LOOKING for: Lost my Irish Soda Bread recipe help!!!

Anyone have a T&T mine was made W/ buttermilk raisins no seed and ended up with the inside kinda like a cake like consistency! HELP!

Try this one & omit the caraway. I omit the raisins.

HOBART'S IRISH SODA BREAD
4 cups flour
1/4 cup sugar
1 TBL baking powder
1 tsp baking soda
1 tsp salt
1/3 cup butter
2 cups dark raisins
1 TBL caraway seeds
1 egg, beaten
1 1/2 to 1 3/4 cups buttermilk

In a large bowl, combine the flour, sugar, baking powder, baking soda & salt. Cut in the butter until the mixture has teh consistency of coarse cornmeal. Stir in the raisins & caraway seeds. Gradualy add teh egg & 1 1/2 cups of the buttermilk, stirring to b lend. The batter should not be dry so you might need to add about 1/4 cup more buttermilk. Knead briefly & put into 2 greased 8" round cake pans. Cut a bold cross on top of each & bake in a preheated 375Â° oven for 30-40 minutes, or until a toothpick inserted in the center comes out clean.~~Rumsey Rare Bites

"Lightness" comes from some baking science. Quick breads made by creaming fat and sugar are more tender and cakelike. Creaming adds air, which ultimately creates a lighter texture. Choosing a solid fat (butter, shortening) will also lighten the loaf, while liquid fat (vegetable oil) tend to be heavier, but with a moister crumb. Liquid fat doesn't "cream" like solid fat. This is called the traditional mixing method where all the steps are geared to minimizing mixing and gluten development - cream fat, add liquid ingredients, add liquid mixture into dry ingredients, being careful not to over-mix. Your recipe is dump and mix - and with a mixer, no less, which equals heavy/dense. So choose a recipe that calls for creaming the fat to aid in lightening the texture. After choosing a recipe that includes creaming the fat, I get a "lighter" texture using part freshly-milled soft white wheat flour or spelt flour - about 50/50 - with all-purpose flour. Less gluten in these flours - trick #2. Quick breads are all about gluten development, or I should say, less gluten development. If you are mixing your banana bread with an electric hand-held or stand mixer, then you may be developing too much gluten. Trick #3 - try mixing the wet ingredients into the dry ingredients - by hand - using a Danish Dough Whisk (see link below), or a dinner fork. Only mix ingredients together until they are blended, and no more than that. That should also help maintain some "lightness". You could also switch to banana cake. This might work for you. They're too heavy for me. PUMPKIN MUFFINS (makes 12) 1 cup flour 1 cup whole wheat flour 2 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1 tsp allspice 1/4 tsp ground cloves 1/2 tsp salt 1/2 cup firmly packed brown sugar 2 eggs 1/4 cup butter, melted & cooled 1 cup canned or fresh mashed pumpkin 1/2 cup buttermilk 1/2 cup broken walnuts 1/2 cup raisins or chopped dates (I omit) In a medium bowl, combine both flours, baking powder, baking soda, cinnamon, allspice, cloves & salt. In a large bowl, beat together the brown sugar, eggs & butter until light & frothy. Blend in the pumpkin & buttermilk. Add the dry ingredients & stir just until moistened. Fold in the nuts & raisins or dates but don't overmix. Spoon into greased muffin cups & bake in a preheated 400Â° oven for 15-20 minutes or until lightly brown.~~Rumsey Rare Bites

Just got the spam...from Sweden. The names were "Lotta" (wife) and "Lars" (husband/researcher). Hmmm...sounds like "lotta liars" to me! Anyway, I am not overweight at all, but do live healthy. The last 13 weeks I was on the "Body for Life" program by EAS...consisting of Myoplex shakes (protein), healthy meals (6 small meals a day), 100+ oz. water a day and exercise. Surprisingly, I lost 10lbs! (went from 112 lbs to 102) I really didn't think I could/needed to lose any weight, but I did. Some people think the 2-3 shakes I had a day was weird, but it provided my body with the nutrients and protein it needed to build/maintain muscle and keep my body from eating the muscle it was trying to build. Before I started this program, I would come in to work and not even eat until 1pm. Some people think that skipping meals will help lose weight...it might not add any extra fat or sugar to your diet, but not eating anything is often worse than eating. Your body will eat away at your muscle and your metabolism will go into starvation mode and hold onto all fat you put into it...thinking it might need it to survive later on. Because of that, I would NOT recommend only eating 3 bananas a day (see some peoples emails above), or 3 of only one anything a day. Perhaps this bread does offer the nutrients your body needs to maintain itself, which is much better than starving it. It would be a great thing to have in the morning rather than skipping breakfast. But I would not make up a diet solely of bread. Also, the person who said "Wheat is very bad for somebody trying to lose weight...even ONE cracker made with wheat can stop weight loss in its tracks" is RIDICULOUS! Maybe if you are sitting on your butt hoping that not eating a few things will be the miracle to help you lose 10 lbs...but in reality, wheat bread, crackers, ect. have more protein, fiber, and nutrients than those without. Your muscles crave protein and nutrients and once you activate and build muscle, you will burn a TON more fat/calories than by just altering your diet a bit. I'm not saying become a musclehead (I am not one at all), I am just saying that wheat is very healthy AND will help you burn fat...lose weight. It's kinda like those people who think if you drink 120 oz. of water in a day you will be retaining a lot of water, but in actuality, if you try this, you will feel much thinner at then end of the day...your shoes won't feel so tight and your wedding ring might even spin around your finger. Try it sometime...ps, the more you do it the less you have to run to the bathroom, your body gets use to it. And finally, why would you think the only recipe that makes sense is the flour, salt & water only one. 2,000 years isn't THAT long ago. Remember the Bible stories and the last supper picture (no, I am NOT a Bible thumper, just making an observation). They had bread back then...and it isn't suprising that they learned to add nuts, dates, raisins, or spices to bread. ...

