LOOKING for: Creamed Eggs

When I was little, my grandmother would make a dinner out of creamed eggs. My grandfather loved it and so that was good enough for me, and I loved them too.

I have never had them since then, and of course, never bothered to ask how to make them. I thought my grandparents would live longer than my parents just because I love them so much. And, as a kid, you never think to ask for a recipe!

She used hard boiled eggs I think. Or maybe poached?? The cream sauce was heavenly flavored, but I have no idea how or what it was. She served them on big thick slices of homemade bread that was toasted and dripping with butter. Not for the cardiac dieters, but I sure would like to have it again in my life.

I think there were bits of something in it.. onion? ham? Whatever it was, it was very tiny and the only chunks you could tell were the eggs. Sometimes she'd make them for breakfast, but not too often.

Maybe there was bacon fat in them to brown the flour?? Or ham drippings??

Anyone ever had them or know about them. They are not in any cookbooks I've looked at.

Maybe they are just a South Dakota Pioneer and Farmer's food! LOL
