. Makes 8 servings.
Zinfandel dressing

1 1/2 cups Zinfandel (divided)
1/2 cup sugar
1 cinnamon stick, about 3 inches long
20 turns fresh ground pepper (about 1 teaspoon)
2 tablespoons kosher salt
2 Anjou pears, peeled and cored
2 tablespoons Dijon-style mustard
2 tablespoons champagne vinegar
1/2 cup canola oil

Combine 3/4 cup Zinfandel, sugar, cinnamon stick, pepper and salt in a small pan and bring to a simmer. Simmer very slowly until the liquid thickens and becomes similar to a syrup. This will take 1 to 11/2 hours. If mixture reduces too fast, it will become bitter. Dressing can be done in advance to this point, then refrigerated.

When ready to complete, add pears and return syrup to a simmer. Spoon liquid over them or turn them frequently. Pears are done when they are soft and easily pierced with a fork, about 45 minutes.

Remove pears from the syrup and store in a covered container. Reserve the poaching liquid to finish the vinaigrette.

Combine remaining 3/4 cup wine and reserved Zinfandel syrup and bring to a simmer. Reduce mixture by two-thirds. You should end up with about one-third cup. It should be thick and syrupy. Transfer mixture into a stainless steel bowl and whisk in mustard and vinegar. While continuously whisking, very slowly stream in canola oil. If this step is done too fast, the oil will not emulsify. Transfer to a covered container and refrigerate.
Spicy candied walnuts

1 cup sugar (divided)
1/2 cup water
1/2 cup walnut halves
2 teaspoons cayenne pepper
2 teaspoons kosher salt
1 teaspoon black pepper

Combine 1/2 cup sugar and water in a small saucepan and bring to a slow boil. Reduce to a simmer and add walnuts.

Mix spices and remaining 1/2 cup sugar in a medium stainless steel bowl. When walnuts have begun to soften, after about 8 minutes, strain them out of the liquid and transfer them immediately to the spice mixture. Shake them around in the bowl until they have been completely covered with the mix. Sift them out of the spice blend, saving the spices for making this dish again or for another use. Transfer nuts to an airtight container, but do not refrigerate.

Not low sugar, but I'd think someone here might be able to help with that. I like this jam from USApears.com . They have other pear recipes as well. I also like the pear butter in the Ball Blue Book. The nutmeg is distinctive. Bartlett Harlequin Jam - USAPears.com You wouldn't think that the addition of maraschino cherries could change the complex flavors of this very easy jam. From a base of Bartlett pears comes a jam as pretty as it is delicious. Ingredients 1 1/2 pounds Bartlett USA Pears 1 can (20 ounces) crushed pineapple 2 tablespoons lemon juice 1 package (2 ounces) powdered fruit pectin 5 1/2 cups sugar 1 jar (8 ounces) red maraschino cherries, drained and chopped Directions Peel, core, and finely chop pears. Measure 2 cups fruit into heavy kettle; add pineapple and lemon juice. Add pectin; stir well. Bring to boil; stir constantly. Add sugar; mix well. Cook and stir over high heat until mixture comes to full rolling boil. Boil 4 minutes. Remove from heat and skim. Carefully stir in cherries. Ladle into clean, hot half-pint canning jars to within Â¨Ã»-inch of tops. Seal according to jar manufacturer's directions. Place jars on rack in canner. Process 5 minutes in boiling water bath with boiling water 2 inches above jar tops. Remove jars from canner. Cool away from drafts. Remove rings from sealed jars after 12 hours. yield: Makes about 8 half pints PEAR BUTTER - Ball Blue Book 2 quarts pear pulp [about 20 medium] (my notes - about 12 large) 4 cups sugar 1/3 cup orange juice 1 tsp grated orange rind 1/2 tsp grated nutmeg To prepare pulp: Quarter and core pears. Cook until soft, adding only enough water to prevent sticking. Press through a sieve or food mill. Measure pulp. Add remaining ingredients; cook until thick, about 35 minutes. As mixture thickens, stir frequently to prevent sticking. Pour hot into hot jars, leaving 1/4-inch head space. Adjust caps. Process pints and quarts 10 minutes in boiling water bath. Yield: about 4 pints. Also try Bernardin, the Canadian "Ball" canning site. http://www.bernardin.ca/ I did a search for pears there and got quite a few hits, including an interesting sounding pear cinnamon jam I may have to try this year. This corn salad is wonderful. I came up with it after making grilled corn the way they make it in India, and having some corn left over. So the first recipe isn't the salad, but if any of y'all are looking for something different this coming corn season, it's wonderful cooked this way... Spicy Fire-Roasted Corn with Citrus 1T cayenne pepper mixed with 1 1/2 T salt. 4 ears of fresh corn (or more, if you want leftovers for roasted corn salad) One lemon and one lime cut into wedges. Fill a salt shaker with the salt and cayenne pepper.* Shuck the corn and trim ends for corn skewers if you will use them at the table. If it's your first time roasting corn this way, it's a good idea to practice on one ear before committing all to the grill. Brush your hot grill (not the corn) with a bit of oil, and using tongs, place the corn on the grill. Keep an eye on the ears, and turn them occasionally to prevent too much charring in one spot. You do want some browning and a bit of char as the carmelized bits give the corn a wonderful flavor. The corn should be done in approximately 5 minutes, depending upon the freshness and size of the ears. Serve the corn with wedges of lemon and lime and the shaker of cayenne-salt. The diners rub the wedges all over the corn and then sprinkle with the cayenne-salt to taste. * If you have children eating who might be put off by the cayenne, make a second shaker with equal parts of salt and sugar for them to use instead. Leftover Roasted Corn Salad 2 ears leftover fire-roasted corn 4 T lemon/lime juice 2 T honey 1 t salt 1/4 t black pepper 2 cups assorted grated or chopped vegetables. (I like grated carrot, chopped red bell peppers, green onions, diced cucumbers, chopped tomatoes, crunchy celery, thinly sliced radishes and frozen peas, but just use up whatever odds and ends your refrigerator or garden produces! I've even added chopped apples or pears at times!) 1/4-1/3 c toasted, roughly chopped pecans, cashews or hazelnuts* 1-2 T minced fresh herbs (basil, cilantro, tarragon or parsley) -optional- Cut leftover roasted corn from cobs into a bowl and then gently scrape the little juicy bits from the cob with the blunt side of a knife into the same bowl. Mix the lemon/lime juice, honey, salt and pepper in a bowl and whisk until the honey is completely dissolved. Toss the vegetables with the dressing, and let sit at least 10 minutes for the flavors to develop. If you are adding fresh herbs, toss them in just before serving. This salad is wonderful with any simply grilled meat or fish, and pairs quite well with rice or couscous as a starch. It can also be made hours ahead, although it might soften and the colors might fade a bit if you make it the day before. Sprinkle the nuts on top of the salad before serving. *Toasting the nuts really brings out their flavor. Before chopping, put the nuts into a pan over a medium-high heat. Shake the pan gently back and forth as though you were making popcorn until the nuts darken slightly and become fragrant.

