Diabetes /recipes or good store snacks??

I am in charge of putting together an end of the year gift basket for our principal and want to include some snack type goodies..he is diabetic..does anyone have any suggestions of some tasty snacks I could include..any recommendations on the sugar free candies that are any good? (he likes sweets!) any quick and easy recipes for something tasty?

Some people do stick to a strick diet, others don't. My DH eats regular candy because he feels all the stuff they put in dietatic stuff is worst. As long as he watches the amount and the carbs and calories he is fine.
Is your principle married? Could you talk to the spouse? Check for splenda snacks, low calorie, low carbs etc. Does your medical center have a dietition on staff? Are you near a big hospital where you could talk to the person in the cafe? Just common sense, some snacks, maybe some postage stamps, hobbies? small scrapbook of his teaching career. Good luck

Unsalted almonds are great for diabetics. They do lower cholesterol which is a benefit for diabetics as their hearts can be compromised.

OH I made this and it's so good words can't even do it justice!! You gotta make it. I did not make the full recipe; just made one box of spinach and added what I thought to be enough of all the rest of the ingredients; here's the recipe: SPINACH GRATIN 50 ounces frozen, chopped spinach, thawed 4 tablespoons butter 2 small onions, chopped, 5 ounces 8 ounces cream cheese, softened 3/4 cup heavy cream 2 ounces freshly grated parmesan cheese, 1/2 cup 1/4 teaspoon pepper 1/2 teaspoon garlic powder Pinch nutmeg 1 teaspoon salt 1 teaspoon Spicy Seasoning Salt 1/2 teaspoon pepper 2 ounces Swiss cheese, shredded, 1/2 cup 2 ounces freshly grated parmesan cheese, 1/2 cup In a medium skillet, sauté the onion in the butter 15 minutes. Blend in the cream cheese on medium-low heat. Gradually blend in the cream until smooth. Stir in 1/2 cup parmesan, 1/4 teaspoon pepper, the garlic powder and nutmeg. Squeeze all of the liquid from the spinach and place in a greased 11x7" baking pan. Pour in the sauce mixture and mix well (I found that using 2 forks to do the mixing worked well). Mix in the salt, seasoning salt and 1/2 teaspoon pepper. Spread evenly in the pan, then top with the Swiss cheese and remaining 1/2 cup parmesan. Bake at 425º 20-30 minutes until hot and bubbly. I'm a type 1 diabetic and I would highly recommend an insulin pump if that is an option insurance wise. This will also make her life easier as she enters the age of hormones where she may have different insulin needs on different times of the month and allow more freedom during the teenage years when rebellion on the strictness of a regular regime often happens. It will also allow to be very precise in the amounts she takes and she can have a little of whatever she'd like as long as she can count the carbs, which she would be close to be able to handle age wise. It is the closest I've come to living a fairly normal life as far as not being on a schedule which just wasn't working for me and also having freedom in eating options. How does she react to carbs? Ie how much does her bloodsugar rise per 1 gram of average glycemic carb? As for snacks - lower sugar high fiber fruits such as granny smith apples of smaller size work pretty well for me without having to add insulin if I'm on the lower side, however I do have a pump so I do usually add some (Processed sugar free foods work too, but I really don't like them myself, but a 9 year old might if mom doesn't mind the processed part. A handful of popcorn would work too, buying the air-popped stuff or air-pop yourself to avoid things to affect cholesterol. The problem with popcorn for me is I like to have more than a handful so do need insulin when I eat it, but not as much due to the lower glycemic index. Look at the lower glycemic index foods and test and see what works for you. You might want to try adding salsa, or other low carb things for dipping veggies in for making them different too. Do a mix of things, but include smaller amounts of higher carb foods. I create a trailmix with nuts, popcorn, and a toasted higher fiber cereal similar to a home made chex thing, but have it heavier on the nuts to reduce the carb content.

I don't make my own hummus, we have a grocer here (Wegman's) that makes great hummus so I buy theirs. I know Sabre makes a huge variety, but I don't think it would be hard to make your own, if you can get all the ingredients. Then you can add seasonings that you and your husband like. I like the avocado hummus and the spinach and artichoke hummus on my sandwich. Try some middle eastern or kosher markets, they should have some good stuff, too. They might have a good selection of low fat/low salt foods too, since heart disease and high blood pressure afflict all of us! I found some great low fat/low sodium hot dogs at the kosher grocer here in Baltimore. Good luck

Don't forget salty snacks like popcorn, nachos, pickles... As for sweets, I'm just as "bad" as anyone else who doesn't have diabetes. In fact, having diabetes seems to make me crave sweets more than I ever did before (I was diagnosed with type 1 at age 23, not overweight)! Soon after I was diagnosed with diabetes, I remember reading that once-in-a-blue-moon, for a very special occasion, I could have a SMALL slice of birthday/wedding cake IF I was careful to scrape all the icing off!!! Forget that! Instead of following a "diabetic" diet, I just try to eat healthy. I prefer a good cheesecake-bite or brownie to any special diabetic snack. The trick is just not to eat too much. But I feel better, more satisfied, with a truly sinful delicious cookie than with a funny-tasting larger snack. Besides, I simply rearrange my carb-intake for the day (all carbs turn to sugar eventually) or even adjust my insulin-dose, or take a longer walk to make up for the extra carb. But, as for your quest, Jell-o is good, sometimes. Yogurt with all-fruit jam (or granola) stirred in, cheese & crackers, veges w/ranch dressing, PB on graham cracker, beef jerkey... Protein helps stabilize blood sugars. Remember that Fruit, though healthier than processed sugar, is still Sugar! Good luck in compiling more ideas - I'd like to hear them as well. : ) Holly

"Sugar free" does not mean that a product is "carbohydrate free" and often times does very little less 'damage' to a diabetics diet than eating the regular stuff. Many that watch their sugar/carb intake would rather eat a little less of something that tastes like it should. That being said:

You should be able to find individually wrapped sugar free hard candies that are pretty good. Look in grocery stores that carry hard candies in bulk...not prepackaged, although I am sure some of it is good. .
Check the website below for Miss Meringue Cookies. You can get the nutrition info on both SF and with sugar. When we can get them, my DH loves the regular meringues with sugar. Just 3 or 4 of these little gems at about 2 carbs per can satisfy the biggest sweet tooth. The sugar free ones arent as good, but still ok. When we were in Florida last year, we bought 6 tubs of them at Publix to bring back home. No stores around here carry them.

Thank you all for the suggestions and comments. They have been very helpful...will have to get to Publix and check those cookies...and nuts should be pretty easy to find also. Thanks again! This will make it easier!
