looking for: app/finger foods on a budget!

I was wondering if some of you could share some tasty but reasonable appetizers and finger foods for a party im hosting. Looks like we have approx 30 women at 7:30 at night so they will have already ate dinner. The responsiblity is on me to provide all pickings but im kinda short this month on $$$ as the kids wiped me out with school clothes,supplies and band rentals. All ideas welcomed TIA....Doing LindaC Raspberry Wings,Veggie Platter w/dip and Spinach Bread dip.

Well....beans are always good....
you can make your own bean dip for about a dollar....just boil some pinto beans with a little onion until they are very soft and almost beginning to fall apart , about 1 1/2 hours, drain and cook dry....mash and add salt and lots of black pepper.
You can make "crisps" by buying a loaf of day old french bread....one of those skinny baguettes, slicing thin about 1/4 inch, spray with butter flavored cooking spray and sprinkle with a little garlic salt and dried dill weed....and bake at 300 until very dry and slightly browned.
Deviled eggs are cheap and everyone loves them.
How about little smokies in BBQ sauce?
That hot appetizer....forget what I call it so can't find the recipe...but it's sour cream and mayo mixed with shopped green onions and parmesan cheese spread on a toasted English muffin and then cut into quarters and heated until hot...
Or any assortment of little sandwiches...tuna salad....egg salad....chicken salad...or make tiny brioche rolls and put a smear of honey dijon on them and a slice of ham.
you don't always have to serve Brie and shrimp or crab dip.

This may sound ordinary but I'm always delighted when I find a bowl of salsa and good taco chips beside it. Last week I went to a cookout at a relative's house and she had chips and southwest? salsa from WalMart that I couldn't stop eating because they were so delicious (she bought them because of the low fat content). Just put them out in attractive bowls :)

I made fish and chips on Sunday, and I used a recipe similar to Ann's, except that it has egg in it, and I dredged the fish in seasoned flour before dipping it into the batter. It probably came out too thick for Ann's taste, but Kevin and I liked it. When making the chips, I cut the potatoes into 1/2" (or slightly smaller) strips and stored them in ice water for a couple of hours. Then I deep fried them at 350 degrees for 3-4 minutes, drained them on paper towels, and left them to cool while I prepared the fish. After I was finished cooking the fish, I refried the potatoes at 375 degrees for about 7 minutes, and they came out better than any other fried potatoes I had ever made before. I had been aware of the twice cooked method for years but had never gotten around to frying any myself because I feel like I get enough fried potatoes when I go out. However, these were so much better than what I get in restaurants that I will make them again fairly soon. Also, I was suprised at how much cheaper russet potatoes were than the potatoes I usually buy. I ate the potatoes with a fork, as I did the fish, which was some kind of "rock" fish from Canada. I also made tartar sauce and a soy/mirin dipping sauce for tempura turnips that I did not get around to cooking. IRISH CREAM CHEESECAKE 6 whole graham crackers 1/4 cup melted butter 24 oz cream cheese, softened 7 TBL sugar 1 TBL flour 2 eggs 6 TBL sour cream 1/3 cup Baileys Irish Cream 2 tsp vanilla 1/2 cup whipping cream 9 oz semisweet chocolate, chopped Chocolate curls, optional Process graham crackers in food processor until finely ground. Ad butter; process until mixed. Press over bottom of 9" springform pan. Bake in a preheated 350Â° oven for 8 minutes or until golden brown. Cool on wire rack. Beat cream cheese & sugar in mixing bowl until smooth. Beat in flour & eggs 1 at a time. Blend in sour cream, Irish Cream & vanilla. Pour over crust. Bake at 350Â° for 10 minutes. Reduce oven temperature to 250Â°. Bake 40 minutes longer. Turn off oven. Let cheesecake stand in closed oven for 1 hour. Loosen cheesecake from side of pan; do not remove pan. Chill overnight. Bring cream to a simmer in heavy saucepan. Add semisweet chocolate. Heat over low heat until melted & smooth, stirring constantly. Cool to lukewarm. Place cake on rack placed on baking sheet. Remove side of pan. Pour chocolate glaze over top; spread over top & side with spatula. Chill until set. Remove to serving plat. Top w/chocolate curls, if using.~~

