LOOKING for: St. Patrick's Day App. or Dessert

Hi - I'm going to a St. Patrick's Day party tomorrow night (I know, a day late). The traditional corned beef and cabbage, with Irish Soda Bread will, of course, be served.

Anyone have anything appropriate that I could make for a fun appetizer (not a sit-down appetizer ... more of a during cocktail time appetizer) or a fun dessert? We've all been asked to bring either an appetizer or dessert, so mine won't be the only one. But if it could be something appropriate to Irish or St. Patty's Day, that'd be great.

IRISH CREAM CHEESECAKE
6 whole graham crackers
1/4 cup melted butter
24 oz cream cheese, softened
7 TBL sugar
1 TBL flour
2 eggs
6 TBL sour cream
1/3 cup Baileys Irish Cream
2 tsp vanilla
1/2 cup whipping cream
9 oz semisweet chocolate, chopped
Chocolate curls, optional
Process graham crackers in food processor until finely ground. Ad butter; process until mixed. Press over bottom of 9" springform pan. Bake in a preheated 350Â° oven for 8 minutes or until golden brown. Cool on wire rack.
Beat cream cheese & sugar in mixing bowl until smooth. Beat in flour & eggs 1 at a time. Blend in sour cream, Irish Cream & vanilla. Pour over crust. Bake at 350Â° for 10 minutes. Reduce oven temperature to 250Â°. Bake 40 minutes longer. Turn off oven. Let cheesecake stand in closed oven for 1 hour.
Loosen cheesecake from side of pan; do not remove pan. Chill overnight.
Bring cream to a simmer in heavy saucepan. Add semisweet chocolate. Heat over low heat until melted & smooth, stirring constantly. Cool to lukewarm.
Place cake on rack placed on baking sheet. Remove side of pan. Pour chocolate glaze over top; spread over top & side with spatula. Chill until set. Remove to serving plat. Top w/chocolate curls, if using.~~

I made these for work today and they are nice, soft and fudgy. It came from one of those little paperback Hershey's cook booklets.

Irish Mist Brownies

1/2 cup butter
2 (1 oz.) squares unsweetened baking chocolate
1 cup sugar
3/4 cup all purpose flour
2 eggs

Filling:

2 cups powdered sugar
1 (3 oz.) package cream cheese, softened
3 T butter, softened
1/2 tsp peppermint extract
5 drops green food color

Drizzle:

1 oz.) semi-sweet or bittersweet chocolate, melted

Heat oven to 350ÂºF. Melt 1/2 cup butter and 2 squares chocolate in 2 qt. saucepan over medium heat, stirring constantly, until smooth and melted completely. Stir in all remaining brownie ingredients until well mixed. Spread into greased 8 in. square baking pan.

Bake for 25 to 30 minutes or until brownie just begins to pull away from sides of pan. Cool completely.

Combine all filling ingredients except chocolate in small bowl. Beat at medium speed until creamy. Spread over cooled bars. Drizzle with melted chocolate. Cool completely; cut into bars. Cover; store refrigerated.

I just want to thank you, bbstx for that link to Beeramisou! I made it for my party and it was a hit. Completely delicious and fun to talk about. The Guinness stout really tasted like Kahlua on the ladyfingers, I thought...or maybe it was the combo with the Irish Cream. But it was very, very good and so easy. I also made Oreo Truffles on lollipop sticks, plus one batch of Thin Mint truffles. We couldn't get over how delicious they were - who knew? And cute as can be...I can't believe I forgot to take a picture.

