RECIPE: Looking for cucumber recipes

I have alot of cucumbers this year and would like some easy recipes.

I like this one a lot.

CUCUMBER SALAD

1 cucumber, halved, seeded and thinly sliced
Â½ cup thinly sliced onions
1/8 cup rice vinegar
2 cloves minced garlic
1 tablespoon mirin
1 tablespoon soy sauce
Â½ teaspoon wasabi
Chopped fresh dill
Salt and Pepper to taste

Toss all ingredients together. Served chilled.

I've never tried this one, but I found it a long time ago and thought that it looked good.

Title: CUCUMBER & FENNEL WITH ORANGE-MINT DRESSING

-----------------------------------SALAD-----------------------------------
1 Cucumber, peeled, halved,
-- seeded & diced
1 sm Fennel bulb, trimmed &
-- finely slivered
1 Granny Smith apple, cored,
-- quartered & sliced
2 ts Lemon juice
2 tb Walnuts, chopped & toasted

--------------------------------VINAIGRETTE--------------------------------
2 tb Orange juice
2 tb Walnut oil
1 tb Fresh mint
1 tb Cilantro, chopped
1/8 ts Paprika, sweet or hot
Salt & pepper
SALAD: Combine salad ingredients, except walnuts, in a serving bowl &
gently mix.

VINAIGRETTE: In a small bowl, whisk all ingredients until emulsified.
Season with salt & pepper & pour over salad. Serve immediately or
marinate, covered, in the fridge for 1 to 2 hours. Toss before serving &
garnish with toasted nuts.

I can't remember where I found this recipe but we love it.

Thai Cucumber Salad

3/4 cup distilled white vinegar
1/3 cup superfine sugar
1/2 tsp red pepper flakes
1/4 tsp Kosher salt
2-1/4 lbs English cucumbers washed & not peeled
1/4 cup chopped red onions
1/4 cup chopped salted roasted peanuts

In large bowl combine the vinegar, sugar, red pepper flakes and salt. Stir until the sugar is dissolved. Set aside.

Score the cucumbers with a fork and then cut them into 1/4" slices. Stack the slices and cut into quarters. Add the cucumbers and chopped red onions to the bowl of salad dressing and toss well. Cover and refrigerate for 1-4 hours, stirring occasionally.

Just before serving, add the chopped peanuts. Toss the salad once more and serve in small individual bowls.

Good with pork dishes. Can substitute rice vinegar which is a bit less sharp. Serves 10-12.

The following is a family recipe that we've used for years:

Cucumber Salad

1 lb cucumber or 1 English cucumber
1/2 cup white vinegar
1-1/4 cups water
1 cup sugar
Finely chopped parsley

Dissolve sugar in vinegar and water. Pour over thinly sliced cucumbers in Mason jar. Add parsley and refrigerate a couple of hours.

Ingredients 2 large eggs, Whole Foods 365 brand (.50 cents) 2 large egg whites, Whole Foods 365 brand (.50 cents) 1 3/4 cups flour Whole Foods All Purpose flour brand (.63 cents) 2 teasp baking powder, Rumford brand (.06 cents) 1/2 teasp salt, Morton’s brand (.02 cents) 3/4 cup butter, cut into small pieces, Whole Foods 365 brand (.63 cents) 1 1/3 cups white sugar, C&H brand (.40 cents) 1 1/2 teasp vanilla extract, McCormick brand (.69 cents) 3/4 cup full fat coconut milk, Whole Foods 365 brand (.80 cents) 3/4 cup raspberry jam, Whole Foods 365 brand ($1.00) 1/2 cup shredded sweetened coconut, Whole Foods 365 brand (.30 cents) For The Frosting Ingredients 2 cups powdered sugar, C&H brand (.84 cents) 2 tablesp butter, softened, Whole Foods 365 brand (.13 cents) 1/2 teasp vanilla extract, McCormick brand (.23 cents) 2-3 tablesp whole milk, Whole Foods 365 brand (.06 cents) 1 cup shredded sweetened coconut, Whole Foods 365 brand (.60 cents) Instructions Preheat oven to 350 degrees F. Butter and flour two �" 9 inch x 1 1/2 inch (23 x 3.75 cm) cake pans, and then line the bottoms with parchment paper (or spray with non stick spray). Sift or whisk together the flour, baking powder, and salt in a mixing bowl. Set aside. In bowl of electric mixer, or with a hand mixer, beat the butter and sugar until soft (about 1-2 minutes). Add the egg yolks, one at a time, beating well after each addition; add the egg whites and mix well. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined. With the mixer on low speed, alternately add the flour mixture and coconut milk, in three parts; in other words, add one third of the flour, mix gently by hand with a spatula just until it is mixed in, and then add half of the coconut milk, mixing until just combined. Add half of the remaining flour, mix by hand until just mixed in, and add the other half of the coconut milk, mixing until just combined. Add the other half of the remaining flour, mixing by hand until just mixed in. Always mix gently, and do not over mix. Divide the batter and pour into the prepared pans, smoothing the surface with an offset spatula or the back of a spoon. Bake for about 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean and the cake springs back when pressed lightly in center. Place the cakes on a wire rack to cool, in their pans, for about 10 minutes. Then invert the cakes onto a greased rack. To prevent splitting, re-invert cakes so that tops are right side up. Cool completely. Cut each cake in half. Place one cake layer on your serving plate and spread with about 1/3 of the raspberry jam and sprinkle with about 1 - 2 tablespoons of coconut, or enough to lightly cover the entire surface of the cake. Continue with the next layers, stacking and filling with the jam and coconut. Set aside when done. You will be making the frosting next. For The Frosting In a mixing bowl add the powdered sugar, butter and vanilla. Turn the mixer on medium low and slowly add the whole milk until you reach the consistency desired. Increase the speed to medium and continue to beat until fluffy.

