Opinions needed on a sweet potato recipe please

I've never cooked sweet potatoes, but want to include a dish on TD. My friend gave me this recipe. I want to make it in a cast iron skillet and finish it in the oven to make it crispy on the bottom. Does this recipe look okay?

Delicious Sweet Potatoes

6-7 sweet potatoes

Â½ stick butter

1/3-1/2 c. maple syrup

Â½ c. brown sugar

Â¼ c. Grand Marnier or your favorite cordial

Peel and cut the sweet potatoes in round pieces about Â¾ of an inch thick. Place in a bowl, cover lightly and microwave 5-10 minutes. Potatoes should be slightly soft but not mushy.

Melt the butter, brown sugar and maple syrup in a skillet. Add potatoes. Cover and cook until potatoes are soft (approx. 30-40 minutes). Add Grand Marnier and cook 5 more minutes.

I don't know if it would actually crisp on the bottom, but the ingredients sure sound good.

Bill, I think the easiest way is to peel your sweet potatoes and boil them until they are just about soft. Put them in an oven pan, sprinkle brown sugar on top and bake them some more. When they are about done, put marshmallows on top and let them melt. That's it.

Here are two that I have used: Lime Cilantro Sweet Potatoes (From Garden Web Forum) 2 lbs sweet potatoes, peeled and cut into 3/4" pieces 3 Tbsp EVOO 3/4 tsp salt 1/4 tsp cayenne pepper 1/2 tsp fresh grated lime zest (I added more) 1 Tbsp fresh lime juice (I added more) 1/4 cup chopped fresh cilantro (I used a bit less) Put oven rack in lower third of oven and preheat to 425 Toss sweet potatoes with 2 Tbsp of oil and 1/4 tsp of salt in a shallow baking dish. Arrange potatoes in 1 layer and roast, stirring halfway though roasting, until tender - about 25 minutes. Stirr together cayenne, zest and remaining salt in small bowl. Whisk together lime juice and remaining Tbsp of oil then add to potatoes. Sprinkle potatoes with cayenne mixture and cilantro and gently stir to combine Smoked Chile Scalloped Sweet Potatoes by Bobby Flay (Note white sweet potatoes work best) 2 cups heavy cream (I used 1/4 cup less) 1 heaping Tbsp chipolte pepper puree (buy a can of Chipolte in adobo sauce and puree) 3 medium sweet potatoes peeled and thinly sliced to 1/8 inch thick Salt and fresh ground black pepper Preheat oven to 375 Whisk cream and chipolte puree together until smooth In a 9 x 9 inch casserole dish, arrange the potatoes in even layers. Drizzle with 3 Tbsp of the cream mixture and season with salt and pepper. Repeat with the remaining potatoes, cream, salt and pepper to form 10 layers Cover and bake for 30 minutes, remove cover and continue baking for 45 minutes to 1 hour or until cream is absorbed, potatoes are cooked through and top is browned.

I call this Sweetnana. It probably should be classified as a dessert; either way it's on our holiday table each year. Sweet Potato Puree with Bananas and Buttered Pecans 6 pounds (about 6) sweet potatoes 4 ripe bananas, skins on 2 ounces (1/2 stick) unsalted butter, softened 1 cup pure maple syrup ÃÂ½ cup Brandy 2 tablespoons ground cinnamon 2 teaspoons pumpkin pie spice 1/2 teaspoon salt 1 pound pecans 1/2 cup unsalted butter 1 tablespoon salt 2 tablespoons brown sugar Preheat oven to 425 degrees F. Pierce the sweet potatoes with a fork and bake until tender, about 1 hour. Roast the bananas, with the skins on, for the last 15 minutes of cooking time. When cool enough to handle, peel the potatoes and bananas, and transfer to a food processor. Pulse until the potatoes are chunky. Add the butter and maple syrup, puree until smooth. Add the cinnamon, pumpkin pie spice and salt; puree to combine. Transfer to a shallow baking pan and smooth out the surface with a spatula. In a skillet, cook the pecans in butter over low heat and sprinkle with salt. SautÃÂ© until well-coated, stirring occasionally, for about 5 minutes. Transfer the pecans to paper towels to drain. Arrange pecans on top of puree and sprinkle with brown sugar. Bake at 300 degrees F until heated through, about 20 minutes.

These country-style sweet potato muffins have the comforting tastes of a pumpkin pie with a hearty yet delicate, moist texture. Serves: 12 1 1/4 cups old-fashioned rolled oats, divided 1 1/4 cups all-purpose flour, divided 1 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1 (15-ounce) can sweet potatoes or yams, drained and mashed 1 cup packed light brown sugar, divided 1/3 cup vegetable oil 1/4 cup skim milk 1 egg 2 teaspoons vanilla extract, divided 1 tablespoon butter, melted Preheat the oven to 400 degrees F. Line 12 muffin cups with paper baking cups. In a large bowl, combine 1 cup oats, 1 cup flour, the baking powder, baking soda, cinnamon, and nutmeg; mix well. Stir in the sweet potatoes, 3/4 cup brown sugar, the oil, milk, egg, and 1 teaspoon vanilla; mix until well moistened. Fill the muffin cups 3/4 full with the batter. I think it sounds good, if my sister wasn't bringing the sweet potatoes that would be one I would for sure try.

I think I would put the sweet potatoes in a casserole and pour the toppings over and bake until soft.

My SIL used to slice the sweet potatoes and sprinkle with cinnamon and butter and bake. They were so good. I think that was all that she put on them.

It sounds like it would be very good, but with all that sweet, I'd put between and 1/8 and 1/4 teas of salt. Just give it a taste test before serving.

Sounds good to me, although I think the syrup mix caramelizes
the potatoes on the bottom if you don't baste frequently (15 minute intervals).
Good luck, the recipe sounds delicious!

We were in need of a sweet potato recipe because Mrs. Paul's is no longer making her candied sweet potatoes; we had grown too accustomed to that convenience food.

Jojoco's recipe gave us a good starting point. None of us was keen on the orange liqueur, but Jessyf's suggestions of bourbon and just a pinch of cardamom (although no OJ concentrate for us) hit the spot! The syrup cooks down over time and coats the sweet potatoes in gooey goodness. This one is a keeper! Thank you, Jojoco, for sharing!

That sounds like a great way to do sweet potatoes. It would work with winter squash, too.
