RECIPE: Nasi Goreng - Indonesian Fried Rice
This fried rice is often served for breakfast in Indonesian countries. I remember it from my trip to Malaysia several years ago. You can vary the heat to your personal taste.
Nasi Goreng
Indonesian Fried Rice
Serves 2-4
2 tablespoons vegetable oil
1 medium onion, sliced
1 clove garlic, crushed
2 red chilies, chopped or 1 teaspoon red pepper flakes or garlic-chile paste
1 tablespoon dark soy sauce
1/2 teaspoon brown sugar
1 pound cold cooked rice
dash of dark sesame oil
Heat the oil in a heavy pan or wok, add the onion garlic and chilies and stir fry fry for one minute, taking care not to burn the garlic. Add the rice, soy sauce and brown sugar. Mix and cook, stirring continuously for 5-6 minutes, adding more oil if the rice sticks too much. Just before serving, add the sesame oil to the pan and mix well. Garnish with egg strips or 1 fried egg per person.
To this base you can add (before adding rice):
chopped ham
cooked chicken, cubed
cooked shrimps
green peas
beef
pork
mushrooms
Garnish with
cucumber slices
roasted peanuts
egg strips or fried egg
tomato wedges
green onions
Serve the rice with soy sauce and chile paste on the side, so everyone can season their rice to taste.

Note: I stir-fried small cubes of uncooked chicken breast with the onion and garlic, then added the seasonings and peas before adding the rice. White rice is usual, but I used brown for more nutrition.
