RECIPE: Cooking Light

I love making easy, light recipes for summer so we tried this one last night and it was a hit! The different textures are what really makes it, the crunchy cucumber and celery, the soft sweet honeydew and creamy yogurt and then the pow from the chili pepper!

4 hothouse cucumbers, peeled (I seeded them)and cut in medium dice

2 green onions, chopped

1/2 honeydew melon, peeled and cut into medium dice

1 serrano chili, chopped fine (I wanted pablano roasted but settled for just a small amount of chopped jalapeno or you could leave this out and it would still be great)

1 rib celery, chopped fine

1/2 cup rice wine vinegar (I used pear vinegar)

Leaves from 2 sprigs fresh mint, chopped

leaves from 1/2 bunch fresh cilantro, chopped

Extra-virgin olive oil

Salt

2 tablespoons low-fat yogurt (I used lime yogurt)

1 lemon (I used lime)

1 tablespoon chopped fresh flat-leaf parsley

Combine the cucumbers, green onions, melon, chile, celery, vinegar, herbs, a drizzle of olive oil and slat in a large bowl (the cucumbers will give off a lot of juice). Put in the refrigerator for at least 30 minutes to chill. In another bowl combine the yogurt, a 2 count of olive oil (I didn't use the olive oil) and a squeeze of lemon (I used lime), the parsley and refrigerate. To serve, spoon the soup into bowls and top with yogurt.

This one was also a hit. I served this with {{!gwi}} and it was a match made in heaven! So simple but so good. This recipe came from Epicurious.

Fresh Tomato Salad

Place in a bowl:

4 cups fresh, sweet tomatoes cut into bite size chunks

1/2 small Vidalia onion; large dice

1 sweet yellow bell pepper; large dice

Hand full of fresh basil leaves; torn or chopped

Combine and add:

1 clove minced garlic

3 tablespoons red wine vinegar

3 tablespoons extra light olive oil or canola oil

Salt and pepper to taste

Leave at room temperature for about 30 minutes, stir occasionally.

Serve topped with:

1/4 cup Kalamata olives cut in half

1 or 2 teaspoon of capers

Feta or Goat cheese (optional)
