RECIPE: Oatmeal Bread

This wasn't clipped from a magazine, but from the back of the King Arthur bread flour bag. It's really good:

Oatmeal Bread

3 cups unbleached bread flour

1 cup rolled oats

2 tbls butter (softened)

1 1/2 tsp salt]3 tbls brown sugar or honey

1 pkg active dry yeast

1 1/4 cups lukewarm milk

3/4 cups raisins (optional)

Combine all ingredients in bowl of mixer, mixing to form a shaggy dough. Knead dough, by hand (10 minutes) or by machine (5 minutes) until smooth. Place in lightly gresed bowl, cover, and let rest 1 hour. It will become puffy, though may not double in bulk.

Transfer dough to a lightly oiled surface and shape into a log. Place the log in a lightly greased loaf pan, cover with lightly greased plastic wrap and let rise 1 to 1 1/2 hours until it crests 1 to 2 inches over the rim of pan.

Bake the bread in a pre-heated 350 degree oven 35-40 minutes until an instand-read thermometer inserted in middle registers 190. If bread appears to be browning too quickly, tent with aluminum foil for final 10 minutes of baking.