I know this is a little late to respond, but I make Rotis all the time. I try to limit the amount of wheat I eat, and using flat breads makes that simpler. I always use whole wheat flour, I find King Arthur the best, because it is finely milled and it makes for a smoother dough. Rule of thumb 1/2 as much liquid as flour. So if I am using 1 cup of flour, I use 1/2 cup water (I often use a tablespoon of whey or even yogurt or kefir - adds a little more flavor to the roti) and salt usually between 1/2 & 1 tsp. The dough is always going to be a little different. If the dough is sticky, I add a little more flour, just enough to make sure it is not sticky. I roll it in a ball and coat it in olive oil then let it rest for at least 15 minutes but usually overnight. (Soaking the dough helps remove the phytic acid, making the nutrients more available. This also makes for a more flavorful roti, as it will sour a little.) I knead the dough briefly to mix in the oil, then roll into little balls, which I flatten and roll in flour until I roll them into disks about 6". The trick with rotis is to make sure your pan is in the right heat zone. Too cool, and the roti will just sit on the pan without puffing, too hot and the roti will burn. I normally use a medium hot...it will be different on every stove. Often my first roti wont puff. If it doesn't puff a little, it will be too dense and a little unpleasant to eat. I just remove it and raise the temp before adding the next roti. Once I have the right temp and the rotis puff before burning, I add the original roti back on. Usually within a few seconds it will puff. I use a spatula to press down on the areas that don't puff, to encourage them to puff. ( I only press down on the cooked side, so not until I have flipped the roti at least 1 time.) I think I generally get about a dozen rotis per cup of flour. I don't usually try seasoning them with anything until they are cooked, because I use them for everything. I have slathered with peanut butter, and sprinkled choco chips and covered with a second roti, back on the grill. I make grilled sandwiches with them, eat scrambled eggs in them, use them for tacos/burritos, heat them, and coat them with cinnamon and sugar, they make great quesadillas, and I even throw them back on the griddle on low heat/or in the oven until they get crispy, and use them for crackers.

I'd leave out the raisins but leave in the caraway........I really like their flavor.

Traditional Irish soda bread is just flour, sour milk or butter milk, salt, sugar and bicarbonate of soda...some people add raisins for fancy or tea bread.

The recipe I use is 3 1/2 cups flour..my grandmother used cake flour...I prefer 1/2 cake flour and 1/2 all purpose.
1 tsp sugar
1 tsp salt
1 tsp baking soda
8 to 10 oz butter milk

Mix the dry ingredients ( it's important to get the baking soda well mixed with the flour)
add the butter milk...stir quickly, dump onto a lightly floured board...knead for no more than 30 seconds...shape into a rough round on a baking sheet...or a peel so you can slide it onto your stone, cut the traditional cross into the top and bake at 450 for 10 minutes, turn oven to 400, or 375 if bread is browning fast and bake for another 30 minutes.
If you are using raisins, mix them with the flour before adding the buttermilk...and if you use raisins you will need 10 oz of buttermilk, because the raisins will absorb some.
I think I have enough buttermilk...and we are having an ice storm...maybe I NEED soms soda bread....with raisins!

Funny, some of the Irish soda bread we had in Ireland had caraway seeds in it.......guess it is like goulash.....every family has a different recipe.

This is the one I make for my Irish DIL when she's feeling a little homesick. She says it takes her right back home!

Soda Bread
3 cups wholemeal flour
1 cup plain white flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
60g butter or lard
500ml buttermilk, sour milk or milk

Preheat oven to 200Â°C. Grease and lightly flour a baking tray. Combine dry ingredients, rub in butter. Make a well in the centre and gradually add enough milk to make a soft mixture which is not too wet. Mix until the dough is spongy. Flour your hands and knead the dough lightly on a floured surface. Shape into an oval loaf about 5cm thick. Place on baking tray. Brush with a little milk and slash the top in 2-3 places with a sharp knife. Bake for 50 minutes. If a smaller loaf is required, divide the mixture into two equal portions and bake for 20 minutes. Best eaten while still warm, but it will keep for several days.

Here's a bread recipe I found that uses baking soda AND baking powder. Haven't made it yet so don't know what it is like, but the reviews for it sounded OK. I got it from epicurious.com, searching under bread. (BTW, most Irish soda breads use baking soda instead of yeast.)
If you want a regular-shaped loaf of bread, bake it in a loaf pan. There would probably be a slight change in the baking time so keep a close eye on it.

IRISH SODA BREAD - A perennial favorite on both sides of the Atlantic, this raisiny bread makes fine, fragrant toast.

4 cups bread flour
1 tablespoon double-acting baking powder
1 teaspoon salt
3/4 teaspoon baking soda
1 cup raisins or dried currants, rinsed in hot water and patted dry
1 tablespoon caraway seeds
2 cups buttermilk

Into a large bowl sift together the flour, the baking powder, the salt, and the baking soda and stir in the raisins and the caraway seeds.
Add the buttermilk and stir the mixture until it forms a dough.
Turn the dough out onto a well-floured surface and knead it for 1 minute.
Halve the dough, with floured hands shape each half into a round loaf, and transfer the loaves to a lightly greased baking sheet. Cut an X 1/4 inch deep across the tops of the loaves with a sharp knife.
Bake the loaves in the middle of a preheated 350Â°F. oven for 45 to 55 minutes, or until a tester comes out clean.
Transfer the loaves to racks and let them cool.

Makes 2 loaves.

I found mine finally...it was my Grandma Kelly's thank goodness...Today my daughter danced in her first Irsih step dancing compitition...Im so Irish Proud of her!!!!
