Looking for onion casserole, Glenda's I think..

At one time I had an onion casserole that I think it was Glenda's. I am not sure about this though, but it was sure good. Since I have 50 lbs. of onions that my husband bought from the Boys and Girls Club here where I live, I would sure like to find that recipe. It was awesome!

BTW, can you cut up onions and freeze them and how would you go about it? Thanks for anyone that can help me.

That is a whole bunch of onions!! But it's a good cause. The only onion casserole recipe I have in my file is called "Onion Pie" from DonnaOH.

I freeze onions but only use them in soups or stews. I just dice them and put them in freezer bags. They work fine if you're cooking with them.

Here's the recipe. May not be what you're looking for but it sure sounds yummy.

Onion Pie

1 c. crushed saltines (or 20 Ritz crackers)
5 Tbsp. butter, melted
2-1/2 c. onions thinly sliced (about 2 medium)
2 Tbsp. oil
2 eggs
3/4 c. milk
1/4 c. shredded cheese (more if needed)

Preheat oven to 350. Combine cracker crumbs and butter and press into a pie pan. Bake 8 minutes (glass takes a little longer). Saute onions in oil until tender--place in cracker crust shell. Mix remaining ingredients (EXCEPT cheese). Pour over onions. Top with cheese and bake 45 minutes.

I chop onions and freeze them. Lately I've made up a "trinity", onions, celery and bell pepper chopped up and froze in bags or you could use containers. If not sealed well, you need to use quickly though.

The fling with a condon (above) reminded me of what happened at my high school a lomg time ago. We had a math teacher who also was the assistant coach. (It's a small school. Several staff memembers performed multiple roles.) He was ok and fair, but was hated by a group of about 4 boys because he made them toe the mark and would not relinquish bad grades for bad performance. One night at a basketball game, they discovered he had left his car unlocked. They spit into a condon and put it in his car where they hoped the wife would see it. She did discover it. The Teacher's home life fell apart because of it. I knew nothing about this prank, but did know they were having domestic difficulty. Then, one day I overheard this group of boys describing among themselves what they had done and they were giggling about it. This taught me a lesson that things can be different than what they seem.

I don't have a recipe for such....but I can wing it. For a 2 quart casserole, you will need 3 cups of cooked cut up chicken. A package of Knorr cream of leek soup...I don't remember if you need 2 or one package, but you will need3 cups of the mixed soup. Mix acciording to directions, Dump the thawed veggies over the chicken, add the creamy soup mix and topw ith chopped parsley, mix bisquick according to directions for rolled biscuits....pat out on the board and cut your lattice and weave it over the top of your casserole, sprinkle well with grated parm and a little paprika for "pretty"....bake at 375 until crust is brown and the casserole is bubbling. I also like to add mushrooms, either sauteed or canned, and about 1/4 cup of roasted red pepper strips. I am making myself hungry! Linda C

Tuna Causa Potato base: 3 large potatoes 1/3 cup olive oil ajÃ amarillo powder salt and white pepper Boil, peel, and mash the potatoes. Add the olive oil a bit at a time, to taste and until it has a nice smooth consistency. Season with salt, pepper, and the ajÃ amarillo to taste - you could also use chopped or pureed fresh peppers - this is a mild yellow pepper (spicier than a bell pepper, but mild). Form it into the base of your presentation on a platter and chill in the refrigerator for Â½-1 hour just to firm it up a bit. This dish is generally served cold or room temperature, though IÂve seen hot causas on a few menus. Tuna layer: 3 cans of tuna (I like to use the water packed) 1 small red onion, chopped mayonnaise salt and white pepper This is pretty much just a simple tuna salad. Mash the tuna, add the onions, and enough mayonnaise just to make it moist and hold together. Season to taste. Assembly: Potato base Tuna salad 1 tomato, seeded and diced 1 avocado, peeled and sliced 1 rocoto or other medium hot pepper 2 hard boiled eggs, sliced chopped black olives chopped parsley juice of 1 lemon You should have a nice, firm mashed potato base to build on. Layer the tuna salad on top of it. Top with chopped tomato and parsley. Lay a layer of avocado slices on top of that, sprinkle or brush with the lemon juice so they maintain their color. Then the hard boiled egg slices (you can hard boil your eggs along with your potatoes above, just donÂt leave them in the water the entire time) and the pepper rings. Put it all together the nite before. I always do that, EXCEPT FOR THE CRACKERS AND BUTTER. Refrigerate. I do mix the crackers and butter together and put in a plastic bag. And refrig them, as well. Take everything out that morning, set on counter for a while, then bake. So everything will get heated all the way thru. Then top with the crackers right before putting in oven. My DS has been caught eating leftovers cold, standing at the refrigerator door. But for meals, I serve warm. Enjoy, Greta!

This is Paula Deen's onion pie.

****only thing I would do differently is cut the rings in half at least for easier eating.

3 cups thinly sliced Vidalia onions
3 tablespoons butter, melted
1 (9-inch) prebaked deep-dish pie shell
2 eggs, beaten
3 tablespoons all-purpose flour
1/2 cup milk
1 1/2 cups sour cream
1 teaspoon kosher salt
4 slices bacon, crisply cooked and crumbled
Directions
Preheat oven to 325 degrees F.

In a medium saucepan, melt the butter over medium heat. Add the onions and saute until lightly browned.

Put the pie pan on a sheet pan. Line the bottom of pie crust with the onions.

In a small bowl, beat the eggs and the flour together to combine. Add the milk, sour cream and salt. Mix well and pour over the onions. Garnish with the bacon and bake until firm in the center, about 30 minutes. Transfer to a serving platter and serve.

This is an onion recipe that I've made numerous times. It is very good. In fact, we liked it so much we made it several times within just a few days!

ONION BAKE

6 onions, thinly sliced
2 cups butter
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
2 cups shredded mozzarella cheese
1 (1 pound) loaf French bread

Preheat oven to 350 degrees F (175 degrees C).
In a small pan, melt butter and add onions. Cook 10 to 15 minutes or until soft. Remove onions from pan (leave butter in pan) and place in a 9x13 inch pan.
Combine soup and milk to pour over onions. Sprinkle with cheese. Slice bread approximately 1 1/2 inches thick and dip both sides in butter. Arrange on top of cheese. Bake for 30 minutes or until bread is golden brown and toasty!
