What's for dinner Sunday?

Happy Mother's Day to you all. Hope you've had a lovely day. Sorry I'm late--got wrapped up in fixing dinner and forgot all about it!

Tonight I'm roasting a chicken and I have gruyere potatoes ready to go in the oven and asparagus to steam. Also have watermelon chunks. Happy Mother's Day to myself :-)

Your dinner sounds yummy. We are just picking here. We did a big dinner and breakfast at my mother's last night and this morning. She can't do the stairs at my house so we cart everything over there. Lots of help from the family though.

Happy Mother's Day to everyone.
Patti-Come on down to TN & I will give you some cookies. I make mine with milk, dark & white cho.
Where we live the grass has been growing since March so today we got to cut our own. My roses are in full bloom & all my flowers.
For dinner it was pizza for hubby & a sandwich for me.

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

Kittiesmom, here is the recipe. Sharon didn't include a name, so I named it... Lima Beans Sharon KT 1 pkg of frozen Fordhook Lima Beans 1 small onion. diced finely 1 sm. jar of chopped pimentos-drained 1/2 cup sour cream-room temp 1 stick butter Melt butter in a saute pan & add the onions & pimentos..gently cook until tender. Meanwhile, cook the limas per pkg directions, & drain. Add the hot limas to the onion mixture. Gently stir in the sour cream & add salt & pepper to taste-don't be stingy w/the seasoning. You can add a little more butter if you care to, at this point. NOTE: This dish must be prepared just before dinner-serve immediately once you add the sour cream. DELISH!!! It is definitely DELISH!!! I gave my DD a "sample" of it today, and she loved it and asked for the recipe. I see Sharon has posted a recipe for Super Delish Baked Pork Chops. Can't wait to try that. Thanks, Sharon. Sue

Shirley, that coney dog is calling me! Glad the snow and ice are gone so you can get out and about! Jasdip, did your team win? I haven't been keeping up with the Olympics. My bad! I had 5 large baking potatoes that needed to be used so I made them into twice-baked potatoes. Baked the potatoes, scooped out the pulp, mashed it with butter, milk and sour cream. Added shredded cheddar, sliced green onions chopped parsley and some chopped bacon. Topped with more cheese and bacon. Put them on a cookie sheet and they are in the freezer before being stored in bags and run through the Food Saver. They sure look pretty! Sue, glad you are able to get out again. Lunch sounds great. Little Alyssa will soon be a 3-year old. It's a great age. I've never had Captain D's but it looks a lot like Long John Silvers. Glenda, I really like Thai coconut soup, but the rest of your meal sounds even better.

Raven, simple meal, I like it! Kittie, that is nice that he cooked. Well I made huge buns, they spread for some reason, so made huge patties..cooked them on the Foreman, after some onion slices and bacon..then loaded up with tomato and lettuce..so that was it..no sides...just mondo burgers. Oh product alert..Kraft slices, White Cheddar Habanero Cheese..really quite tasty not hot at all..just spicy..never noticed them before..and I buy a lot of sliced cheeses..so I'm not sure if it's new or Safeway just started carrying it. But I highly recommend..for a little flavor punch.

We went to Golden Corral today early (brunch) and beat the crowd. It was good, we only go there about once a year.
Had chocolate covered strawberries my daughter sent from Sheri's Berries for dessert. Still not hungry,so maybe a cracker or two, lol.

Pam, glad you got to celebrate with your mother. Isn't it strange how mothers always do the holidays and then, suddenly, it's up to the next generation to carry on tradition? I sure miss my mother and her cooking!

Mary, I'll be right over. I'll bring dinner and we'll have cookies for dessert :-)

Hellion, I've seen those berries advertised on TV. They look beautiful and delicious. Yum! DSD sent me a box of See's dark chocolates. Be still my heart. They are so danged good!

Glenda, that's a great picture of you. You look like you've lost some weight. Lucky you! Not luck, I know you work for it.