Tea Brack recipe first, then how to make homemade buttermilk. -Grainlady TEA BRACK (source: Irresistible Irish Breads - magazine article by Deborah Krasner) Brack, an Irish word for bread, is often used when referring to fruited mixtures. Tea Brack is a traditional tea bread which is an easy version of barm brack. Makes 1 loaf. 2 c. dark seedless raisins or dried currants (I use currants) 1-1/2 c. firmly packed dark-brown sugar 1-1/2 c. strong brewed tea, chilled 1/4 c. rum (I use 1/8 c.) 2 c. unsifted all-purpose flour 1-1/2 t. baking powder 1/2 t. ground cinnamon 1/2 t. ground nutmeg 1/2 t. salt 1 large egg, at room temperature, lightly beaten 1. Several hours or the night before baking, in large glass bowl, combine raisins/currants, brown sugar, tea, and rum. Cover bowl with plastic wrap and let sit overnight. 2. Heat oven to 325°F. Grease an 8-1/2x4-1/2-inch loaf pan and line with waxed paper. Grease waxed paper. 3. In medium-size bowl, stir together flour, baking powder, cinnamon, nutmeg, and salt. Slowly beat flour mixture and the egg into raisin mixture just until combined to form a batter. 4. Pour batter into greased loaf pan. Bake brack 1-1/2-hours until browned and cake tester inserted in center comes out clean. Cool in pan on wire rack 5-minutes. Turn brack out of pan and remove waxed paper. Cool brack completely on wire rack. Grainlady note: I use two 7-1/2x3-1/2-inch loaf pans or three 5-3/4x3-3/4-inch loaf pans and reduce the baking time accordingly. This is a very moist bread - more currants than bread, almost. I like the smaller pans so I can cut the bread into thin slices that don't fall apart. If you make it in a regular loaf pan, the slices tend to split and fall apart. -------------------------- I use a large amount of buttermilk when it comes to baking on St. Patrick's Day, so I make a homemade version of it using information from "Natural Meals In Minutes" by Rita Bingham. I use a non-instant powdered milk, but regular commercial milk works VERY well. Homemade Buttermilk To a 1-quart canning jar add 1/2 c. buttermilk and fill the jar with regular milk OR reconstituted powdered milk. Note: You can use commercial buttermilk as the starter, or a reconstituted liquid made from powdered buttermilk, or buttermilk from a former batch of homemade buttermilk - your choice. Stir well and cover (I use a plastic lid designed to use with canning jars). Let stand in a warm place (at least 80°F) until clabbered, about 12-18-hours. Stir until smooth. Refrigerate. Grainlady note: I keep mine in my oven with the light on. The temperature at the opposite side of the oven from the light is about 80°F. You can use homemade buttermilk from a previous to culture the milk for the next batch. Just make sure you use it within 2-weeks. Older buttermilk doesn't work as well as newer buttermilk. If you've ever used reconstituted powdered buttermilk, it's rather insipid, thin, and tasteless compared to commercial buttermilk. The homemade buttermilk is more like commercial buttermilk.

Kath, I've never tried the beef pies, but I love the chicken. Did you like the beef? Jasdip, we haven't eaten yet, but colcannon sure is easy to make. Now that's dedication on both your parts for DH to shovel and you to hang out sheets in the snow!! Were they "crispy"? Chisue--:-) You know snake tastes just like chicken, don't you? Yep, I'm 1/4 Irish. My grandfather was a baby and his siblings very young (I think there were 9 of them) when they came to the states. Grew up hearing that brogue. Monica, isn't St. Patrick's day a big deal in PA or do I have the wrong day? Someplace there is a huge parade--I was thinking it was Philly.

Thank you! The cookies are really good, soft and dense, with a very mild taste, and not too sweet, since I decreased the sugar. Something I noticed about the cooked buttercream icing is that it can be made ahead, refrigerated, then softened in the MW. After it softens, it can be whipped again to a smooth consistency, and a little milk added to thin it for piping. I've also used lime juice to thin it. As I mentioned, I used some left-over icing that had been refrigerated for a few days. Once the softened icing was colored, thinned, and piped on, it eventually became firm (I put the tray in the fridge for a short time), but not crunchy or gritty like royal icing, nor cloyingly sweet like powdered sugar buttercream. I couldn't stack the cookies, but the piped icing held it's shape, and covering with plastic wrap did not affect the designs. After a couple of days, the icing has stayed very smooth textured, although the colors have intensified slightly--it kind of has the consistency of a firm gel--maybe because it's made with a pudding base. I would imagine a thin layer could be spread on the cooky, allowed to become firm, then designs could be piped on top. Freshly made, it's delicious, light, and creamy--I can eat it by the spoonful, and I've decided I'm never again making powdered sugar buttercream, or royal icing. ooh! i love the combo of chocolate and mint so i'd bet that annie's recipe would be a treat! someone gave us a bottle of bailey's a couple years ago and i asked for ways to use it. i tried the recipe that ginger posted and can tell you that the topping alone made it a dish worth making! and i also copied this one from weed (but we drank the bailey's before i got around to trying it out!):

BAILEY'S IRISH ICE CREAM PIE -- weed

1 1/2 c. chocolate wafer cookie crumbs
1/4 c. sugar
3 Tbl. melted butter
1/2 c. Bailey's Irish cream
1 qt. vanilla ice cream
1 jar hot fudge sauce
Combine cookie crumbs, sugar and butter and press into a 9 inch pie plate. Mix Bailey's into slightly softened ice cream. Spoon into the crust. Freeze. Serve with hot fudge sauce. For a crispier crust, bake for 5 minutes at 350. Let cool before filling.

but i'll bet there will be more desserts than appetizers so maybe the following would work for you--ruthanna posted it on the cooking forum and i thought it sounded like a great idea!

Just in time for St. Patrick's Day, I remembered spring rolls as served at Mader's in Milwaukee - filled with carmelized cabbage and onions, corned beef and swiss cheese.
