LOOKING for: want moist banana bread recipe

I had the most delicious banana bread on vacation. I made some last night but mine is way to dry? I tried increasing the shortening but that did not help.

Do you have a good recipe that is really moist?

SOUR CREAM BANANA BREAD (1 loaf)
1 stick butter, softened
1 cup sugar
2 eggs, beaten
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup mashed bananas (about 3 really ripe ones)
1/2 cup sour cream
1 tsp vanilla
1/2 cup chopped pecans, optional

Preheat oven to 350Â°. Grease & flour a 9" loaf pan or several smaller pans.
In a large bowl, cream the butter w/the sugar until light & fluffy. Add the eggs & mix well. Whisk together the flour, baking soda & salt; combine w/the butter mixture. Add the bananas, sour cream & vanilla; stir well. Fold in the nuts, if using. Pour into the prepared pan & bake 1 hour or until a toothpick inserted near the center of the loaf comes out clean. Cool in the pan for 10 minutes then turn out onto a rack.~~Celebrations on the Bayou (Reduce baking time if using several smaller pans.)

I don't think this is the one I posted before but I made it a month ago & really liked it. Maybe some others will post theirs. MOM'S BEST BANANA BREAD (2 loaves) 2 1/2 cups sugar 1/2 cup butter or margarine 1/2 cup shortening 3 eggs 1 1/2 cups mashed ripe banana (3 large) 1 tsp vanilla 3 cups flour 1 1/2 tsp baking soda 1 1/2 tsp baking powder 1 1/4 cups buttermilk (or 1 1/4 cups milk + 1 TBL vinegar) 1/2 cup chopped walnuts or pecans Preheat oven to 350Â°. Beat first 3 ingredients at medium speed with a mixer until creamy. Add eggs, 1 at a time, beating well after each addition. Add banana & vanilla., beating well. Combine flour, soda & baking powder; add to banana mixture alternately with buttermilk, beating well after each addition. Stir in nuts. Pour batter into 2 well-greased 9x5" loaf pans. I've tried a bunch of them, and can not find one that is not dry and heavy. I don't know what the secret is, maybe more eggs? The best ones seem to come from a box. I love yellow cake and my SIL wanted one for his last birthday. I made this one from Cooks Illustrated, and was, again, disappointed and I didn't have any eggs left. Fluffy Yellow Layer Cake Makes two 9-inch cake layers. Published March 1, 2008. From Cook's Illustrated. Nonstick cooking spray can be used for greasing the pans (proceed with flouring as directed). Bring all ingredients to room temperature before beginning. Frost the cake with our Foolproof Chocolate Frosting (see related recipe) or your favorite topping. Ingredients 2 1/2 cups cake flour , plus extra for dusting pans 1 1/4 teaspoons baking powder 1/4 teaspoon baking soda 3/4 teaspoon table salt 1 3/4 cups sugar (12 1/4 ounces) 10 tablespoons (1 1/4 sticks) unsalted butter , melted and cooled slightly 1 cup buttermilk , room temperature 3 tablespoons vegetable oil 2 teaspoons vanilla extract 6 large egg yolks , room temperature 3 large egg whites , room temperature Instructions Adjust oven rack to middle position and heat oven to 350 degrees. Grease two 9-inch-wide by 2-inch-high round cake pans and line bottoms with parchment paper. Grease paper rounds, dust pans with flour, and knock out excess. Whisk flour, baking powder, baking soda, salt, and 1 1/2 cups sugar together in large bowl. In 4-cup liquid measuring cup or medium bowl, whisk together melted butter, buttermilk, oil, vanilla, and yolks. In clean bowl of stand mixer fitted with whisk attachment, beat egg whites at medium-high speed until foamy, about 30 seconds. With machine running, gradually add remaining 1/4 cup sugar; continue to beat until stiff peaks just form, 30 to 60 seconds (whites should hold peak but mixture should appear moist). Transfer to bowl and set aside. Add flour mixture to now-empty mixing bowl fitted with whisk attachment. With mixer running at low speed, gradually pour in butter mixture and mix until almost incorporated (a few streaks of dry flour will remain), about 15 seconds. Stop mixer and scrape whisk and sides of bowl. Return mixer to medium-low speed and beat until smooth and fully incorporated, 10 to 15 seconds. Using rubber spatula, stir 1/3 of whites into batter to lighten, then add remaining whites and gently fold into batter until no white streaks remain. Divide batter evenly between prepared cake pans. Lightly tap pans against counter 2 or 3 times to dislodge any large air bubbles. Bake until cake layers begin to pull away from sides of pans and toothpick inserted into center comes out clean, 20 to 22 minutes. Cool cakes in pans on wire rack for 10 minutes. I would just use my regular recipe for bread pudding and put slices of banana and dark chocolate chips between the layers....and perhaps top it with a rum sauce. Ann T's recipe would work...and just add some rum extract ( stronger flavor than real rum) to the sauce. Linda C