Paula Deans's chicken nuggets 2 cups crushed sour-cream-and-onion-flavored potato chips 1 egg 2 tablespoons milk 6 chicken breast fillets, cut into 1 1/2-inch cubes 1/3 cup butter, melted Honey Mustard, recipe follows Preheat the oven to 350 degrees. Spread the crushed potato chips in a shallow dish. Beat together the egg and milk in a shallow bowl. Dip the chicken cubes into the egg mixture and then dredge them in the chips. Place the chicken nuggets on a baking sheet and drizzle with melted butter. Bake for 15 to 18 minutes, or until golden brown. The chicken nuggets can be frozen after baking. Serve with your favorite sauce, such as honey mustard or ranch dressing. Honey Mustard: 3/4 cup mayonnaise 3 tablespoons honey 2 tablespoons yellow mustard 1 tablespoon lemon juice or juice from 1/2 lemon Horseradish, to taste 2 tablespoons orange juice (more or less as needed) Combine all ingredients except orange juice; stir well. Thin to pouring consistency for dressing or dipping consistency for dips with orange juice. Cover and chill for 2 or 3 hours.

This recipe I have served to company for many years. Not only is it fork tender, but your home will smell delish while it's in the oven! Sharon's Swiss Steak-serves 4-6 ********************* 8-10 pieces of cubed steak meat 2 cans Campbell's french onion soup flour salt & pepper ** Lay waxed paper on your countertop. Place the meat on the paper & sprinkle 1 Tbs flour over each piece. Season with pepper & lightly with salt. Using the edge of a saucer, lightly pound the flour into the meat-using a twisting motion of your wrist. Flip meat over & repeat. In a large frying pan-add oil to cover bottom of pan-heat till hot, then sear the meat for 1 min on each side. Have a 13x9 baking pan near the pan so you can transfer the steaks to the pan the minute they are seared. Place 1/2 can of the onion soup in bottom of pan before placing seared meat in the 13x9. Stagger the pieces in the pan-pour the remaining 1 and 1/2 cans of the soup over the meat. Cover with foil and bake at 350° for 60 min until fork tender. Remove foil & bake for 10 more minutes. I usually put baked potatoes in the oven at the same time. The au jus is delightful on the potatoes at serving! If you want two entrees-may I suggest Roast Cornish Hens? (which would go in the oven earlier-then nuke to reheat if not enough room for both meats in the oven.)..this is also a no fuss and they roast to a crispy, golden brown! Roast Cornish Hens ****************** Choose the smaller frozen hens (around 1 lb or less) that you can find-allow a good half day to thaw. Rinse the birds & dry w/paper toweling. Spray shallow baking pan & place hens on the pan. Season w/salt & pepper-inside & out. In a bowl place 1 stick of butter, 1/2 tsp garlic powder, 2 Tbs minced onion and 1 Tbs paprika. Mix together then reserve 1/2 the mixture to baste the birds with. Using your hands-rub each bird with the mixture. Cover with foil and roast at 350° for 45 min. then remove foil for another 30-45 min...basting every 15 min.with remaining mixture.

What about watermelon and cantalope served in half the cleaned out melon rind or a bowl. I would think one melon and one catalope would do it or just melon if you want or add a honeydew.

I have done that several times and it always look like you went to alot more trouble and expense than you did.

At 7:30, after dinner, how about desserts - brownies, cut small; mini cupcakes, cookies, fruit, decaf tea and coffee.

I was at a baby shower recently and the most popular item was a tiered plate rack of cupcakes all beautifully piped with cream cheese frosting. And there were lots of other yummy things.

Honestly? I can't picture a group of women tearing into a platter of chicken wings. To me that is more game day food than evening refreshments. I think if you did the veggie/dip, spinach/bread dip, a platter of fresh fruit, and something sweet like brownies or mini cupcakes that would be a gracious plenty. A sweet bread like lemon bread or banana nut bread would be a lot easier than cupcakes. Just slice rather thick slices and half them.

I would go with sweets, fruit and some cheese or a cheese ball.

Like Teresa I can't picture women digging into ribs especially after dinner.

I agree with Linda C. Deviled eggs are always the first thing to go and it doesn't get any cheaper than that. Sweet and sour meatballs or any kind of meatballs can be made ahead and frozen...pigs in a blanket easy...cheese ball, easy, men love Braunschweiger pate'. Cookies or any cake that can be made in a 9 x 13 pan and cut into small pieces....carrot cake, German chocolate etc.
