Loui's for their awesome baked greek snapper.

Creamed corn was pretty good.

Little over a week, I'll be enjoying cruise food.

Ah, I was wondering when you were leaving. I love creamed corn. Harry makes it so good! Lots of pepper and he gets every single drop of "milk" out of that corn!

It's Cinco de Mayo so we're having Mexican. Right now I'm making Jae TN's wet burritos. Man, those are so easy! Also having an avocado/cucumber/tomato salad with cilantro and lime dressing. Bet those rib sandwiches would be yummy. Let us know what you decide. I've never made taquitos but have wondered how the hold them together while they fry. Twist ties? LOL!

I love looking at the "summary" of all of our menus - its such a good resource! Here is a salad I had over the weekend at our DD's, its from Sara Foster's Fresh Every Day cookbook and it was delicious. WHITE BEAN SALAD WITH TARRAGON VINAIGRETTE Serves 4 to 6 1 large yellow onion, thinly sliced 2 tablespoons olive oil 2 - 15 1/2 ounce cans navy or great northern beans, rinsed and drained or 1 3/4 cups dried beans, cooked until tender 1/2 cup canned artichoke hearts packed in water, chopped 1/3 cup pitted kalamata olives, thinly sliced 8 pepperoncini (Italian peppers in vinegar) sliced into thin rounds 1/4 cup chopped fresh flat leaf parsley leaves Tarragon Vinaigrette (recipe follows) Sea salt and freshly ground black pepper to taste 1. Preheat oven to 400 F. 2. Toss the onion and olive oil on a baking sheet with sides and roast until the onion is soft and lightly golden, 15 to 20 minutes. Allow to cool slightly. 3. Place the drained beans in a large bowl. Scrape the onion into the bowl with the beans; add the artichoke hearts, olives, pepperoncini, parsley and 1/2 cup of the vinaigrette and toss. Season with salt and pepper and add more vinaigrette to taste. TARRAGON VINAIGRETTE Makes about 1 cup 1/3 cup white wine vinegar Grated zest and juice of 1 lemon 2 garlic cloves, minced 2 tablespoons chopped fresh tarragon or 2 teaspoons dried 2 tablespoons chopped fresh flat leaf parsley 1 teaspoon paprika 1/2 cup olive oil Sea salt and freshly ground black pepper to taste Stir the vinegar, lemon zest and juice, garlic, tarragon, parsley and paprika together in a small bowl. Add the oil in a slow, steady stream, whisking constantly until all is incorporated. Season with salt and pepper. Use immediately or refrigerate in an airtight container for up to 1 week.

We're having leftovers here, too -- my son-in-law was here for the weekend (from NYC) and cooked for us. He made an incredible grilled chicken pasta dish. I couldn't stop eating it!

Now they're gone (sigh...) I always cry when we drop them at the airport!

SadieSadie, I know what you mean. Time goes so fast when the kids are here and I'm always sad when they leave. I stand in the driveway trying to keep a smile on my face until they're gone. ((Sadie)) I feel your pain!

Had leftover mashed potatoes that I fried, along with sausages and red sauce and carrots.

I have never had an ice cream cookie sandwich and tonite I felt like one. I whipped up a batch of Chocolate granola cookies and here's my sandwich! It was delicious!

A Dutch Loaf sandwich with mustard. Too hot here, didn't feel much like eating let alone cooking a nice meal. But that has consequences, because around 10pm I'll be hungry.

Well, I put in a very long day on my feet at work. I came home, showered, got in jammies. Now DH is going to grill up some pork chops and cheesy tomatoes with basil and I am sitting here with my glass of wine waiting to be served....

I keep forgetting about shish-kabobs! Those look delicious. In fact, I could just about devour that plate. Is that broccoli and rice casserole? Yum!
