LOOKING for: Tartar sauce recipe

I hope I am not double posting this..I am new here, today as a matter of fact. I would love to get a good tartar sauce recipe and look forward to joining the group. I would also like to know if there is a way to hit spell check before my posts go out as I am an awful speller!

Dear Gary... I read your request a few years ago, and was wondering if you ever found the original Stickney's BBQ sauce recipe? Stickney's was a staple in my family's life, all the way through the early 80's until they shut down San Jose's Stickney's on Steven's Creek...I always ordered the hot pork sammies and dipped the fries in that OMG sauce! lol..The Chicken Noodle Soup and mile high strawberry pies were off the charts too..The closest I've come to getting that original taste, is Heinz 57 BBQ sauce with honey...I miss my childhood haunts...Santa's Village & Frontier Village as well! Shirl were you looking for Alfredo sauce? If so here are two that I've tried and both are good. The first is a more traditional recipe I think and the second is an Olive Garden copy cat recipe that I like also. Home Cookin 4.9 Chapter: Recipes From Thibeault's Table Fettuccine All'Alfredo ====================== Source: Giuliano Hazan. 3 Tablespoons Butter 1 Cup Heavy Cream pinch of fresh ground nutmeg salt and fresh ground pepper 1/2 cup or more fresh grated Parmigiano-reggiano cheese Option: You can enrich the sauce further by adding an egg yolk to the cream mixture. . While pasta is cooking: Put the butter and cream in a skillet over medium high heat and boil, stirring often until the cream as reduced by about half. Add the fresh grated nutmeg, salt and pepper. Set aside. Drain pasta and add to the sauce in the skillet. Add the fresh grated parmesan cheese and toss the pasta until well coated. Serve with more cheese. Note: I am very generous with the black pepper in this dish. Fettuccine Alfredo 8 ounces Cream cheese 3/4 cup grated Parmesan cheese 1/2 cup Butter or margarine 1/2 cup Milk or cream or 1/4 cup of each 8 ounces cooked Fettuccine Combine cream cheese, Parmesan, butter and milk in a saucepan. Heat and stir until smooth and hot, do not boil. Serve over fettuccine or whatever pasta you like. Very good with some cooked shrimp and scallions tossed in.

Here's my avorite recipe, I've made it many times. Siam Restaurant's General Tso's Chicken 1/2 cup cornstarch 1/4 cup water 11/2teaspoons minced garlic 11/2 teaspoons minced gingerroot 3/4 cup sugar 1/2 cup soy sauce 1/4 cup cup white vinegar 1/4 cup sherry 11/2 cups hot chicken broth 1 teaspoon MSG(monosodium gluconate), optional 3 lbs. deboned dark chicken meat, cut into large chunks 1/4 cup soy sauce 1 teaspoon white pepper 1 egg About 1 cup cornstarch 1 cup vegetable oil, plus more for stir-frying 2 cups diced green onion 16 small dried hot peppers To make sauce, mix 1/2 cup cornstarch and the water together. Add garlic, ginger, sugar, 1/2 cup soy sauce, the vinegar and wine. Add chicken broth and MSG, if desired, and stir until sugar dissolves. Refrigerate until needed. In seperate bowl, mix chicken, 1/4 cup soy sauce and the white pepper. Stir in the egg. Add about 1 cup cornstarch, until chicken is coated evenly. Add 1 cup oil to seperate pieces. Divide chicken into small quantities and deep-fry @ 350 until crispy. Drain on paper towel. Place a small amout of oil in a wok and heat until wok is hot. Add green onions and peppers and stir-fry briefly. Stir sauce and add to wok. Place chicken in sauce and cook until sauce thickens, adding water or cornstarch as needed for the right consistency. Cindy.....don't sweat the spelling....I don't LOL!
I do tartar sauce pretty much by the seat of my pants....as, of course, I do most things.
I begin with real Mayonaise...and to a cup of it I add about a tsp or a bit more of grated onion...
Then I add another tsp of well drained sweet pickle relish and the juice of 1/2 a lemon...
That's good for the kids....but for adults, I add a rounded teaspoon of capers and 1/2 tsp of wshire.....and maybe some Tobasco or cayenne pepper.

Wish I had some fish for dinner.......

I never make the traditional tarter sauce but there are two sauces I use that really good. One is for fish, such as salmon and salmon patties and the other is for on the Pacific Rim Chicken Burgers.

For fish:

Cucumber Dill Sauce for Fish
(Great with salmon or trout filets.)

1 cucumber; unpeeled
1/2 cup sour cream or plain yogurt
1/2 cup mayonnaise
1 teaspoon dill (if fresh use 1 tablespoon)
1/2 teaspoon lemon juice
salt and pepper to taste

Cut cucumber in half and scoop out the seeds. Shred cucumber finely (or pulse in the food processor) and drain; combine with remaining ingredients. Chill to combine flavors. Serve with your favorite grilled or baked fish. Also good with salmon patties or crab cakes.

GINGER MAYONNAISE:

1/4 cup mayonnaise
1 teaspoon sweet pickle relish
1 teaspoon minced fresh ginger
1 teaspoon lime juice
1 garlic clove, minced
pinch of teaspoon salt

Combine and chill.

Here in Louisiana tartar sauce is usually quite simple---your favorite mayo with your favorite pickle relish(drained), finely minced onion and a little lemon juice. Some people added minced pimento stuffed olives also. No need to measure any thing. Just start with a little less mayo than the volume of tartar sauce desired and add the other ingridients until it " looks right" for you.
