I have this recipe, but not with cheese. Baked Sweet Potato Fries 2 lbs. Sweet potatoes, peeled 2-4 tbsp. Toasted sesame oil 2 tsp. Ground cumin 2 tsp. Chili powder 1 tsp. Paprika 1 tsp. Salt Lightly oil 2 non-stick cookie sheets and set aside. Cut the peeled sweet potatoes into "french fries". Place "fries" on cookie sheets, and spread them into a single layer. Drizzle the sweet potatoes the sesame oil, ground cumin, chili powder, paprika, and salt. Bake at 375 degrees F. for 20 minutes. Turn "fries" and bake for another 20 to 25 minutes, until lightly browned and crisp.

I was having Sweet Potato Fries at the Wayside Grill in Mount Shasta, CA which were served with a dip. I asked the waitress for the recipe and she said if I could guess one of the ingredients she would tell me. I guessed Mayo and she gave me the other one which was Honey... I mixed this together at home until I got the color and taste as described by smcanlis.

Set the shells aside. Add butter, grated orange peel, orange juice, egg and salt to potatoes and beat until light and fluffy. Stir in raisins. Mound filling in orange shells. Wrap in foil. (Can be frozen at this point - thaw for 3 hrs.) Bake at 325F for 50 minutes or until heated through.

Cut oranges in half and scoop out pulp. Drain potatoes, then peel and mash. Add butter, grated orange peel, orange juice, egg and salt and beat until light and fluffy. Stir in raisins. Mound filling high in orange shells. Freeze until firm and then wrap in foil and freeze until ready to use. To serve, let wrapped filled oranges stand at room temperature for about 3 hours.
