RECIPE: Soon As We All Cook Sweet Potatoes

Here's yet another out of my bulging to-try folders:

Spiced Sweet Potatoes with Apples and Raisins

1/2 cup raisins

1 tbls Grand Marnier

1 lb (about 3) sweet potatoes, peeled and cut crosswise into 1/3 inch slices.

1 Granny Smith apple

1/2 stick unsalted butter

1/4 tsp cinnamon

1/4 cup fresh orange juice

In a small bowl let the raisins soak in 1/4 cup water combined with the Grand Marnier for 20 minutes. In a steamer set over simmering water ste3am the sweet potatoes, covered, for 15-20 minutes, or until they are just tender. In a large skillet cook the apple, cored, quartered, and cut into 1/4-inch slices, in 2 tablespoons of the butter over moderate heat, stirring, for 2 minutes. Stir in the cinnamon and the orange uuice and cookk the apple, covered, for 5 minutes more. Stir in the sweet potatoes, the raisin mixture, and salt to taste, simmer the mixutre, uncovered, for 3 minutes, and swirl in the remaining 2 tablespoons butter. Serves 4-6.

My notes: The apple actually cooks down, and should be peeled first. Other than that, a great side-dish.