Black Forest Cake in the Jel Ring Albums Black Forest Cake in the Jel Ring 6 Photos · Updated 7 years agoBlack Forest Cake in the jel ring Tupperware Recipe number 58/365 Date 21st June 2010 Ingredients 2 Packs Mini Chocolate Rollettes (or twinkies) 300ml Cream 1 can pitted black cherries 12 fresh cherries 1 packet cottees rasperry cold water jelly (or raspberry jello) Method Cut each rollette into 6 equal slices Whip cream in the Speedy Chef Pour Cherries into the Pick a Deli Round to drain the juice Line base and sides of jel ring with rollettes Cover rollettes with cream Take pitted cherries from Pick-a-Deli and place on cream. Repeat with cream and cherries until jel ring is full Place final layer of rolettes on top. Make up jelly in the microwave jug according to the directions on the packet Pour jelly over cake, allowing it to soak through Squeeze seal down on cake and seal, expressing the air. Place in fridge for 30 mins Remove from mould and top with more cream or chocolate ganache and fresh cherries Note: you can use normal jelly jest let it cool a little before pouring over the cake so the rollettes do not become too soft and you will need to set it for 2 hours.

Here are a few of my favorites. They may not be too challenging but they are delicious. We're having Monte's Ham for dinner this Sunday :) Kima (Indian Meat Dish) 1 cup chopped onion 1 clove garlic, minced 1 lb extra lean ground beef 1 or more Tablespoons curry powder 2 tsps salt tsp pepper 2 potatoes peeled & diced 2-3 tomatoes, diced Ground coriander Garlic powder 1 package frozen peas Saute onion in butter (I used 1 Tbsp). Add garlic and meat. Brown, then drain a bit (I didnÂt have much fat). Stir in curry powder, salt and pepper. Simmer. Then add tomatoes (I mash the tomatoes and meat at this point to get more juice and to make the ground meat fine). I saute the potatoes separate, then add to the mixture and let simmer about 15 minutes. I add some spaghetti sauce (marinara style) and water until I have a sauce because the tomatoes I buy donÂt make a lot of juice it seems. I taste for seasoning and add more curry powder plus some coriander and a bit of garlic powder. A few minutes before serving I add the peas and let simmer. If the Kima is too acidic, I add a bit of sugar. Serve with raita salad and naan (from Trader JoeÂs, baked 1-1/2 minutes in countertop oven). Can also serve with rice. Raita Salad (can halve this recipe for above Kima recipe) 2 (8 oz) containers plain yogurt 1 cucumber peeled, seeded and diced 4 or 5 radishes chopped Â¼ cup red onion diced Ground coriander Pinch of Kosher salt Blend all ingredients, cover with wrap and chill in refrigerator at least 1 hour. ***************************************************************************************** Chile & Tomato Saifun Noodle Salad Â½ pound saifun (rice stick) noodles Dressing: Â¼ cup rice vinegar 3 tablespoons sugar Zest and juice of 1 lime 2 tsps chile paste* 3 cloves garlic, chopped 2 tsps fish sauce Â¼ cup vegetable oil Soy sauce 2 ripe tomatoes, diced 1 small peeled cucumber, thinly sliced into rounds 2 tablespoons choped fresh mint 3 to 4 green onions, minced To prepare the noodles, soak them in a bowl of warm water for about 10-15 minutes to soften. Bring 5 cups of water to a boil in a medium saucepan, add the softened noodles, & cook until tender, about 1 minute. Drain the noodles & briefly rinse them under cold running water to stop the cooking process. Drain again and place in the refrigerator to chill. To prepare the dressing, mix together the vinegar, sugar, zest, juice, and chile paste in a medium bowl. Stir in the garlic and fish sauce. Slowly whisk in the oil until the dressing is emulsified & thickened. Season to taste with the soy sauce and set aside. To finish the salad, place the chilled noodles in a large bowl. Add the tomatoes, cucumbers, cilantro, mint and green onions and toss well. Pour the dressing over the salad and toss well to coat evenly. Refrigerate the salad for at least 30 minutes, then serve. *I use only 1 tsp of chile paste (sambal oulek)--this stuff is Hot! The author says you can add slices of pork tenderloin or bean sprouts. I added snow peas, bean sprouts and shrimp & sometimes have added more soy sauce. Source: CaprialÂs Bistro Style Cuisine **************************************************************************************** MonteÂs Ham 1 (15 lb) smoked ham, on the bone 1-1/2 cups orange marmalade 1 cup Dijon mustard 1-1/2 cups firmly packed brown sugar 1 rounded tablespoon whole cloves Heat oven to 300 degrees. Cut off