This is not traditional...but has been well recieved....and can be made with all apples or all pears if you prefer. Salad, pear, apple and raspberry Peel and cut up 2 firm but ripe pears And 2 granny smith apples Dice 2 small ribs celery or 1 large And add Â¼ cup walnut pieces Dress with the following dressing 2 T seedless raspberry preserves melted with 2 T rice vinegar. Sprinkle a little of this mix over the cut up fruit and toss until all is uniformly pink Cool and whisk in 1/4 cup EVOO And Â½ tsps celery seed. And dress the salad until all is moist. Linda C

Either one of these soups would seem to fit the bill. I've made them both the day before but only up to the part before adding the cream. ROASTED RED PEPPER SOUP (originally posted by chase) 4 Red Bell Peppers,roasted, seeded and peeled 2 TBSP Butter (or margarine) 1 Red onion,chopped 2 Garlic cloves,minced 4 cups Chicken broth 1 TBSP Lemon Juice Salt & Pepper to taste Saute onions and garlic in butter until soft. Add red peppers. Cook for 2 or 3 minutes. Add broth cover and simmer for 20 minutes. Add lemon juice. Process in food processor until smooth. Season with salt and pepper. Place back on stove until ready to serve. NOTE: To roast the peppers place whole peppers under the broiler or on a hot grill. Turn peppers until blackened on all sides. Place hot peppers in a plastic bag and tie shut. When the peppers have cooled completely remove from the bag. Remove all the skin and seeds. ROASTED GARLIC SOUP WITH PARMESAN CHEESE (from David at THS Cooking forum) 26 garlic cloves (unpeeled) 2 tablespoons olive oil 2 tablespoons (1/4 stick) butter 2 1/4 cups sliced onions 1 1/2 teaspoons chopped fresh thyme 18 garlic cloves, peeled 3 1/2 cups chicken stock or canned low-salt chicken broth 1/2 cup whipping cream 1/2 cup finely grated Parmesan cheese (about 2 ounces) 4 lemon wedges Preheat oven to 350°F. Place 26 garlic cloves in small glass baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat. Cover baking dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool. Squeeze garlic between fingertips to release cloves. Transfer cloves to small bowl. Melt butter in heavy large saucepan over medium-high heat. Add onions and thyme and cook until onions are translucent, about 6 minutes. Add roasted garlic and 18 raw garlic cloves and cook 3 minutes. Add chicken stock; cover and simmer until garlic is very tender, about 20 minutes. Working in batches, purée soup in blender until smooth. Return soup to saucepan; add cream and bring to simmer. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat, stirring occasionally.) Divide grated cheese among 4 bowls and ladle soup over. Squeeze juice of 1 lemon wedge into each bowl and serve. Serves 4. Note from me: I usually just cut the tops off 2 or 3 (depending on size) whole bulbs of garlic instead of the 26 garlic cloves in the first step and use ½ tsp. dried thyme if fresh is not available. Dont leave out the lemon wedges. This salad has a lighter flavor than many spinach salads. LEMON SPINACH SALAD ½ lb. sliced mushrooms 1 lb. young spinach leaves, washed and stemmed 6 Tbs. olive oil 2 Tbs. lemon juice ¼ tsp. salt 1 Tbs. grated Parmesan cheese 1 clove garlic, slivered Finely grated rind of ½ lemon 1 hard cooked egg Freshly ground black pepper Wash mushrooms and combine with spinach. Chill. Mix oil, lemon juice, salt, cheese and garlic. Chop up egg and sprinkle over salad. Add lemon rind to salad and grind pepper on top. Pour dressing over salad right before serving and toss. Note: Best if dressing is made about an hour ahead of time and garlic pieces removed before pouring on salad. Crumbled bacon pieces can be added if desired. Sounds like a terrific way to bring in the New Year. Enjoy!
