RECIPE: Looking for do-ahead recipes for kids lunches

Hi

I'm looking for do-ahead recipes forlunches for this summer for the kids I babysit with an emphasis on healthy and quick. Or even just recipes your kids love and request time and again. I have one very picky eater who makes things difficult & i've about run out of fresh ideas. Thanks

Check out the recipes found at the web site link below. I think you'll find lots of possibilities. Although the recipes are geared for children to help make, they are also kid choices.

Kids' Quesadillas
Prep Time: 5 minutes Cook Time: 15 minutes
(source: Just For Kids (sponsored by Birds Eye, Hershey's, French's, Oreo, and Lawry's)

Prepare the quesadillas ahead of time, cover and chill, and cook just before serving.

8 slices American cheese
8 (10-inch) flour tortillas
1/2 pound thinly sliced deli turkey
optional: 6 T. Honey Mustard or mayo
2 T. melted butter
1/4 t. paprika

1. To prepare 1 quesadilla, arrange 2 slices of cheese on 1 tortilla. Top with 1/4 of the turkey. Spread with mustard or mayo (optional), then top with another tortilla. Prepare 3 more quesadillas with remaining ingredients.

2. Combine butter and paprika. Brush one side of tortilla with butter mixture. Preheat 12-inch nonstick skillet over medium-high heat. Arrange tortilla butter side down and cook 2 minutes. Brush tortilla with butter mixture and turn over. Cook 1-1/2 minutes or until golden brown. Repeat with remaining three quesadillas. Slice into wedges before serving. Makes 4 servings.

(Fun note: If you have some small cookie cutters in fun shapes, cut a shape from the piece of cheese to add to the top of the quesadilla, on the second side, just before serving.)

Like miniature pizzas, these barbecue cups are a definite kid's favorite. Made with refrigerator biscuits and bottled barbecue sauce, they're also easy to make!

Ingredients:

1 lb ground beef, browned and drained

1/2 c. barbecue sauce [I use Kraft regular]

1 T. minced onion, optional

1 T. brown sugar

1 can refrigerator biscuits

3/4 c. grated Cheddar cheese

Directions:

Add barbecue sauce, onions and brown sugar to the browned and drained ground beef.

Press biscuits into greased muffin pan to form cups. Spoon beef mixture into the cups and top with grated cheese.

Bake at 400 degrees for 10-12 minutes.

Young and old alike enjoy these BBQ Cups! The kids could pat out the biscuits, grate the cheese, fill the cups, and with help at the stove, make the filling. Barbecue Cups 3/4 pound lean ground beef 1/2 cup barbeque sauce 1 tablespoon dried minced onion 1 (12 ounce) package refrigerated biscuit dough 1/3 cup shredded Cheddar cheese 1.Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan. 2.In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat. 3.Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup. 4.Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes. These freeze well, if they last that long. I found this one today. OVERNIGHT APPLE BUTTER mixture of apple varieties, rather than just one type, will produce apple butter with rich, complex flavor in this slow cooker recipe. Good choices include Esopus Spitzenburg, Granny Smith, Jonathan, Northern Spy, Rome, Stayman, Winesap, and York. Enjoy the apple butter over toast or English muffins, or serve it with pork chops or chicken. Yield 4 cups (serving size: 1/4 cup) Ingredients 1 cup packed brown sugar 1/2 cup honey 1/4 cup apple cider 1 tablespoon ground cinnamon 1/4 teaspoon ground cloves 1/8 teaspoon ground mace 10 medium apples, peeled, cored, and cut into large chunks (about 2 1/2 pounds) Preparation Combine all ingredients in a 5-quart electric slow cooker. Cover and cook on low 10 hours or until apples are very tender. Place a large fine-mesh sieve over a bowl; spoon one-third of apple mixture into sieve. Press mixture through sieve using the back of a spoon or ladle. Discard pulp. Repeat procedure with remaining apple mixture. Return apple mixture to slow cooker. Cook, uncovered, on high 1 1/2 hours or until mixture is thick, stirring occasionally. Spoon into a bowl; cover and chill up to a week. Stovetop variation: Combine all ingredients in a Dutch oven. Cover and cook over medium-low heat 1 hour or until apples are very tender, stirring occasionally. Strain through a sieve as recipe instructs in Step 2. Return mixture to pan. I have found tons of great recipies on "vegweb". There are some really great dessert recipies that fit in your criteria. This is one recipie I use for all our birthday parties. Just adjust the time alittle for cup cakes. Chocolate Cake 1 1/2 c flour 1/3 c cocoa powder 1 tsp baking soda 1/2 tsp salt 1 c sugar 1/2 c vegetable oil 1 c cold water (or ice coffee) 2 tsp vanilla extract 2 tsp vinegar Directions: Preheat oven 375. Use small brownie size pan (no greasing required). Mix all dry ingredients right in pan. Mix all wet ingredients in separate bowl EXCEPT VINEGAR (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add vinegar quickly and stir in--immediately put in oven and bake for 25 to 30 min. Chocolate Frosting 1 c sugar 6 tbl corn starch 4 tbl cocoa 1/2 tsp salt 2 tbl oil 1 c water 1/2 tsp vanilla Directions: Mix sugar, cornstarch, salt, and cocoa in a medium sauce pan. Whisk in the water. Heat over medium until it gets thick and starts to boil. Boil for 1-2 minutes. (Make sure you don't boil too long, or it will set like taffy.) Remove from heat and stir in oil and vanilla. Cool and spread on cooled cake.
