RECIPE: Warm Romaine/potato salad

This has always been a but haven't made it lately because of the bacon. Tonight I tried lightening it up and it still taste pretty good.

Warm potato/Romaine Salad

4 slices of thick cut bacon

1 head of hearts of romaine--torn into bite size pieces

1/2 red onion , sliced

10-12 very small potaotes, scrubbed but not peeled

3/4 c.sugar

1 tsp salt

1 tsp. dry mustard powder

1 tsp. celery seed

1 c vinegar

2/3 c. melted bacon grease/salad oil

Crisp fry bacon--save grease for dressing-crumble slices & set aside.

Boil potatoes until fork tender, drain and toss with onion & romaine.

Mix sugar, salt, mustard powder, celery seed and vinegar-bring to a boil( carefully , will foam! )-remove from heat & stir in oil/bacon grease. Reheat to almost boiling and pour immediately over romaine , potatoes & onion slices-toss-garnish with crumbled bacon and serve immediately.

( also good with cooked green beans added )

I used cannola oil & for garnish the "soy" bacon bits.
