RECIPE: Nice For A Crowd

Here's another from my clippings file. This goes well at any gathering where finger food is on the menu:

WONTON CUPS WITH SOUTHWESTERN SALAD

Wonton wrappers

2 cups frozen corn, thawed

4 cups cooked black beans

2 cups thick salsa

6 scallions, sliced thin

sour cream

1 red bell pepper, diced

Sliced avocados

Preheat oven to 350. In muffin tin press a wonton wrapper in each cup, fluting edges so they fit well and look nice. Bake 5-6 minutes until lightly browned and crisp. Remove from oven. Cool completely.

In a bowl stir together the corn, beans, bell pepper, salsa and scallions.

To assemble: Heap salad in wonton cups. Garnish with a dollop of sour cream. Arrange avocado slices around cups.

Notes: That won ton in the muffin tin thing is a great trick. I usually make the whole package at one time. The cups keep well for at least a week in a zipper bag. Then you can vary the fillings to your hearts content.

Instead of decorating with avocado slices you can make an avocado cream and use that to dot the cups. Or do both, for that matter.