It seems we all have fond memories of this bread. Here's a similar variation baked in cans but am sure 2 loaf pans 9" X 5" would work filled half full and baked till loaves starts to pull away from the sides of the pan. I want to try Gigi's idea of using coffee instead of water next time. I've made this recipe for over forty years. Very easy and delicious. Date Nut Bread Generously grease 6 cans, (14 to 15 ounce veggie size) Sprinkle 2 teaspoons baking soda over 1 pound of chopped dates. Pour 2 cups boiling water over dates and let cool. Cream 2 cups sugar with 1/2 cup butter Add 2 eggs 1 teaspoon vanilla 1/2 teaspoon salt Mix well Stir in 4 cups flour alternately with date mixture Do not over beat. Fold in 1 cup nuts, chopped coarsely or just halved. Fill 6 well greased cans half full. Bake at 325 degrees for about 1 hour. Cool in cans for 10 minutes then remove from cans till cool. Store in cans. I like it chilled, sliced and spread with cream cheese.

Mine is the same as the one Ginger posted and I also have my husband's grandmother's recipe that uses buttermilk. However, we like the sour cream one best.

I really like cooking with buttermilk. I will have to try both.

Just posted this on the Cooking Forum. It is very moist due to the oil and the pineapple.

Hawaiian Pineapple Banana Bread

3 cups flour
2 cups sugar
1 t. baking soda
1 t. cinnamon
3/4 t. salt
1 cup chopped pecans
3 eggs, beaten
1 cup vegetable oil
2 cups mashed bananas (about 5)
2 t. vanilla extract
1 8 oz. can crushed pineapple, drained

Preheat oven to 350 degrees F. Combine dry ingredients in a large bowl. Stir in nuts. Combine wet ingredients in another bowl. Mix wet ingredients into the bowl of the dry ingredients. Mix just until all is moistened. Put into two greased and floured regular (8.5") loaf pans.

Bake for 1 1/2 hours at 350 degrees. Cool in the pans for 10-15 minutes then turn out onto a rack and cool completely. Makes two loaves.

LATIN BANANA BREAD

Serves 8

Ingredients

1 cup sugar
1/2 cup butter
2 large eggs
2 large ripe bananas, mashed
1/4 cup Crema Mexicana
1/4 cup Crema Agria
2 cup flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp vanilla
1/2 cup chopped nuts (I like toasted unsalted cashews)
1/2 cup chopped dried mango

Directions

Cream butter with sugar, beat in eggs and mix until fluffy.

Sift flour with baking soda and salt. Stir in flour mixture.

Stir in mashed bananas, both Crema and vanilla.

Stir in nuts and mango pieces.

Spoon into greased and floured 9"x5" loaf pan or 2 small loaf pans. Let stand 10 minutes.

Bake at 350Â°F for 30 to 45 minutes.

If you can't find the Mexican cremas, sub sour cream for both. And for dried mangos, sub raisins or any chopped dried fruit.

Ginger the banana bread is fabulous! it is so very moist I love it. Next I am going to try the recipe using buttermilk instead. I bought the buttermilk today and now to wait for the overripe bananas!

Hi loralee,
I use Betty Crocker's buttermilk banana bread recipe I got off the internet. It's wonderful - always moist. And if the bananas are good to go but there's no buttermilk in the house, I just make some with milk and vinegar.

Ginger, your banana bread recipe looks fabulous. Would it be possible to turn these into muffins? Do you think they could withstand a several day trip in a care package to college? TIA!

I think they would as long as the baking time was adjusted.
