What's for dinner Wednesday?

It's a bit early, but I'll be busy later on when the kids finally get here. SIL called this morning and said they were leaving south Florida around 11. I figure it's about a 4-5 hour drive plus they had to stop for lunch. We've been anxiously waiting all day--or rather, impatiently all day. DGD was sick when they got to DSD's mom's last night, but seemed okay this morning.

For dinner we're having Spanish rice in the crockpot and a salad. This is the gluten-free, dairy-free, sugar-free and garlic-free side of the family so meal planning can be a little difficult. I made this last year and they liked it so much they ate it cold for breakfast with Fritos scoops. :-)

I'll try to sneak back in later, but that's pretty iffy.

My favorite Mexican place: fresh soft beef taco, and one freshly prepared tamale, total $4.26

Hormel Pork Tenderloin in crock pot with a pork rub on it. Smells very good right now! I shall probably do fried potatoes and onions since there are leftover potatoes in the refrigerator...some sort of veggie.

I cooked some dried lima beans. Had a bowl of them, and a piece of meatloaf I'd made earlier this week. It's so cold, windy, wet, miserable here in my part of Ohio. But so far the snowfall today has been only a slight covering. Shirley (Ellen: Glad to see you start the thread today.)

Raven, I finally remembered to pick up some asparagus! I'll have it tomorrow with something. Ellendi, tonight I just cooked it in a very basic way. I like having cold leftovers to put on a salad, in my green sludgies, soups, etc. One cup quinoa, rinsed and drained twice. Use a mesh strainer. Add one and a half cups water or broth to the pot with the quinoa, bring to a boil with the lid on....then turn heat down to simmer for ten minutes or so. Let sit for five minutes with the lid on after the heat is off. I also add it raw to any rice or mixed grains that I'm cooking. I even add it when I'm making pea or lentil soup! Always rinse it....it has a bitter taste otherwise.

Pam, we generally eat around 5. Today was super easy, threw the ziti in the microwave! Laura, don't ever worry about posting meals, a number of us have breakfast for dinner and that kind of thing. Less-than exotic meals! LOL Sue, I thought your meal was so good, real comfort food. Then I read "tv dinner". Too funny. Raven, Can you ship me some of your leftovers??? Ribs and brussels sprouts. Oh yummy. Laura we like tuna casserole, I make a roux and put hot sauce in, and peas. Gotta have peas in mine. Pam we like grilled pork chops better than steak! Are your potatoes on the grill as well? Lately I've been cutting the potatoes in slices and grilling them that way.

Walnutcreek (so good to see you again!) and Shirley, sometimes microwaved dinners are just the thing! OF, I enjoy raking leaves and shovelling snow. Hubby had ice cream for dessert, but that doesn't interest me at this time of year. I'm glad to see you eating a sandwich of sorts, instead of your usual Coke, Deeby :-) I'm planning on having a stir-fry this week Rhizo. Thanks for the reminder. Angela, your post made me laugh! I had another day out with some of the kids again today. We had lunch at the Sirloin Stockade. It was all good that I had, chicken, fish, mashed potatoes, gravy, some fried taters with onions, broccoli salad, apple salad, cottage cheese, five cup salad and unsweetened iced tea to drink. Cheryl bought me a cream filled doughnut at the bakery and I may have that later for my supper. It was a good day and it is 81 right now.

I cooked barley and wild rice in chicken broth. Had salmon patties, and finally finished the last of the succotash.

Pasta primavera with rhubarb pie for dessert.
It warmed up pretty good today, 23C degrees right now.

Tomorrow is supposed to be 28C. Hot and humid. Yuck!

Leftover potato salad from the deli, what was left of the cuke/tomato/onion salad, and some canned pears. Now how's that for a balanced meal? lol

first day in the 80's (for may, lol) so made a cold pasta, egg, tuna salad...had some fresh diced tomato on top and shredded lettuce on the bottom...and just enough leftover for breakfast or lunch...

Gluten free, sugar free, dairy free, garlic free. WOW! That is really tough, lucky you that you could come up with a meal that covers all of those. Enjoy your visit with the family.Tonight was Ladies Night Out at the club so I went to that with a friend and then we stayed for a bite to eat. Just had an appetizer. It was suppose to be Oxtail stuffed ravioli but we all got a butternut squash ravioli by mistake. It was not that great. Nothing awful, but I would not order it again. We had a nice time just the same.

Old fashioned pot roast. At least I was hoping for that taste that once was in a pot roast years ago. You just can't get that mouth watering flavor and fall apart meat in the cuts that are available these days. So I guess what we had was 'new fashioned' pot roast complete with potatoes, onions, carrots and celery, made some mediocre gravy and added a tossed salad with pineapple.