the ham's tough outer skin and excess fat and discard. Put ham in a large roasting pan. With a long, sharp knife score it, making crosshatch incisions all over the ham about Â½" deep and 1 inch apart. Roast the ham on the lower middle level of the oven for two hours. Remove it from oven, increase heat to 350 degrees and make the glaze. For the glaze, stir together the orange marmalade, mustard and brown sugar in a medium-size bowl. Stud ham with cloves, inserting one at the intersection of each crosshatch. Brush entire surface of ham generously with glaze (reserving some glaze) and return ham to the oven. Cook ham 1-1/2 hours more, brushing with glaze at least 3 times. Transfer ham to a cutting board or platter & allow it to rest for about 30 minutes. Carve and serve warm or at room temp. Manly Meatballs I love the name of this recipe! I found it at The Food Maven website and it reminded me of something my mom used to make years ago (she spread ground round on firm white bread and put it in the broiler--I was crazy about these flat burgers). This was written by Arthur Schwartz: Alan Richman's Manly Meatballs Makes about 36 Alan Richman is the esteemed and always witty food writer for Gentleman's Quarterly magazine, but I take the blame for calling these his "manly" meatballs. He made them for a birthday party of our mutual friend Alexis Bespaloff, the well-known wine writer. As he was passing them on a platter, taking full responsibility for their simplicity and strong flavor, he explained that he made them because when he heard the menu planned by Alex's wife he felt there might be too much "sissy food" -- you know, pasta and salads. They are not, of course, anything like any recipe you've ever seen for Swedish meatballs, but to my mind they make an even better stand-in. Baking them on bread slices -- which, by the way, do not burn or get too hard, even though it seems as if they would -- makes them perfect finger food. 1 pound ground chuck (not leaner beef) 3 scallions, finely minced (use most of the green) 4 tablespoons dark soy sauce (or regular soy sauce, if that's all you have) 1 firmly packed teaspoon brown sugar (a rounded teaspoon, if using regular soy sauce) 1 baguette or ficelle (a small diameter French bread), about 20 inches long, sliced about 1/2-inch thick (if the bread has a large diameter, cut the slices in half, just a bit bigger than the meatballs) In a medium bowl, combine all the ingredients, except bread. With your hands, mix and knead thoroughly until the meat is a fine paste. Make balls the size of smallish walnuts. Place baguette slices on a baking sheet and place one meatball on each. How exciting, I wish had fresh cucumbers from my garden as well. Here is a great recipe that I thought I'd share, it uses Ranch dressing and fresh Mozzarella Cheese. If you have tomatoes from your garden it would make a great addition to the salad.

Mediterranean Panzanella Salad

Ingredients:
1/2 cup KRAFT Ranch Dressing
1/2 tsp. curry powder
6 oz. POLLY-O Fresh Mozzarella Cheese, drained, chopped
1 cup sliced peeled cucumbers
1/2 cup small pitted ripe olives
1/4 cup chopped red onions
3 medium radishes, sliced
1 bag (10 oz.) torn mixed salad greens
1 pita bread, toasted, cut into bite-size pieces

Directions:
MIX dressing and curry powder until well blended.
COMBINE cheese, cucumbers, olives, onions and radishes in large bowl. Add dressing mixture; mix lightly.
ADD greens and pita pieces just before serving; toss to coat.

I had collected these ideas from the Kitchen Table.

Cucumbers sliced thinly, seasoned with s&p, champagne or white wine vinegar, tarragon, and a pinch of sugar. Sometimes I add sour cream to the mix. lorijean44

Drizzle cucumbers with a little olive oil and balsamic vinegar and crumble some feta cheese over them. kframe19

Very thinly sliced cucumbers and onions with a dressing of cider vinegar, sugar, s & p and chopped fresh dill.
I also like to mix thinly sliced onions, tomatoes, green pepper, cucumbers and chopped basil with a dressing of olive oil, wine vinegar, granulated garlic, and s & p. ruthana

Peel and seed your cukes. Cut into good size pieces. Place in strainer with a sliced onion and salt liberally. Let drain hour or so. Toss cukes and onion with fresh dill and sour cream. Taste for salt and pepper.

My mother-in-law used to fry them up like fried green tomatoes. She sliced them lengthwise, dredged then in seasoned flour and then fried them in bacon drippings. I know that fried green tomatoes generally are dredged in cornmeal, so you could do them with it too.
