LOOKING for: vegetarian mofongo

We just returned from a trip to Puerto Rico. I would love to make the plantain side dish, mofongo, but most recipes call for pork, which we do not eat. The essential ingredients are green plantains (not the sweet ripe ones) and garlic. Do you think that simply omitting the pork (as some recipes suggest) would be good? Or should I use chicken fat/cracklings instead?
